ANY BEAN BURGERS
Steps:
- In a food processor, pulse the beans until coarsely chopped, then transfer to a large mixing bowl. Pulse the walnuts in the food processor until finely chopped, then transfer to the mixing bowl with the beans. Add the breadcrumbs, salt, onion powder, garlic powder, pepper, egg and 2 tablespoons of the BBQ sauce and mix well. Divide the mixture into 4 equal parts. Shape into burger patties and refrigerate for 30 minutes.
- Heat a nonstick skillet over medium-high heat. Add the olive oil. Brush the top of each burger with the remaining 1 tablespoon BBQ sauce. Cook the burgers BBQ sauce-side down for 3 minutes. Flip and top each with a slice of cheese if using. Cover and cook until the cheese is melted and the burgers are heated through, about 3 minutes. Place the burgers on the buns and top with desired toppings.
BEANBURGER
Don't mistake this San Antonio favorite for a vegetarian burger: The beanburger is a beef patty with refried beans, Fritos, onions and Cheez Whiz. The original, invented in the 1950s at the now-closed Sills Snack Shack, was likely inspired by refried-bean-and-guacamole-topped California burgers, but Cheez Whiz was swapped in for pricey avocados.

Steps:
- Heat 2 teaspoons vegetable oil in a medium skillet over medium heat. Add the refried beans and cook, stirring, until heated through, about 3 minutes; set aside.
- Mix the beef with 1 teaspoon each salt and pepper in a large bowl. Form the beef into 4 balls, then press each into a 1/4-inch-thick patty. Heat the remaining 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add the burgers and cook until browned, about 3 minutes. Flip and cook 2 more minutes for medium to medium well.
- Remove the burgers from the heat and top with the cheese spread. Spread the warm refried beans on the bottoms of the buns and top with the corn chips. Serve the burgers on the buns and top with onion and pickled jalapenos.
SOUTHWESTERN BEAN PATTIES
"I first made this recipe for a crowd of 11 people," recalls Debby Chiorino in Pt. Hueneme, CA. "And everyone-from little kids to teens and adults-loved the Southwest flavor...and the guacamole topping. A real hit!"

BLACK BEAN BURGER WITH AN EGG ON TOP
This is a vegetarian burger that does not mimic the texture or look of ground meat, but it isn't meant to. It's more like the most excellent refried beans. Though you can serve this well-seasoned patty like a traditional burger, on a bun with the usual condiments, it is at its best topped with a fried egg. Dusted with fine cornmeal, the burgers are pan-fried as the mixture is too soft to grill. After frying, they are baked until crisp. For convenience, they may be fried in advance and reheated.

Steps:
- Put beans in a colander set over a bowl and drain well. (Reserve juices for another purpose or discard.) Pat the beans dry with paper towels, then mash them a bit with a wooden spoon or potato masher, but leave them chunky.
- Transfer beans to a large bowl with the rice and toss together. Add chopped cilantro, serrano chile, scallions, chipotle powder, cumin and pinch of cayenne, to taste. Season generously with salt and mix well to incorporate.
- Add the egg to the cornstarch solution and beat together, then drizzle it all over the bean mixture and mix well to distribute.
- Form mixture into six thick patties of equal size. Each patty should weigh about 4 1/2 ounces. Place patties on a baking sheet and place in freezer for 10 minutes to firm. (For a firmer mixture, prepare a day in advance of cooking and refrigerate.)
- Heat oven to 350 degrees. Add 1/2-inch oil to a heavy skillet over medium heat. Dust patties lightly on both sides with fine cornmeal. (It's OK if they are slightly frozen.) When oil is shimmering, slip the patties into the pan; work in batches to avoid crowding, or use two pans. Fry the burgers gently, about 3 minutes per side until nicely browned, adjusting heat as necessary. Transfer burgers to a baking sheet and let them crisp further for about 20 minutes in the oven (or let them cool and reheat later).
- Meanwhile, fry the eggs, if using. Put a sunny-side-up egg on top of each warm burger, and serve on buns or warm plates with lettuce and condiments, if using. Garnish with cilantro sprigs.

SPICY MEXICAN BEAN BURGER
This is an inexpensive vegetarian burger and my husband loves them. He ate one and he said they are filling, delicious and he said he wants more made when these are gone and he even said that they are better than store bought. They don't fall apart like most veggie burgers and all the ingredients are available at any grocery store.
