No festival is complete without sweets and if there is one thing that's prepared across the country, it's kheer, which is known as payasam in Southern India. With the festival of Ram Navami here, the easiest recipe of Rice Payasam is here. Rice Payasam, commonly also known as Rice Kheer, is a sweet dish served in most of the Indian households. It is one item which is served almost all the time on any festival. It is an essential sweet dish on festivals like Diwali, Karwachauth, Rakshabandhan, Holi and Ram Navami. It is made with boiled rice and sugar, for which alternatively, even jaggery can be used! Payasam is made with milk, which is considered to be Amrit amongst Indian fellows. The special importance of milk dates back to the Hindu mythology era. This involves, the epic episode of the Hindu philosophy called the Samudra Manthan (Churning of the Ocean of milk), narrated in the Bhagwatha Puranas, Vishnu Purana and even Mahabharata. It explains how milk is considered as the most sacred drink, also called the Amrit or the drink of immortality! Incidentally, the goddess 'Kamdhenu' also revealed herself as a 'wish-granting cow', that is today very sacred to Hindu society along with being the main bearer of the immortal nectar, that is milk! Hindus, therefore, use milk in most of the religious ceremonies to make it more auspicious and sacred, Payasam or Kheer is one of the most important amongst them.

- To prepare this easy recipe, you need to wash the rice under running water and then transfer it into a strainer, this will let all of the water used in washing drain. Then take the rice and transfer it to a bowl full of fresh water and let it soak for around half an hour. After the rice is soaked for the required time, use a strainer and drain the water again and keep the rice in a dry bowl, until it is needed again!
- After that, take a boiler and put it on medium flame and pour the milk and sugar in it. Let it come to a boil. Meanwhile, cut some almonds, pistachios, raisins and cashews along with around 10 cardamoms and saffron. Keep them aside in separate bowls, until needed.
- After that, add the drained rice to the boiling milk and then let it cook until the rice grains turn tender enough. After a few minutes add cardamom and saffron to the boiling rice and milk mixture and keep stirring it.
- Switch off the flame after the Payasam is a little thick in consistency and has some flavour, aroma and colour of saffron and cardamom to it. Set it aside. Quickly, take a frying pan and add some ghee to it and roast the dry fruits in it. Take out the dry fruits and season them on the Payasam, while its still hot. Add a pinch of saffron strands on top for decorating it! Your Payasam is ready to serve. You could consume it hot or cold, just as you like it!
