Turkey burger meets Reuben sandwich in this healthier version of a Reuben Sandwich

1/2 tablespoon olive oil - for stove top method only
1 pound organic ground turkey breast
2 tablespoons grated onion
4 heaping tablespoons sauerkraut
4 thin slices organic swiss cheese
Rye bread or your favorite rolls

Steps:

  • Shred the onions using a hand grater or mince the onions and add them to a mixing bowl.
  • Combine the onion and meat together and form into four 1/4 pound patties
  • pre-heat the oil in a pan over medium heat
  • once the pan is hot, add the burgers to the pan and cook for about 7 minutes until they begin to turn brown
  • flip them over and cook for three minutes, top with sauerkraut and cheese
  • cover the pan and cook for about 5 minutes more until the cheese has melted and the internal temperature has reached 165
  • preheat a grill to medium heat
  • once the grill is hot, place the burgers on the grill and cook for about 8 minutes, and flip
  • cook for 4 to 5 minutes then top with sauerkraut and cheese then cover
  • cook until cheese melts and turkey reaches an internal temperature of 165 - about 4 minutes more

These burgers are spiced like brat or bockwurst then topped like a Reuben sammy.

2 tablespoons butter
1 large onion, quartered lengthwise then thinly sliced
Splash water
2 tablespoons spicy mustard
1 pound sack sauerkraut, rinsed and drained
3/4 cup sour cream
1/4 cup ketchup
1/4 cup pickle relish
1 1/2 pounds ground pork or ground pork and veal combined
1 teaspoon dried marjoram
1 teaspoon ground ginger
1/2 teaspoon freshly grated nutmeg
1 teaspoon celery seeds
1/2 teaspoon ground cardamom
1/4 cup finely chopped fresh flat-leaf parsley
2 tablespoons cider or white wine vinegar
Kosher salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
4 deli slices Emmentaler Swiss cheese, folded to fit burgers
4 seeded or plain burger rolls, split
4 leaves red leaf or red romaine lettuce

Steps:

  • Heat medium skillet over medium heat, add the butter and when melted add the onions and cook until soft and tender, 20 minutes. When done, add a splash of water and stir in the mustard.
  • Add sauerkraut to a small pot and keep warm over low heat.
  • Combine sour cream, ketchup and relish in a small bowl and reserve.
  • In a large bowl, combine the meat, spices, parsley, vinegar and salt and pepper, to taste. Form 4 patties, thinner at middle and thicker at edges for more even cooking and to prevent burgers from bulging at the middle. Heat the oil in nonstick skillet over medium-high heat. Cook patties 5 minutes on each side. Melt the cheese over the patties the last 2 minutes of cooking, under foil tent.
  • To serve, pile the onions on the bun bottoms and top with a leaf of lettuce, cheese wurst burger, sauerkraut, and the sour cream sauce. Cover with the tops of the buns and serve.

The restaurant I worked at in college made these amazing turkey reuben sandwiches. They are a hit with everyone, and surprisingly easy. Feel free to adjust the sauerkraut to taste, but don't skimp on the thousand island dressing!

1 cup sauerkraut, drained
10 ounces sliced deli turkey meat
2 tablespoons butter
4 slices marble rye bread
4 slices Swiss cheese
4 tablespoons thousand island salad dressing, or to taste

Steps:

  • Warm the sauerkraut and turkey, separately, in a microwave-safe bowls for 30-seconds; set aside. Spread butter generously on one side of each slice of rye bread, then spread the thousand island dressing on the other side. Divide the sauerkraut, turkey, and Swiss cheese on two slice of bread with the butter-side down. Stack the remaining two slices of bread with the butter-side up on top.
  • Heat a large skillet over medium-low heat. Arrange the sandwiches on the skillet and grill until lightly browned and the cheese is melted, about 3 minutes on each side.

1/2 cup mayonnaise
1/4 cup catsup
1/4 cup pickle relish
1 tablespoon rice wine vinegar
1 teaspoon celery seed
1 teaspoon hot sauce, such as Tabasco
2 cups sauerkraut, drained
Grapeseed oil, for cooking
1 pound ground beef, 80/20 blend
1 pound corned beef, ground
1 pound ground pork
Salt and freshly ground black pepper
4 slices Swiss or Gruyere cheese
2 tablespoons butter, cut into pats
4 good-quality kaiser rolls

Steps:

  • For the dressing: In a bowl, whisk together the mayonnaise, catsup, relish, vinegar, celery seed and hot sauce, mixing well. Then blend with the sauerkraut and hold.
  • For the burgers: Preheat a grill to 350 degrees F.
  • In a bowl, blend the beef, corned beef and pork by hand, mixing well until evenly and thoroughly mixed. Next, portion the meat into 4 equal patties and sprinkle evenly with salt and pepper on both sides. Grill the burgers on the first side for 5 to 6 minutes, then flip and repeat grilling on the second side.
  • While the burgers are cooking, in a saute pan over high heat, add grapeseed oil, allow to heat until smoking then reduce the heat to medium. Next, add the dressed sauerkraut and cook until browned, 3 to 4 minutes, stirring with a spatula during the process. Once cooked, add one-quarter of the dressed kraut on the top of the burgers, and then top with the cheese.
  • To build the burgers: Heat a pan over medium-high heat, add the butter to the pan and brown the rolls one at a time, repeating the process until all the rolls have been browned. Then place the dressed burgers on the bottom buns, finish with the bun top and serve.

1 Pkg (454 g) Extra Lean Ground Turkey2 Cloves garlic, minced1 Egg yolk3/4 tsp (3 mL) Ground pepper1 tsp (5 mL) Ground coriander seed1/2 tsp (2 mL) Salt1/4 cup (60 mL) Grated Swiss Cheese1 cup (250 mL) Sauerkraut4 Slices Swiss cheese4 Ben's® Original Hamburger Buns1 cup (250 mL) Shredded lettuce4 tbsp (60 mL) Thousand Island dressing

Steps:

  • PREHEAT BBQ to medium-high heat. Lightly coat grill with non-stick cooking spray. MIX turkey, garlic, egg yolk, pepper, coriander, salt and grated Swiss cheese together in a large bowl, mixing gently with your hands. Form into four equal size patties. PLACE patties on the grill and cook for 5-8 minutes per side or until the internal temperature reaches 165°F (74°C). While still on the grill, top with equal amounts of sauerkraut and a slice of cheese. Allow cheese to melt. ASSEMBLE by placing shredded lettuce on the bottom half of the buns topped with a burger. Cover with top half of the bun spread with Thousand Island dressing.

2 tablespoons sliced pickled jalapeños
2 tablespoons Quick Pickles, recipe follows, plus 1 tablespoon Quick Pickle brine
1 cup mayonnaise
1/4 cup ketchup
1 teaspoon Dijon mustard
1/4 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
1 to 2 tablespoons unsalted butter, at room temperature
4 slices marble rye
8 ounces thinly sliced turkey pastrami or thin deli-sliced cracked pepper turkey
1 cup sauerkraut, drained
4 slices Swiss cheese
Cooked sweet potato fries, or your favorite fries, for serving
2 cups white wine or champagne vinegar
1/4 cup sugar
1 tablespoon yellow mustard seeds
1 tablespoon kosher salt
2 cloves garlic, lightly smashed
1 bay leaf
1 English cucumber, sliced into 1/8-inch-thick rounds
1 tablespoon chopped fresh dill

Steps:

  • For the 18,000 Island dressing: Roughly chop the pickled jalapeños and Quick Pickles and add them to the mayonnaise in a large bowl. Add the ketchup, mustard, granulated garlic, salt and pepper to taste. Stir to combine and set aside.
  • For the reubens: Preheat a griddle over low heat. Butter one side of each piece of bread and place butter-side down on the griddle. Toast until browned. Meanwhile, add the turkey to the griddle in piles to warm. Add the sauerkraut in 2 separate bundles to the same griddle. Spoon a generous amount of dressing on top of the sauerkraut and cover each with 2 slices of Swiss cheese. Cover with a lid or large inverted bowl to warm and allow the cheese to melt, about 30 seconds. Add the Quick Pickle brine to the griddle and cover to allow the cheese to steam and fully melt.
  • Place the sauerkraut on top of the turkey, then remove it to a slice of toasted rye. Top with a second piece of toasted rye. Slice in half on the diagonal and plate the sandwich on top of sweet potato fries to prevent the bottom of the sandwich from steaming, and to catch any drippage. Enjoy warm.
  • Add the vinegar, sugar, mustard seeds, salt, garlic, bay leaf and 1/2 cup water to a saucepan and bring to a simmer. Cook until the sugar has dissolved, then add the cucumbers and dill to a heatproof container and pour over the pickling liquid. Let sit for at least 10 minutes.

5 unpeeled garlic cloves
1/2 teaspoon plus 3 tablespoons olive oil, divided
1/2 cup thinly sliced sweet onion
1 can (8 ounces) sauerkraut, rinsed and well drained
3 cups coleslaw mix
1/2 cup sweetened applesauce
8 large portobello mushrooms, stems removed
1 teaspoon dried marjoram
1 teaspoon garlic powder
1 cup Thousand Island salad dressing
8 slices Swiss cheese
8 hamburger buns, split and toasted

Steps:

  • Preheat oven to 375°. Cut stem ends off unpeeled garlic cloves. Place cloves on a piece of foil. Drizzle with 1/2 teaspoon oil; wrap in foil. Bake until cloves are soft, 20-25 minutes. Unwrap and cool to room temperature. , Meanwhile, in a large skillet, heat 1 tablespoon oil over medium heat. Add onion; cook and stir until softened, 4-6 minutes. Reduce heat to medium-low; cook until deep golden brown, 30-40 minutes, stirring occasionally. Squeeze roasted garlic from skins; mash with a fork. Add to onions. Stir in sauerkraut, coleslaw mix and applesauce. Cook and stir over medium heat until coleslaw begins to soften, about 5 minutes. Remove from the heat., Place mushrooms on a baking sheet. Brush with remaining 2 tablespoons oil. Combine spices; rub over mushrooms. Bake until tender, 10-15 minutes, turning once.
