APPLE-GLAZED PORK ROAST

Steps:
- Heat oven to 375°F. Line roasting pan with foil; spray rack with cooking spray. Place pork on rack. Sprinkle with 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper.
- In medium microwavable bowl, microwave jelly uncovered on High about 1 minute or until melted. Stir in mustard and sage. Brush mixture on pork.
- In large bowl, place apples and onions. Sprinkle with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Drizzle with oil; toss to coat. Arrange apple mixture around pork.
- Roast uncovered 50 minutes to 1 hour or until meat thermometer inserted into center of pork reads 145°F. Cover loosely with foil; let stand at least 3 minutes. Slice pork; serve with apples and onions.

- Cut slits in top of roast and insert garlic strips. Place roast in a large resealable bag; add salad dressing and vinegar. Seal bag and refrigerate overnight. , Drain and discard marinade. Place roast on a rack in a shallow roasting pan. Season with onion salt, salt and pepper. , Bake, uncovered, at 325° for 1-3/4 to 2 hours or until thermometer reads 160°. Combine the preserves, mustard, brown sugar and butter; brush over roast during the last 15 minutes of baking.

- Preheat oven to 325°F. Mix preserves, mustard, pineapple juice, soy sauce and ginger until well blended; set aside. Place roast, rib side down, in shallow roasting pan. Insert meat thermometer into roast without touching the bone.

- Rub 1 teaspoon salt and 1/4 teaspoon pepper over roast. Place on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 30 minutes. , Meanwhile, in a small saucepan, melt jelly over low heat. Whisk in mustard and 1 teaspoon lemon juice. ROAST PORK WITH APPLE MUSTARD GLAZE
I found this recipe online and am posting it here to save it. I made it tonight and we all enjoyed the delicious flavor. The apple glaze was a wonderful addition to the pork. The recipe calls for a boneless roast, but I used a bone in roast. It was done is basically the same amount of time.

Steps:
- Place the roast in a roasting pan.
- Combine the remaining ingredients except the apples, cornstarch and water; mix well and brush over the pork.
- Roast in the oven preheated to 325 degrees for 45 minutes making sure to occasionally baste the pork with the apple juice mixture.
- After roasting 45 minutes, add the apple wedges to the pan and roast another 30-45 minutes.
- When the internal temperature of the roast is about 160 degree, remove from the oven.
- Strain the juices into a measuring cup.
- If there isn't 1 c of liquid, add water to equal 1 cup and pour into a saucepan.
- Combine the cornstarch and 1 T water; add to the saucepan.
- Cook and stir until thicken and bubbly.
- Serve glaze over sliced pork.

BRINED PORK LOIN WITH MOLASSES-MUSTARD GLAZE, SOUR MASH SAUCE AND APPLE BUTTER

- For the apple butter:
- Heat the oil in a large saute pan over medium-high heat. Add the onion and garlic and cook until soft, 3 to 4 minutes. Add the apple, water and brown sugar and cook until the apples are very soft. Stir in the cinnamon and salt and cook for 1 minute. Remove the mixture from the heat and let cool.
- Transfer the mixture to a food processor along with the butter and process until slightly chunky. Scrape into a small bowl, cover and refrigerate for at least 1 hour to allow the flavors to meld. Let come to room temperature before serving.
- For the glaze:
- Whisk all the glaze ingredients in a small bowl.
- For the pork:
- Bring the water, apple juice, salt, sugar, onion, peppercorns, mustard seeds, thyme and bay leaves to a simmer in a large stock pot and cook until the sugar and salt is dissolved. Let cool completely. Submerge the roast in the brine by placing a plate on top, cover with plastic and refrigerate for up to 4 hours.
- Preheat oven to 425 degrees F.
- Remove the pork from the brine, rinse under cold water and pat dry with paper towels. Heat the oil in a large saute pan over high heat. Season the pork on both sides with salt and pepper and cook on both sides until golden brown, about 8 to 10 minutes total. Transfer the pork to a baking sheet, brush with some of the glaze and finish cooking in the oven until cooked to an internal temperature of 150 degrees F on an instant-read thermometer, about 30 to 40 minutes, brushing with the glaze every 10 minutes. Remove from the oven, let rest loosely tented with foil for 10 minutes.
- Add the shallots to the saute pan (that the pork was browned in) and cook until soft. Add the whiskey, scraping the bottom of the pan with a wooden spoon and cook until almost completely reduced. Add the chicken broth and brown sugar and bring to a boil and cook until reduced to a sauce consistency. Whisk in the butter, season with salt and pepper and stir in the parsley.
- Slice the rack into chops and place on a large plate, drizzle a little of the sauce around the pork chop and top with some of the butter. Garnish with parsley sprigs.

- Heat half the oil in a large frying pan. Core and cut the apples into wedges, then cook for about 10 mins until caramelised and softened. Remove from the pan and set aside. Heat the remaining oil. Fry the pork on each side for 2 mins. Add the stock and mustard to the pan, then bubble for 5 mins or until the pork is cooked through. Return the apples to the pan with the sage and cook for 1 min more.
- Remove from the heat and stir in the crème fraîche and some seasoning.

- Plan ahead, this recipe brines overnight. In a large mixing bowl, combine the salt, brown sugar, water, and apple cider and stir until the salt and sugar crystals dissolve.
- Put the roast in a large sturdy resealable plastic bag and pour the brine over the meat. Seal, return to the bowl (to prevent leakage), and refrigerate for at least 8 hours or overnight.
- Remove the roast from the brine and pat dry with paper towels. (Discard brine.) Tie the roast between each bone with kitchen twine. Season generously with pepper.
- When ready to cook, start the Traeger grill on Smoke and set the temperature to 350F and preheat for 10 to 15 minutes. Make the glaze: In a small saucepan, bring the 2 cup of apple cider and the rosemary to a boil over medium-high heat and reduce by half.
- Put the roasting pan on the grill grate and roast the meat for 1 hour. Brush with the glaze. Grill: 350 ˚F.
- Continue to roast until the internal temperature of the meat reaches 145, another 45 minutes to 1 hour, brushing once more with the glaze. Let the meat rest for 20 minutes.
- Remove the foil from the ends of the bones, then snip and remove the kitchen twine. Brush with the remaining glaze before slicing into individual chops.
