Number Of Ingredients 13

3 teaspoons active dry yeast
1 teaspoon salt
5-1/4 to 6 cups all-purpose flour
1 cup water
1 cup butter, cubed
1/2 cup 2% milk
2 large eggs, room temperature
FLAVORING :
1/2 cup butter, melted
6 garlic cloves, minced
2 tablespoons minced fresh rosemary or 2 teaspoons dried rosemary, crushed
1 teaspoon salt
1 cup grated Parmesan cheese

Steps:

  • In a large bowl, mix yeast, salt and 2 cups flour. In a small saucepan, heat water, cubed butter and milk to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add eggs; beat on high 2 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; shape into 1-1/2-in. balls. Combine melted butter, garlic, rosemary and salt. Dip 10 dough balls into butter mixture. Place in a greased 10-in. fluted tube pan; sprinkle with a scant 1/4 cup Parmesan cheese. Repeat with remaining balls and Parmesan cheese. Drizzle with any remaining butter mixture. Cover and let rise until doubled, about 45 minutes. Preheat oven to 350°., Bake until golden brown, 55-70 minutes or until a thermometer inserted into bread reads 200°. Cool for 10 minutes before inverting onto a serving plate. Serve warm.

1 1/2 cups warm water
1 tbsp active dry yeast
1 tsp salt
1/4 tsp black pepper
2 garlic cloves ((minced))
1 tsp crushed red pepper
1/2 tbsp fresh rosemary ((roughly chopped))
1 tbsp extra virgin olive oil
3 1/4 cups all purpose flour

Steps:

  • Add warm water and dry active yeast to a large mixing bowl. Give it a quick mix and let it rest for 10 minute.
  • Then add in the salt, pepper, garlic, crushed red pepper, rosemary and oil to the bowl and gently mix.
  • Add in the flour and fold all the ingredients together using a wooden spoon just until everything is combined. The dough should feel soft, delicate and a little sticky. You don't want to over mix it or the bread will bake tough on the inside.
  • Cover the mixing bowl using plastic wrap and a dishtowel. Let the dough rest and rise at room temperature for at least 2 hours. It should double in size.
  • When you're ready to bake your bread, preheat your oven to 450°F and cover a baking sheet with parchment paper.
  • Uncover the mixing bowl and dust the dough with some flour. Scoop the dough onto the baking sheet and gently shape it into a loaf. Pop the bread into the oven and bake for 35 minutes.

10 oz lean beef, minced
1 onion, chopped
4 cloves garlic, crushed
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon coriander
1 tablespoon plain flour
1 ¼ cups beef stock
½ can canned chopped tomato
½ can canned kidney bean, rinsed and drained
2 tablespoons tomato puree
1 teaspoon dried oregano
½ teaspoon salt
1 bay leaf
1 crusty baguette
3 ½ tablespoons butter, melted
1 handful fresh parsley, roughly chopped
½ cup cheddar cheese, finely grated

Steps:

  • In a saucepan, cook the onion and 2 garlic cloves in a little oil.
  • After a minute or so, add the minced beef, breaking it up with a spoon.
  • When the mince has browned, stir in the chilli powder, cumin, ground coriander, and the plain flour.
  • Stir in the beef stock, tomatoes, tomato purée, kidney beans, oregano, and salt.
  • Place a bay leaf into the mixture, loosely cover and simmer for 30-45 minutes, stirring occasionally. Allow to cool some so you don't burn yourself during the next bit!
  • Preheat the oven to 200°C (400°F).
  • Top and tail the baguette, then cut it into 3-4 equal rolls.
  • Hollow out each roll, allowing a thin border of bread around the outside.
  • Stuff each roll with chili using a teaspoon. Try to really fill them up.
  • Make the garlic butter by stirring in 2 cloves of crushed garlic and a handful of parsley into the melted butter.
  • Coat each stuffed roll with a generous helping of garlic butter. Top with a healthy portion of finely grated cheddar.
  • Bake in the centre of the preheated oven for 10-12 minutes, until the cheese is bubbly and melted.
  • Enjoy!

2 heads garlic
¼ cup olive oil, plus 2 table spoons
2 ½ teaspoons kosher salt, divided
2 ¼ cups bread flour, plus more for dusting
1 ¼ cups whole wheat flour
3 sprigs fresh rosemary, minced
1 ½ cups warm water
1 tablespoon instant yeast

Steps:

  • Preheat the oven to 400°F (200°C).
  • Remove the top of each garlic bulb so just the tops of the cloves are exposed. Set the tops aside. Drizzle 1-2 tablespoons of olive oil over top of each bulb, letting the oil seep down between the cloves. Season each bulb with ¼ teaspoon of salt. Place the tops back on each bulb and set in a shallow baking dish.
  • Bake for 20-25 minutes, until the cloves are completely tender, but not mushy. Since the garlic will continue cooking in the bread, you want them a little more firm so they hold their shape in the loaf.
  • Let the garlic to cool until safe to handle. Gentle press on the bottom of each clove to pop it out of its skin. Roughly chop the garlic cloves and set aside.
  • In a large bowl, combine the bread flour, whole wheat flour, chopped garlic, rosemary, and the remaining 2 teaspoons of salt. Stir well with a rubber spatula.
  • In a separate large bowl, combine the warm water, remaining ¼ cup (60 ml) olive oil, and the yeast.
  • Add the dry ingredients to the wet ingredients and use a rubber spatula to stir until the dough just comes together. With your hands, knead the dough in the bowl until there are no dry, floury spots remaining. Cover with a kitchen towel and let rest in a warm place for 60 minutes, or until almost doubled in size.
  • Using the spatula, fold the dough toward the center again 8 more times, rotating the bowl each time. Cover with the towel and let rest for 30 minutes more.
  • Place a Dutch oven with a lid in the oven, and preheat the oven to 450°F (230°C) for 30 minutes.
  • Lightly dust a clean surface and your hands with flour. Carefully turn the dough out of the bowl onto the floured surface. Fold the edges of the dough towards the center 8 times, then flip the dough over and transfer to a piece of parchment paper.
  • Carefully remove the Dutch oven from the oven (it will be very hot) and use the parchment to lift the bread into the pot. Cover with the lid.
  • Bake the bread for 30 minutes. Remove the lid and reduce the oven temperature to 425°F (220°C). Bake for 20 more minutes, until the bread is golden brown.
  • Carefully slide the bread out of the pot and onto a wire rack. Remove the parchment paper and let the bread cool for at least 1 hour before slicing.
  • Slice the bread and serve as desired.

3/4 cup warm fat-free milk (70° to 80°)
1/4 cup water (70° to 80°)
1/4 cup butter, softened
1 egg
2-3/4 cups bread flour
2 tablespoons sugar
2 teaspoons kosher salt, divided
2 teaspoons active dry yeast
4 teaspoons olive oil
4 garlic cloves, minced
1 tablespoon minced fresh rosemary

Steps:

  • In bread machine pan, place the milk, water, butter, egg, flour, sugar, 1 teaspoon salt and yeast in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When cycle is completed, turn dough onto a lightly floured surface. Punch dough down. Cover and let rest for 10 minutes. Shape into an 11-in. circle; place on a baking sheet coated with cooking spray. Cover and let rise until doubled, about 30 minutes. Using the end of a wooden spoon handle, make several 1/4-in. indentations in dough., Brush with oil. Sprinkle with garlic, rosemary and remaining salt. Bake at 400° for 15-20 minutes or until golden brown. Cut into wedges.

1 1/2 teaspoons active dry yeast (this is slightly more than one packet)
1 cup warm water (110-115 degrees)
2 teaspoons granulated sugar
1 1/2 teaspoons salt
3 tablespoons extra virgin olive oil
2 1/2 cups bread flour
1 tablespoon dried rosemary
1/4 teaspoon fresh ground black pepper
1/4 teaspoon dried oregano or 1/4 teaspoon italian seasoning
1 head roasted garlic clove
olive oil
coarse sea salt, and chopped fresh rosemary for top

Steps:

  • In large bowl, sprinkle yeast into 1 cup warm water. Mix in the sugar and salt. To proof, let sit for about 10 minutes and become foamy.
  • Add in olive oil, bread flour and knead, by hand or stand mixer, for about 10 minutes. Add dried rosemary, black pepper and oregano or Italian seasoning. Knead another 5 minutes.
  • Add to the dough the roasted garlic cloves and gently knead to incorporate, about 1 - 2 minute. Dough should come together well at this point and may be slightly sticky.
  • Place dough ball in a well oiled bowl, turning dough to cover entire surface. Tightly cover bowl with plastic wrap. Place in warm, draft-free area to rise until dough is doubled, about 1 - 1 1/2 hours.
  • After dough has doubled, punch it down and shape into a rounded loaf. Place rounded loaf on greased baking sheet. Using sharp knife, makeing a couple of deep cuts on top. Cover loaf with a clean dish towel or large mixing bowl inverted over it. Make sure bowl is large enough that it gives your loaf room to rise. Let rise until doubled again, approx 1 hour.
  • After the second dough rise, gently brush with olive oil then with coarse sea salt and freshly chopped rosemary. Bake at 375F for 25-30 minutes, spraying loaf with water once during the middle of baking. Raise oven temperature up to 425F and spray loaf with water again. Watching closely, bake just until top is golden brown, taking care not to over bake.

5 whole garlic bulbs
2 teaspoons olive oil
1/4 cup minced fresh rosemary or 4 teaspoons dried rosemary, crushed
1 tablespoon chicken broth
9 to 9-1/2 cups bread flour
1/2 cup sugar
3 packages (1/4 ounce each) quick-rise yeast
3 teaspoons salt
1-1/2 cups milk
1 cup water
3/4 cup butter, divided
1 egg
1-1/2 teaspoons garlic salt

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic heads, leaving root end intact. Place cut side up in a small baking dish. Brush with oil; sprinkle with rosemary. , Cover and bake at 425° for 30-35 minutes or until softened. Cool for 10 minutes; squeeze softened garlic into a bowl. Add broth; lightly mash., In a large bowl, combine 3 cups flour, sugar, yeast and salt. In a large saucepan, heat the milk, water and 1/2 cup butter to 120°-130°. Add to dry ingredients; beat just until moistened. , Beat in egg and garlic paste until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). Divide each portion into three pieces; shape each into an 18-in. rope. Place three ropes on a greased baking sheet and braid; pinch ends to seal and tuck under. Repeat with remaining dough. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 350° for 15 minutes. Melt remaining butter; add garlic salt. Brush over bread. Bake 10-15 minutes longer or until golden brown. Remove from pans to wire racks to cool.
