TERRIFIC TACO SALAD

I invented this recipe several years ago. It's quick to make, and uses ingredients I usually have on hand in my pantry or refrigerator.-Jeannie Daubar, Todd, North Carolina

Number Of Ingredients 14

1 pound ground beef
1/2 teaspoon salt
1/4 teaspoon pepper
1 can (16 ounces) hot chili beans, undrained
4 to 6 cups corn chips
1 cup shredded cheddar cheese
2 cups shredded lettuce
1 large tomato, chopped
1 small green pepper, chopped
6 green onions with tops, chopped
1 small avocado, chopped, optional
1/2 cup sliced ripe olives, optional
1 cup sour cream
Salsa

Steps:

  • In a large skillet over medium heat, cook beef until no longer pink; drain. Season with salt and pepper; set aside. Heat beans in a small saucepan. , Divide meat mixture and beans into six portions. Assemble in layers on six plates the following: first layer—corn chips; second layer—beef mixture; third layer—cheese; fourth layer—chili beans; fifth layer—lettuce; and sixth layer—tomato, green pepper, onions, avocado and, if desired, olives. Top with a dollop of sour cream; pour salsa over all.

I can't eat salt and so when i made these last night i thought they were so good i just had to share. For all you low-sodium people a good majority of my recipies have no salt. ENJOY!!!!!!

Number Of Ingredients 12

1 lb ground turkey
1/2 cup diced onion
2 tablespoons olive oil
1 tablespoon Mrs. Dash garlic and herb seasoning
1 tablespoon mrs. dash southwest dried chipotle powder
1/2 cup green bell pepper
1 teaspoon of diced habanero pepper (pepper should be very small, no bigger than the head of a sucker)
lettuce (how ever much you want)
1 medium tomatoes
cheese
fat free sour cream
tortillas (which ever you prefer) or taco shell (which ever you prefer)

Steps:

  • PREPERATION.
  • Chop and dice onion, bell pepper, and habernero pepper and set aside. Then wash hands.
  • Chop lettuce and dice tomato and set into different bowls.
  • TACOS.
  • In a large to medium skillet heat olive oil and then add onion, bell pepper and habernero pepper until veggies look soft and the onions look a little clear.
  • Add ground turkey and Ms. Dash seasonings and mix while the turkey browns until done.
  • Heat tortillas or shells and fill with turkey.
  • Then add toppings and enjoy. I personal like to eat salsa and chips with mine, but you can eat just tacos or whatever you like!

Terrific Tofu Tacos image

This recipe will please even the most stubborn tofu hater! You simply can't tell you're eating tofu. You can slip this in, unnoticed to your finicky family; tell them it's chicken, pork or beef; they'll never know the difference!

0.5 (14 ounce) package firm tofu
0.5 (1 1/4 ounce) envelope taco seasoning mix
1 cup chopped cabbage
1/4 cup chopped onion
1/4 cup chopped cilantro (loosely packed)
1 (16 ounce) can refried beans
olive oil
canola oil (for frying tortillas) or corn oil (for frying tortillas)
sour cream
shredded cheese (your choice)
salsa
white corn tortilla

Steps:

  • If you freeze the tofu first, then cook with at after thawed, it will have a meatier texture. After thawed, cut the tofu into a couple of pieces, similar in size. Place on paper towels, then top with paper towels, then put a heavy weight on top (a couple of phone books work well--put some plastic wrap between the tofu and the books or you'll have soggy books). Let sit for at least 30 minutes. The purpose of this step is to squish as much water out of it as possible, making it even more convicing as "meat". After you are satisfied that you've gotten as much of the water out as you can, slice the tofu into 1/4" cubes. Toss in a bowl with olive oil and the taco seasoning. Fry over medium heat until crispy.
  • While that's cooking, toss the cabbage (or lettuce if you have to), onion and cilantro in a bag or bowl or some other reservoir. Then heat the refried beans. And last but not least, in a separate skillet, fry the tortillas one by one, using a couple of tablespoons of the corn oil(or whichever type you prefer)each.
  • I layer the ingredients on the tortillas just like you would a taco. These are very filling and even big burly guys will find it hard to eat many more than 3!

12 lettuce leaves, torn into small pieces

1 cup TACO BELL® Thick & Chunky Salsa
3/4 cup sour cream
12 TACO BELL® Crunchy Taco Shells, warmed

Steps:

  • Cook meat with seasoning mix as directed on package.
  • Meanwhile, place lettuce, cheese, salsa and sour cream in separate serving bowls.
  • Serve taco shells with seasoned meat and toppings just before serving.

Dinner ready in 30 minutes! Enjoy taco recipe made with beef and salsa - a perfect Mexican cuisine.

1/2 head lettuce
1 tomato
1 bag (4 ounces) shredded Cheddar cheese (1 cup)
1 pound ground beef
1 cup salsa
10 taco shells

Steps:

  • Wash the lettuce in cool water. Pat dry with the paper towels. Cut lettuce into long pieces on the cutting board, using the knife. Put lettuce in one of the small serving bowls.
  • Wash the tomato in cool water. Pat dry with paper towels. Chop the tomato into small pieces on cutting board, using knife. Put tomato in another small serving bowl.
  • Put the cheese in the third small serving bowl.
  • Put the ground beef in the skillet. Stir with the long-handled spoon until beef is broken into small pieces. Cook over medium heat 8 to 10 minutes, stirring often, until beef is brown.
  • Take skillet off hot burner. Put the strainer over the small bowl. Spoon beef into strainer to drain the fat. Put beef back in skillet.
  • Add the salsa to beef. Heat to boiling, stirring all the time. Turn the heat down to medium-low. Cook 5 minutes, stirring a few times. Pour beef mixture into the large serving bowl.
  • Heat the taco shells as directed on package, if you like. Serve taco shells with the beef mixture, lettuce, tomato and cheese, letting each person make his or her own taco.
