Number Of Ingredients 4

2 1/2 pounds red bliss potatoes
Kosher salt and freshly ground black pepper
1 (8-ounce) package bacon, finely chopped
2 tablespoons finely chopped fresh rosemary leaves

Steps:

  • Put potatoes in a large pot and cover with water by at least 3 inches. Add salt and bring to a boil over high heat. Reduce heat and simmer potatoes until fork tender, about 25 minutes.
  • Drain potatoes and return to pot to cool slightly. Roughly smash potatoes in pot with a masher or a large fork.
  • Heat a large nonstick skillet over high heat. Add the bacon and cook until bacon is crispy and has given up most of its fat. Lower the heat to medium-high, add the rosemary and season with salt and pepper. Make sure bacon and rosemary are evenly distributed in the pan then add the potatoes.
  • Pat down with a spatula so the potatoes are in an even layer. Season the top of the potatoes with salt and pepper.
  • Cook until a nice brown crust has formed on the bottom, about 5 to 7 minutes. Use the spatula to flip the potatoes, cook until brown on the other side, about 5 minutes.

3 pounds red bliss potatoes
4 cloves garlic
Salt and freshly ground black pepper
3 tablespoons butter, room temperature
1/2 to 1 cup heavy cream, room temperature

Steps:

  • In a large pot, cover potatoes and garlic with water by 1 inch. Bring to a boil, add salt and simmer until tender, about 15 minutes. Drain well.
  • Put the potatoes and garlic back in the pot and cook over low heat to evaporate the rest of the water. Mash in the butter with a potato masher. Add the heavy cream in stages until the desired consistency reached. Season with salt and pepper.

3 chicken breast halves, cooked
1 lb Red Bliss potatoes, cooked
1/2 Spanish onion, fine diced
1/8 cup carrot, fine diced
1/8 cup red pepper, fine diced
1 tablespoon garlic, fine diced
salt and pepper
1/4-1/2 cup chicken stock
2 tablespoons rosemary, fine diced
1/8 cup white wine (optional)

Steps:

  • Finely chop chicken in food processor while adding the chicken stock a little at a time.
  • Finely chop potatoes in food processor (the food processor does not have to be cleaned).
  • Mix the potatoes, chicken, wine into a mixing bowel & set a side.
  • Saute the carrots, onion, garlic, peppers and rosremary in a pan with 10% oil until just tender.
  • Add this mixture to the mixing bowl (adjust the seasonings to taste).
  • Refrigerate up to one week.
  • Use like regular hash.

1 pound Red Bliss potatoes
1/4 cup extra virgin olive oil
1 head garlic broken into cloves and peeled
Salt and freshly ground black pepper
1/4 cup water
1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped parsley

Steps:

  • Preheat oven to 400 degrees F. Scrub the potatoes well and cut them in half. In a bowl combine the potatoes with the olive oil, garlic, salt and pepper, tossing to coat. Arrange the potatoes in a roasting pan in a single layer and sprinkle with 1/4 cup water. Roast the potatoes for 45 minutes or until the potatoes and garlic are tender and golden brown. In a serving bowl toss the potatoes and garlic with the Parmesan and parsley.;

  • Position a baking rack in center of the oven and preheat the oven to 450ºF. Line a sturdy baking sheet with heavy duty foil. I lined mine twice so that it required minimum cleaning.
  • In a small bowl, combine the melted butter, 1 teaspoon salt, black pepper, 2 teaspoons garlic, 1 tablespoon rosemary, and lemon zest. Gently loosen the skin of the chicken breast and using a brush, brush the skin and the meat with the butter. Place chicken breasts on one side of the prepared baking sheet.
  • In a bowl, combine the 2 tablespoons olive oil, 1/4 teaspoon salt, remaining 2 teaspoons garlic, and 1 tablespoon rosemary. Toss the halved or quartered potatoes until the olive oil nicely coats them all. Lay the potatoes on the other side of the baking sheet.
  • Bake for 20 minutes. If at any point the chicken begins to brown too much during roasting, use a piece of foil to tent ONLY the chicken. After 20 minutes, check the chicken for doneness, if the juices are running clear, or the internal temperature is at 170 degrees, remove the chicken to a plate, and loosely cover with foil.
