Rosemary and Golden Raisin Muffins image

Bisquick Original baking mix makes these savory muffins easy. Serve them for a crowd, or save them for a snack.

3/4 cup golden raisins
1 egg
2 cups Bisquick™ Original baking mix
2 tablespoons finely chopped fresh rosemary leaves
2/3 cup shredded white Cheddar cheese
2/3 cup milk
2 tablespoons olive oil
1/2 teaspoon freshly ground pepper
1/4 teaspoon dried thyme leaves

Steps:

  • Heat oven to 400°F. Lightly spray 12 regular size muffin cups with cooking spray.
  • In small bowl, place raisins; add enough hot water to cover. Let stand 10 minutes; drain.
  • In medium bowl, beat egg slightly. Stir in remaining ingredients just until moistened. Stir in raisins. Divide batter evenly among muffin cups.
  • Bake 17 to 19 minutes or until golden brown. Serve warm.

3/4 cup milk
1/2 cup golden raisin
1 teaspoon dried rosemary
1/4 cup butter
1 1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 large egg

Steps:

  • In a small saucepan, simmer milk, raisins, and rosemary for 2 minutes; remove from heat; add in butter and stir until melted; let cool.
  • Preheat oven to 350°; grease mini muffin tins or use foil baking liners.
  • In a big bowl, mix flour, sugar, baking powder, and salt.
  • Whisk egg into the milk mixture; pour liquid mixture over dry ingredients and fold in with a rubber spatula just until dry ingredients are moistened.
  • Scoop batter into muffin cups; bake about 20 minutes, or until browned and springy in the center.
  • Turn out of pan and serve hot, or cool on a rack.

6 tablespoons unsalted butter, melted, plus more for pans
2 cups unprocessed wheat bran
1 1/2 cup giant raisins
1 cup prune juice
1 cup plain nonfat yogurt
6 tablespoons unsulphured molasses
2 large eggs
1 teaspoon pure vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Heat oven to 375 degrees. Lightly butter six giant-size muffin cups, or line them with paper liners.
  • Combine wheat bran, raisins, prune juice, yogurt, molasses, butter, eggs, and vanilla in a large bowl. Let stand for 10 minutes.
  • Whisk together flour, baking powder, baking soda, and salt in a small bowl. Stir dry ingredients into the bran mixture just until dry ingredients are moistened. Do not overmix.
  • Spoon 1 cup batter into each of the giant muffin cups. Bake in the center of the oven until a cake tester comes out clean, 27 to 30 minutes.
  • Turn muffins out of the pan, and let them cool on a rack.

A couple of years ago, I decided to search out the perfect pumpkin muffin. I Googled & got hundreds of hits. I printed out the ones that looked like winners & tried a few. When I got to this one, my search ended. These muffins are very rich & obviously not diet food! But they are one of my favorites & I hope you will enjoy them too. The original recipe called for walnuts & fewer raisins, but I adapted them to my tastes. I recently made this recipe using about 2/3s of the sugar & substituting fresh chopped cranberries for the raisins. It was really good that way too.

3 cups sugar
1 cup oil
4 eggs
2 cups canned pumpkin
3 1/2 cups flour
1 teaspoon baking powder
2 teaspoons baking soda
2 teaspoons salt
3 1/2 teaspoons pumpkin pie spice
2/3 cup water
1 cup raisins

Steps:

  • Mix oil& sugar.
  • Add eggs& pumpkin.
  • Sift all dry ingredients& add alternately with water to pumpkin, mixing well.
  • Stir in raisins.
  • Pour into greased muffin tins& bake at 350 degrees for 30 minutes.
