For a taste of the frontier, bake Ree Drummond's Blackberry Cobbler from The Pioneer Woman on Food Network; it's perfect served warm with cold ice cream.

1/2 stick butter, melted, plus more for greasing pan
1 1/4 cups plus 2 tablespoons sugar
1 cup self-rising flour
1 cup whole milk
2 cups fresh (or frozen) blackberries
Whipped cream and/or ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with butter.
  • In a medium bowl, whisk 1 cup sugar with the flour and milk. Whisk in the melted butter.
  • Rinse the blackberries and pat them dry. Pour the batter into the baking dish. Sprinkle the blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the blackberries. Bake until golden brown and bubbly, about 1 hour. When 10 minutes of the cooking time remains, sprinkle the remaining 2 tablespoons sugar over the top. Top with whipped cream or ice cream . . . or both!

A hearty yet healthy dish that's perfect for a rainy evening, and it's low-fat too

500g pack extra-lean beef mince
1 onion , finely chopped
140g baby chestnut mushroom , halved
2 tbsp plain flour
500ml beef stock
few shakes Worcestershire sauce
140g self-raising flour
1 tbsp chopped thyme
4 tbsp low-fat natural yogurt
140g frozen peas

Steps:

  • Heat oven to 180C/160C fan/gas 4. Dry-fry the mince and onion in a large non-stick frying pan over a high heat. Stir frequently to break up the mince, until well browned. Add the mushrooms and plain flour, followed by the stock and Worcestershire sauce. Bring to a simmer, then gently cook for 10 mins.
  • Meanwhile, to make the cobbles, mix the self-raising flour and thyme together in a bowl. Stir in the yogurt with enough cold water to form a scone-like dough. On a lightly floured surface, roll out to the thickness of about 1.5cm and use a cutter to stamp out 12 x 5cm rounds.
  • Stir the peas into the mince mixture, then transfer to a baking dish. Randomly place the cobbles on top of the mince, then bake for 20-25 mins, until cobbles are risen and golden brown. This is good served with horseradish sauce.

1/2 cup butter or 1/2 cup margarine
1 cup flour
1 cup milk
1 cup sugar
1 tablespoon baking powder
1 (16 ounce) can pie filling (cherry or peach or apple or strawberry)

Steps:

  • Melt butter in 9x13 baking dish.
  • Mix in flour, milk, sugar, and baking powder.
  • Dollop pie filling on top.
  • Bake at 350 degrees for 30 minutes or until brown.

3 cups quartered strawberries
3 cups honeydew melon, cut into bite sized pieces
1 cup chopped dates
1 3/4 cups white sugar
1 teaspoon vanilla
2 cups flour
1/4 cup white sugar
3 teaspoons baking powder
5 tablespoons cold butter
1/4 cup pistachios, chopped
1/2 cup milk
2 tablespoons white sugar
1 cup plain yogurt
1/4 cup icing sugar
2 tablespoons vanilla

Steps:

  • For filling; place strawberries, melon pieces (use a melon ball scoop if desired), dates and sugar into a large saucepan. *to chop dates easily, use scissors*.
  • Bring mixture to a boil over high heat, stirring occasionally.
  • After fruit begins to boil, reduce heat to medium and continue to simmer for 13-15 minutes being sure to stir often.
  • Remove from heat and add vanilla.
  • Pour fruit into a 9x9 pan.
  • For Biscuit Topping; Place flour, sugar, and baking powder into a bowl.
  • Cut in cold butter with two knives or a pastry cutter until mixture resembles fine crumbs.
  • Add pistachios and stir to combine.
  • Pour in milk and blend until mixture is thick. Do not overmix.
  • Drop 9 equal spoonfuls over top of fruit filling in rows of three.
  • Sprinkle with remaining sugar.
  • Bake at 425 degrees for 20-25 minutes until hot and bubbly and topping begins to brown slightly.
  • *you may want to place a cookie sheet to prevent it from spilling over onto the oven floor*.
  • Serve warm with Creamy Vanilla Yogurt Sauce.
  • For Creamy Vanilla Yogurt Sauce; Combine all ingredients and blend well.
  • To Freeze: After cobbler has cooled, wrap with tinfoil, label and freeze for up to 2 months.
  • To serve: Thaw in fridge overnight. Warm in the oven if desired.
  • Make the creamy yogurt sauce before serving.
