6 ounces cream cheese, softened
1/4 cup butter, melted
6 large eggs
1 cup 2% milk
1-1/2 cups all-purpose flour
1/2 cup cornmeal
1 teaspoon baking powder
1 teaspoon salt
1 can (15-1/4 ounces) whole kernel corn, drained
1/2 cup salsa, drained
1/4 cup minced green onions
Sour cream and additional salsa

Steps:

  • In a large bowl, beat cream cheese and butter until smooth; add the eggs and mix well. Beat in the milk until smooth. Combine the flour, cornmeal, baking powder and salt; stir into cream cheese mixture just until moistened. Fold in the corn, salsa and onions. , Pour batter by 1/4 cupfuls into a large greased cast-iron skillet or hot griddle. Turn when bubbles form on top; cook until the second side is golden brown. Serve with sour cream and salsa.

2 scallions
1 Red Hungarian wax pepper
150 grams Corn (canned)
75 grams Cornmeal
75 grams Pastry flour
1 tsp Baking powder
100 grams Vegan quark
150 milliliters mineral water (tangy)
salt
freshly ground peppers
4 Tbsps vegetable oil
4 tomatoes
0.5 Cucumber
1 Red onion
2 Tbsps lemon juice
2 Tbsps olive oil
salt
1 pinch sugar
Chili powder

Steps:

  • For the corn cakes: Rinse, trim and chop the scallions. Rinse, dry, and halve the green peppers, remove ribs and seeds and finely chop. Drain the corn. Combine the cornmeal with the flour, the baking powder, quark and mineral water and mix until smooth. Mix in the corn, spring onions and peppers and season with salt and pepper. Drop by tablespoonfuls into a hot pan with oil. Press lightly flat and fry until golden brown, 3-4 minutes. Turn and fry for another 3-4 minutes. Drain on paper towels.
  • For the salsa: Rinse tomatoes, wipe dry, and cut out stems. Cut into quarters and dice. Wash the cucumber, cut in half lengthwise, scrape out the seeds and also dice. Peel the onion and cut into small cubes. Combine vegetables and season with the lemon juice, oil, salt, sugar and chili powder.

½ cup sliced jalapeno peppers
1 tablespoon garlic powder
1 tablespoon flavor enhancer (such as Accent®)

Steps:

  • Mix corn, Cheddar cheese, mayonnaise, sour cream, green onions, pimentos, jalapenos, garlic powder, and flavor enhancer together in a bowl until well combined. Refrigerate 8 hours or overnight for best flavor.

2 ripe avocados, diced
1/2 cup coarsely chopped cilantro leaf, loosely packed
2 tablespoons lime juice
2 green onions, finely chopped
1 dash hot sauce
sea salt
fresh ground pepper
2 1/2 cups frozen corn kernels, thawed, drained
4 ounces red onions, chopped
2 eggs
1/2 cup cilantro leaf, loosely packed
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon sea salt
fresh ground pepper
vegetable oil

Steps:

  • FOR SALSA: Place all the ingrediens in medium bowl and stir gently to combine. Cover and set aside.
  • FOR SWEETCORN CAKES: Combine 2 cups of the corn, onion, eggs, cilantro, flour, baking powder, salt and pepper in a food processor. Process until well mixed. Add the remaining 1/2 cup corn into the mixture and mix well.
  • Heat a large skillet at medium heat and brush with oil. Spoon 2 heaping tablespoons of the mixture for each corn cake onto griddle.
  • Cook each side for 1 to 2 minutes.
  • Cook in batches. Keep the cooked corn cakes warm in a 200F preheated oven.
  • Serve with salsa.
  • Makes 15 cakes.

50g self-raising flour
1 egg , beaten
200g canned or frozen sweetcorn
bunch spring onions , trimmed and finely chopped
1 avocado , cut into small chunks
1 lime , ½ juiced and the rest cut into 4
handful coriander leaves, chopped
1-2 tbsp vegetable oil
refried beans , to serve

Steps:

  • In a bowl, combine the flour, egg, corn and half the onions with some seasoning, then mix well. Mix the avocado with the remaining onions, lime juice, coriander and seasoning, then set aside.
  • Heat 1 tbsp oil in a non-stick frying pan. Drop tbsps of the corn mixture into the frying pan, smoothing them down to form cakes. Cook for about 2-3 mins on each side over a medium heat, adding the remaining oil if you need to. Serve hot with the avocado salsa, lime wedges and some warm refried beans.
