Oatmeal Chocolate Coconut Macaroons image

No fuss, no bake, coconut, oatmeal, and chocolate cookies! One of our Christmas favorites! You can also freeze these! Enjoy!

2 cups quick-cooking oats
1 cup shredded coconut
¼ cup unsweetened cocoa powder
2 cups white sugar
½ cup butter
½ cup milk

Steps:

  • Mix oats, coconut, and cocoa powder together in a bowl.
  • Bring sugar, butter, and milk to a boil in saucepan, stirring occasionally; remove immediately from heat and stir into oat mixture.
  • Drop 15 spoonfuls of batter onto a sheet of waxed paper. Cool to room temperature before serving.

2 1/2 tablespoons butter, melted
1 cup brown sugar, packed
2 eggs, separated
2 1/2 cups rolled oats
2 teaspoons baking powder
1 teaspoon vanilla
1/8 teaspoon salt

Steps:

  • Combine the butter, sugar, egg yolks, rolled oats, baking powder, and vanilla and beat well.
  • Whip the egg whites until they are stiff and fold them and the salt into the other ingredients.
  • Drop by teaspoonfuls, 3 inches apart, onto a nonstick cookie sheet.
  • Bake 375°F for 10 minutes.

1 cup soft shortening
1 cup brown sugar
1 cup sugar
1 teaspoon vanilla
2 eggs
1 1/4 cups self rising flour
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 cup raisins
3 cups oatmeal
2 cups shredded coconut
2 cups chopped walnuts

Steps:

  • beat together first 5 ingredients in a large mixing bowl.
  • Blend the flour, cinnamon, and nutmeg, in the mixture.
  • Stir raisens,oatmeal, coconuts and walnuts, into the mixture, the mixture will be very stiff.
  • Roll into 1 inch balls and place on greased cookie sheets.
  • Bake at 350 degrees for 12-15 minutes.
  • Cool about 2-3 minutes before removing from baking pan.
  • ENJOY ! ! !

2 cups rolled oats
1 cup packed brown sugar
½ cup vegetable oil
1 egg
½ teaspoon salt
½ teaspoon almond extract

Steps:

  • Combine oatmeal, brown sugar and oil in a bowl. Stir to mix well. Cover and let stand at least 5 hours, or overnight.
  • Pre-heat oven to 350 degrees F (175 degrees C). Grease cookie sheets - use non-stick if possible.
  • Add the egg, salt and almond extract to oatmeal and stir well until blended.
  • Drop by rounded teaspoonfuls about 1-1/2 inches apart on greased cookie sheets. Bake 7 or 8 minutes or until edges are browned and center is golden. Remove from cookie sheet and cool on racks.

1 cup slivered almonds
1 cup wheat germ
1 cup flaked coconut
1 ½ cups white sugar
½ cup butter
½ cup milk
¼ cup unsweetened cocoa powder

Steps:

  • Line a baking sheet with parchment paper.
  • Mix oats, almonds, wheat germ, and coconut together in a bowl.
  • Combine sugar, butter, milk, and cocoa powder together in a saucepan; bring to a boil. Cook and stir cocoa mixture until smooth, about 5 minutes. Pour cocoa mixture over oat mixture; stir to coat.
  • Drop oat mixture, about 1 tablespoon per cookie, onto the prepared baking sheet. Chill in the refrigerator until set, 20 to 30 minutes.
