Made with blueberries and strawberries as well as freshly squeezed lemon and lime juice, our recipe replicates that nostalgically sweet flavor in a healthier fashion. 2 cups hulled and quartered fresh strawberries
6 tablespoons granulated sugar, divided
3 tablespoons fresh lemon juice (from 1 large lemon), divided
3 tablespoons fresh lime juice (from 2 medium limes), divided
1/2 cup plain whole-milk yogurt
3 tablespoons heavy cream
2 cups fresh blueberries

Steps:

  • Process strawberries, 2 tablespoons of the sugar, and 1 tablespoon each of the lemon and lime juices in a blender until smooth, about 1 minute, stopping to scrape down sides as needed. Pour mixture through a fine mesh strainer into a bowl, pressing on solids; discard solids. Pour about 3 tablespoons strawberry mixture into each of 8 (4-ounce) ice-pop molds. Freeze until firm, about 30 minutes,
  • Stir together yogurt, heavy cream, 2 tablespoons of the sugar, and 1 tablespoon each of the lemon and lime juices in a bowl. Remove molds from freezer; top each with about 2 tablespoons yogurt mixture. Freeze until firm, about 30 minutes.
  • Process blueberries, remaining 2 tablespoons sugar, and remaining 1 tablespoon each lemon and lime juices in a blender until smooth, about 1 minute, stopping to scrape down sides as needed. Pour mixture through a fine mesh strainer into a bowl, pressing on solids; discard solids. Remove molds from freezer; top each with about 3 tablespoons blueberry mixture.
  • Insert popsicle sticks into molds; freeze until solid, about 6 hours. Just before serving, run molds briefly under hot water to release popsicles.

This was found in Family Fun magazine July 2007 issue. I just used regular popsicle molds, but their suggestion for the cones would make them look like more authentic Bomb Pops.

3 cups vanilla yogurt
red food coloring
white food coloring
blue food coloring
wax paper
6 sugar ice cream cones
6 wooden popsicle sticks

Steps:

  • To make a half dozen pops, tint 1/2 cup of the yogurt with red food coloring and 1 1/2 cups with blue food coloring. Leave the rest plain.
  • Make waxed paper cone liners by folding six 12-inch square sheets into triangles, wrapping each around a sugar cone, and using tape to hold the shape. Then place the paper cones inside the sugar cones.
  • Fill each cone with 1 tablespoon red yogurt, followed by 2 tablespoons white yogurt, then 3 tablespoons blue yogurt. Insert a Popsicle stick and freeze the pops until firm, about 4 hours, using the cone box with six circles cut out to keep them upright.

1/2 cup water
1 teaspoon honey
1/2 cup coconut milk
1 teaspoon honey
1 cup frozen blueberries
1/2 cup water
1 teaspoon honey

Steps:

  • In a vitamix , blend strawberries, water, and honey.
  • Scoop 1 tablespoon of mixture into each popsicle mold.
  • Freeze popsicles for 40 minutes.
  • Blend coconut milk and honey.
  • Remove popsicles from freezer; scoop 1 tablespoon of coconut mixture into each mold, then insert popsicle sticks.
  • Freeze popsicles for 40 minutes.
  • Blend blueberries, water, and honey.
  • Remove popsicles from freezer and scoop 2 tablespoons of blueberry mixture into each popsicle mold.
  • Freeze popsicles for 1 hour.
  • Serve.
