8 ounces tequila (preferably reposado)
3 cups ruby red grapefruit juice
4 teaspoons fresh lime juice

Steps:

In a pitcher, combine tequila, grapefruit juice, and fresh lime juice. To serve, divide among four glasses filled with ice.

Bucks refer to drinks that combine lime and ginger beer, so a dark and stormy with lime is an example of a buck. In this version, I introduced aromatic bitters and homemade hibiscus syrup for extra flavor and a blush of color. Add your choice of garnish, such as a lime twist or a fresh hibiscus flower. Serve with a straw.

2 fluid ounces light rum
½ fluid ounce hibiscus syrup
½ fluid ounce freshly squeezed lime juice
3 dashes aromatic bitters (such as Angostura®)
ice cubes
4 fluid ounces ginger beer, or more to taste

Steps:

Combine rum, hibiscus syrup, lime juice, and bitters in a highball glass. Add enough ice to bring liquid volume up halfway; stir to combine. Top mixture with ginger beer.

Ingredients

1 cup white sugar
1 tablespoon instant tapioca
1 tablespoon cornstarch
⅛ teaspoon salt
4 cups rhubarb, cut into 1/2 inch pieces
1 cup raspberries
½ cup brown sugar
½ cup all-purpose flour
½ cup quick cooking oats
½ cup butter, chilled

Steps:

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
In a large bowl, combine sugar, tapioca, cornstarch and salt. Place rhubarb and raspberries into bowl making sure to completely coat them with dry ingredients. Pour into baking pan.
In a medium bowl, mix together brown sugar, flour and oats. Cut in butter until mixture resembles pea-sized crumbs. Spread on top of fruit mixture.
Bake in preheated oven for 45 minutes, or until rhubarb is tender.

One year we lost to a ketchup and Coca-Cola recipe and it got me mad, so I cooked up this recipe.

1 1/2 cups of ketchup
2 tablespoons of worcestershire sauce
2 tablespoons of tabasco
3/4 cup brown sugar
1 tablespoon of cumin
1 tablespoon of garlic powder
1 tablespoon of pepper flakes
1 tablespoon of cayenne pepper
2 tablespoons of celery salt
1/4 cup dark molasses
1/4 cup Jack Daniels
1/3 cup maple syrup
1/4 cup apple juice
1 packet of Goya Sazon

Steps:

Combine all ingredients, except the Jack Daniels, in a saucepan and heat slowly until the mixture turns ruby red about 10 min. Take off heat and add the Jack Daniels. Stir and enjoy over ribs.

I actually got this recipe from Parents Magazine 11 years ago when I made my first ever Thanksgiving dinner. It's a wonderful cranberry relish with apples and just a hint of orange zest. I make this every year, I have never bought canned 'cranberry jelly' yuck!

1 cup sugar
3/4 cup water
1 (12 ounce) bag cranberries, rinsed and picked through
2 golden delicious apples, peeled, cored and cut into 1/3-inch cubes
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1 tablespoon orange zest

Steps:

In a medium saucepan over medium heat bring sugar and water to a boil. Add cranberries, apples, cinnamon and allspice.
Reduce heat to medium-low and cook until cranberries pop - about 8 minutes.
Remove from heat and stir in orange peel.
This can be made up to 3 days in advance and stays in the refrigerator up to 7 days in a tightly sealed container. (but it never lasts that long, lol).

Prepare coconut milk mixture . In a saucepan, pour coconut milk, pandan and sugar and ½ cup water to simmer until just hot. Take it off the heat, pour mixture into a jug and set aside to cool.
Make water chestnut jellies. Next, cut the water chestnuts into small cubes. Toss them into a mixing bowl and pour in the food colouring mixture till nice and red. Use a sieve to drain the colouring from the chestnut cubes. Set chestnut aside. Using a large ziplock bag, pour in tapioca flour and chestnut cubes. Shake the bag vigorously, making sure each chestnut is evenly coated with flour. Empty the bag into a sieve to shake off the excess flour from chestnuts. Prepare a large bowl with an ice water bath. Bring the 2 cups of water to boil in a saucepan, then cook the water chestnut in batches for a minute each, then remove and plungethem immediately into an icebath. Strain the water chestnut jewels into a bowl and set aside for assembly.
Add crushed ice . To make the crushed ice, pour ice cubes into your blender and use to Pulse mode to finely crush the ice.
Assemble. To assemble, first spoon a tablespoon of ruby red chestnuts at the bottom of the serving glass, followed by jackfruit, coconut milk, another layer of chestnuts and pomegranate fruits. Spoon heavy scoops of ice, followed by a garnish of jackfruit, pomegranate fruits and drizzle with pomegranate juice.
