Herbs de Provence chicken is an incredibly simple way to prepare chicken that gives you a big bang for your buck. Chicken thighs are coated in herbs de Provence seasoning then cooked over shallots, garlic, and lemon until the chicken is crispy on the outside and juicy inside. And the pan juices taste as delicious as the chicken!

8 skin-on chicken thighs
1 tablespoon herbs de provence
1 teaspoon EACH: sea salt and pepper
¼ cup dry vermouth or dry white wine
4 medium shallots (quartered)
8 cloves garlic (whole) (peeled)
1 lemon (quartered)
4 thyme sprigs

Steps:

  • Preheat your oven to 425 degrees Fahrenheit.
  • Roast the chicken for 35-40 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.

Spatchcocked Chicken With Herb Butter image

Spatchcocking (also called butterflying) a chicken helps it to roast more evenly and much more quickly, giving you perfectly tender, juicy meat with golden skin. This one is slathered with herb butter, making it extra fragrant. (If you have any herb butter left over, freeze it, then use it on steaks or fish or roasted potatoes.) Pulling out a well-flavored compound butter is one of those cheffy moves that makes almost everything taste better.

1/4 cup unsalted butter (1/2 stick), at room temperature
4 garlic cloves, finely grated or minced
2 teaspoons minced fresh parsley leaves
2 teaspoons minced mixed fresh herbs - any mix of mint, oregano and marjoram
1 1/2 teaspoons minced fresh thyme leaves
1/2 teaspoon minced fresh rosemary leaves
1 3/4 teaspoons fine sea salt
1 teaspoon herbes de Provence
1/2 teaspoon finely grated lemon zest
1/2 teaspoon freshly ground white pepper
1/2 teaspoon freshly ground black pepper
1 (3 1/2- to 4-pound) chicken, spatchcocked and dried with paper towels (see Note)
Lemon wedges, for garnish

Steps:

  • In a medium bowl, mash together the butter, garlic, parsley, mixed herbs, thyme, rosemary, salt, herbes de Provence, lemon zest, white pepper and black pepper. Rub three-quarters of the mixture all over the chicken, including under the skin. (Reserve the remaining herb butter for serving.) Place the chicken, breast-up, on a rimmed baking sheet and refrigerate it, uncovered, for at least 2 hours and up to overnight.
  • Heat oven to 450 degrees. Roast chicken until it is just cooked through (the meat will no longer be pink and the juices will run clear; an instant read thermometer inserted into the thigh will read 165 degrees), 40 to 55 minutes. Let the chicken rest on a cutting board for 10 minutes before carving. Serve it topped with the reserved herb butter and lemon wedges.

This is a recipe I picked up from Steven Stolman, a clothing and interior designer whose "Confessions of a Serial Entertainer" is a useful guide to the business and culture of dinner parties and general hospitality. It is a perfect dinner-party meal: chicken thighs or legs dusted in flour and roasted with shallots, lemons and garlic in a bath of vermouth and under a shower of herbes de Provence. They go crisp in the heat above the fat, while the shallots and garlic melt into sweetness below. You could serve with rice, but I prefer a green salad and a lot of baguette to mop up the sauce.

4 chicken legs or 8 bone-in, skin-on chicken thighs
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 to 3/4 cup all-purpose flour
3 tablespoons olive oil
2 tablespoons herbes de Provence
1 lemon, quartered
8 to 10 cloves garlic, peeled
4 to 6 medium-size shallots, peeled and halved
1/3 cup dry vermouth
4 sprigs of thyme, for serving

Steps:

  • Heat oven to 400 degrees. Season the chicken with salt and pepper. Put the flour in a shallow pan, and lightly dredge the chicken in it, shaking the pieces to remove excess flour.
  • Swirl the oil in a large roasting pan, and place the floured chicken in it. Season the chicken with the herbes de Provence. Arrange the lemon, garlic cloves and shallots around the chicken, then add the vermouth to the pan.
  • Put the pan in the oven, and roast for 25 to 30 minutes, then baste it with the pan juices. Continue roasting for another 25 to 30 minutes, or until the chicken is very crisp and the meat cooked through.
  • Serve in the pan or on a warmed platter, garnished with the thyme.

1 cup kosher salt
¼ bunch fresh oregano
¼ bunch fresh rosemary
¼ bunch fresh thyme
4 cloves garlic
1 Tbsp cracked black pepper
8 juniper berries
2 bay leaves
1 4-lb chicken
¼ cup extra-virgin olive oil
4 Tbsp (½ stick) unsalted butter, melted
2 Tbsp canola oil
2 ½ tsp fresh lemon juice
2 ½ tsp red wine vinegar
2 ¼ tsp herbes de provence
1 ½ tsp grated white onion
¾ tsp fresh oregano leaves, minced
¾ tsp minced fresh rosemary
¾ tsp sugar
½ tsp ground black pepper
¼ tsp crushed red chile flakes
1 pinch lavender powder, optional
1 pinch kosher salt
8 medium Yukon Gold potatoes, cut into ¼"-thick medallions

Steps:

  • Bring 1 1/4 gallons of water to a rolling boil. Remove from the heat and add the salt, oregano, rosemary, thyme, garlic, pepper, juniper berries and bay leaves. Stir until the salt is completely dissolved.
  • Transfer the brine to a lidded container and refrigerate until completely cool, about 1 1/2 hours.
  • Place the chicken in the brine breast-side down and weigh it down with a heavy plate or a bowl filled with water so it's completely submerged in the brine. Cover and transfer to the refrigerator to brine for 12 hours.
  • In a medium bowl, put the olive oil, butter, canola oil, lemon juice, vinegar, herbes de Provence, onion, oregano, rosemary, sugar, pepper, chile flakes, lavender and salt. Whisk together until the butter and oil are fully blended.
  • Roast the chicken: Preheat the oven to 375ºF. Remove the chicken from the brine and pat dry inside and out with paper towels.
  • In a 13-by-9-inch roasting pan, shingle the potatoes starting from the corner of the pan. Continue shingling until the bottom of the pan is covered in 2 to 3 layers of potatoes.
  • Brush the chicken inside and out with half of the baste; reserve the other half for later. Cross the legs of the chicken and tuck them into the tail. Place the chicken breast-side up in the roasting pan and transfer to the oven.
  • Roast for approximately 60 minutes, brushing the chicken with the reserved baste every 6 to 8 minutes. When done, both the chicken and potatoes should be golden brown and a meat thermometer inserted into the thickest part of the chicken should read 155 to 160ºF.
  • Transfer the chicken to carving board, cover loosely with foil and let rest for 10 to 15 minutes.
  • Carve the chicken into quarters and serve with the roasted potatoes.

1 tablespoon minced onion
1 clove crushed garlic
1 teaspoon dried thyme
½ teaspoon dried rosemary, crushed

⅛ teaspoon hot pepper sauce
4 bone-in chicken breast halves, with skin
1 ½ tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a bowl, prepare the basting sauce by combining olive oil, onion, garlic, thyme, rosemary, sage, marjoram, salt, pepper, and hot pepper sauce.
  • Turn chicken breasts in sauce to coat thoroughly. Place skin side up in a shallow baking dish. Cover.
  • Roast at 425 degrees F (220 degrees C), basting occasionally with pan drippings, for about 35 to 45 minutes. Remove to warm platter, spoon pan juices over, and sprinkle with fresh parsley.

Herbs de Provence can be hard to find. Try one of the health food stores or gourmet stores that sell bulk spices in little, plastic bags. This seasoning makes a nice change from the usual flavors Americans use with chicken. Its different without being weird. Garlic and a dash of sherry rounds out the flavor for a simple but delicious meal.

1 roasting chicken
1 teaspoon herbes de provence
1 garlic clove
1 tablespoon sherry wine, divided

Steps:

  • Wash and prep chicken. Place in roaster.
  • Peel the garlic clove by whacking it with the flat of a knife (yes, you could just take the peel off, but the smashing/bruising releases the flavor as well as removing the peel).
  • Put the garlic into the chicken's cavity.
  • Put 1/2 the sherry into the cavity and sprinkle half over the chicken's breast.
  • Sprinkle the Herbs de Provence over the chicken.
  • Roast, covered, at 350F for 60-90 minutes depending on the size of the chicken then remove the lid and roast uncovered another 15-30 minutes until the skin is crisp and the chicken is fully cooked.
  • If you want a sauce either use the pan juices to make gravy or deglaze the pan with a little white wine. Either would be delicious.

Easy to prepare, this recipe came with a packet of herbs de Provence and lavender from Purple Haze Lavender. Very flavorful. Our girls, who don't like anything too "out there," really liked this dish. The chicken is marinated, so be sure to leave time for the meat to soak in all the flavors! Herbs de Provence can be found as a spice blend or you can make your own (I like the ones that include lavender).

  • In a 12-inch skillet, melt the butter over medium-heat. Add the herbs de provence and crushed red pepper flakes. Let the mixture sizzle and infuse for about a minute or two. Add the shallots, a good pinch of kosher salt and black pepper, and saute until softened — about 5 minutes. Add the garlic, and continue to saute for an additional 3 minutes, or until the garlic is a very light toasty brown around the edges. You may have to add additional olive oil or butter during this process to keep the aromatics well-lubricated. If your shallots and/or garlic is browning too quickly, simply reduce the heat. Toss in the fresh thyme, and stir around for about 10 seconds. Be careful with this step, fresh herbs react to hot oil/butter and splattering can happen.
