Steps:
- Preheat oven to 350 F and coat a 2 quart (or 8 in. baking dish) with non-stick cooking spray.
- In a large bowl, stir to combine cream of chicken soup, sour cream, and Italian seasoning. Stir in chicken. Transfer to the casserole dish.
- Sprinkle with crushed Ritz crackers and drizzle with melted butter.
- Bake uncovered for 25-30 mins, until crackers are golden and center is hot and bubbly.

- Mix together the chicken, soup, sour cream, and cheese in a bowl. Pour the mixture into a baking pan and spread evenly. Add crushed Ritz crackers all over the top of the mixture. Melt butter completely; spoon over the top of the cracker crumbs. Bake in a 350° oven for about 35 minutes, or until casserole is heated through and the cracker topping is nice and crispy. Serve and hope your family/guests/loved ones don't devour it in one sitting =) Such a ridiculously simple recipe -- I can't believe I haven't made it sooner, but I have a feeling it will become a staple. - Preheat oven to 350 degrees. Spray a 9x13" baking pan with non-stick cooking spray and set aside.
- In a large bowl, mix together soup, sour cream, cream cheese, onion powder, and salt and pepper.
- Mix in the frozen vegetables and chicken.
- Spread chicken mixture into the bottom of the prepared pan
- In a bowl, mix crushed cracker crumbs and melted butter together then sprinkle over the top of the chicken mixture.
- Bake uncovered for 30-35 minutes.
- Top with parsley, if desired.
- Store it in an airtight container to enjoy it the next day!

This recipe came from my friend Amanda, who loved to cook for us when we were roommates in college. This is another simple and delicious recipe- definitely a great comfort food!

Steps:
- Mix sour cream and soup in a bowl, place inside the refrigerator.
- Boil chicken breasts until tender; drain and let stand 10 minutes or until cool enough to handle.
- Spread cubed chicken evenly over the bottom of a sprayed 9X13 casserole dish.
- Salt and pepper chicken to taste.
- Remove sour cream and soup mixture from refrigerator and spread over the chicken in the casserole dish.
- Crush Ritz crackers inside of its plastic sleeve and then spread evenly over the casserole.
- Spoon melted butter over the top of all.
- Bake at 350°F until golden brown and bubbling, approximately 20-30 minutes.
- Enjoy.
RITZ CRACKER CASSEROLE
There are several versions of the Ritz cracker casserole, here is mine, which is made with cream cheese. This is comfort food at its best.

- In a medium-size saucepan put the cream cheese and butter, and cook over low heat, stirring frequently, until smooth.
- Remove from heat.
- Crush the Ritz crackers and place them in a bowl.
- Add just enough milk to moisten the crackers and blend.
- In a greased casserole dish layer 1/2 broccoli, 1/2 chicken, 1/2 grated cheeses, 1/2 crushed crackers and 1/2 cream cheese sauce.
- Repeat the layers.
- Bake in a 350F oven for 35-45 minutes, or until everything is hot and the cheese has melted.
- This can also be made without the chicken.
