Steps:
- Wash potatoes and slice 1/3 inch thick. Place oil, dry Italian seasoning, salt, and pepper in a bowl, toss potatoes until coated. Set aside.
- Heat an indoor grill such as a George Foreman, or an outdoor gas or charcoal grill. Place potatoes on grill, cook until browned on one side and turn. Once fully cooked and tender, transfer to a baking dish. Top with Parmesan cheese and fresh herbs and serve.

ROASTED PARMESAN POTATOES

- Preheat the oven to 450 degrees F.
- To a large bowl, add the melted butter, olive oil, garlic powder, onion powder, smoked paprika, salt, some black pepper and 3 tablespoons of the Parmesan, then mix together. Add the potato slices and toss to coat.
- Coat 2 large baking sheets with cooking spray. Spread the potato slices in one layer on the prepared baking sheets. Sprinkle the potatoes with the remaining 1 tablespoon Parmesan and bake until the potatoes are tender, crisp and golden, 15 to 20 minutes. Transfer them to a serving dish and sprinkle with the parsley.

- Place potatoes in a 6-qt. pressure cooker. Sprinkle with cheese and garlic powder; add broth. Close cover securely; place pressure regulator on vent pipe. Bring cooker to full pressure over high heat. Reduce heat to medium-high; cook for 6 minutes. (Pressure regulator should maintain a slow steady rocking motion; adjust heat if needed.), Remove from the heat; immediately cool according to manufacturer's directions until pressure is completely reduced. Sprinkle with parsley.

- Preheat oven to 400 degrees F. Spray a rimmed 18 by 13-inch baking sheet with non-stick cooking spray. Lightly dust with flour and shake out excess.
- In a large mixing bowl, toss potatoes with remaining olive oil. Add parmesan, and rosemary and season with salt and pepper (then more to taste if desired), toss to evenly distribute.
