A much requested chicken recipe! Easy to double for a large group. Delicious!

1 tablespoon cornstarch
1 tablespoon cold water
½ cup white sugar
½ cup soy sauce
¼ cup cider vinegar
1 clove garlic, minced
½ teaspoon ground ginger
¼ teaspoon ground black pepper
12 skinless chicken thighs

Steps:

  • In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Place chicken pieces in a lightly greased 9x13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.
  • Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 30 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.

3/4 cup soy sauce
1/4 cup canola oil
3 tablespoons brown sugar
2 tablespoons sherry, optional
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
12 chicken drumsticks

Steps:

  • In a large resealable plastic bag, combine the soy sauce, oil, brown sugar, sherry if desired, ginger and garlic powder;add drumsticks. Seal bag and turn to coat; refrigerate 4 hours or overnight, turning occasionally., Drain and discard marinade. Place chicken in a single layer on a foil-lined baking sheet. Bake, uncovered, at 375° for 35-45 minutes or until a thermometer reads 180° and juices run clear.

½ cup pineapple juice
½ cup reduced-sodium soy sauce
3 tablespoons water
2 tablespoons rice vinegar
2 teaspoons cornstarch
1 teaspoon minced fresh ginger root
1 clove garlic, minced
1 ½ pounds boneless, skinless chicken thighs
1 teaspoon toasted sesame seeds

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place a saucepan over medium-high heat. Add pineapple juice, soy sauce, water, rice vinegar, cornstarch, ginger, and garlic; stir to combine. Bring to a boil and stir well. Reduce heat to medium and cook, stirring often, until sauce is reduced, about 5 minutes.
  • Place chicken thighs in an oven-safe casserole dish. Pour 1/2 of the teriyaki sauce over the chicken thighs.
  • Bake in the preheated oven for 30 minutes, basting thighs every 10 minutes with the remaining sauce. Garnish with sesame seeds.

2/3 cup roasted garlic teriyaki sauce
1 tablespoon packed brown sugar
1 tablespoon vegetable oil
6 boneless skinless chicken breast halves

Steps:

  • Combine roasted garlic teriyaki sauce, brown sugar and oil, stirring until sugar dissolves.
  • Pour mixture over chicken in large plastic food storage bag. Press air out of bag; close top securely.
  • Turn bag over several times to coat chicken. Refrigerate 2 hours, turning bag over once.
  • Remove chicken from marinade; discard marinade.
  • Grill chicken 4 to 5 inches from hot coals 12 to 15 minutes, or until chicken is no longer pink in center, turning over occasionally.

2 - bonless skinless chicken breasts
- roasted garlic teriyaki sauce
1-2 can(s) mushrooms or use fresh

Steps:

  • In a ziplock bag marinate chicken breast in teriyaki sauce for at least 30 minutes. Make sure chicken is covered with teriyaki sauce.
  • Put marinate and chicken into frying pan and cook on one side, turn chicken and add mushrooms.
  • Serve with a baked potato and vegetable or salad.
  • Left over chicken is great in a sandwich the next day.

  • Pierce each chicken thigh with the tip of a sharp knife all over to ensure a faster cook time. This also helps the sauce absorb through the chicken instead of just coating it.
  • Heat the oil in a good quality non-stick pan or well seasoned skillet over medium heat. Sear the chicken for about 7-8 minutes each side, (depending on the thickness of each chicken thigh and how many incisions made), until golden browned and nearly cooked through to the bone.
  • Drain any excess fat released from the chicken out of the pan (blot with paper towel if it's easier).**See Notes.
