EASY SANTA FE CHICKEN
"My day is busy from start to finish," remarks Debra Cook of Pampa, Texas. "So this quick and meaty main dish is one of my menu mainstays. With its lovely golden color, it's pretty enough to serve to company or as a special Sunday dinner idea."

Steps:
- In a large skillet, saute onion in butter until tender. Add broth and salsa; bring to a boil. Stir in rice and garlic powder. Place chicken over rice; cover and simmer for 10 minutes. , Turn chicken; cook 10-15 minutes longer or until a thermometer reads 165°. Remove from the heat. Sprinkle with cheese; cover and let stand for 5 minutes. Garnish with cilantro if desired.

GRILLED SANTA BARBARA PRAWNS WITH BLOOD ORANGE GLAZE
Steps:
- Place prawns in a small bowl and marinate with 1 cup of the blood orange sauce for 1 to 2 hours. Place on a hot grill, season with salt and pepper and brush with remaining cup of blood orange sauce. Grill for about 1 to 2 minutes per side or until cooked through.
- Simmer blood orange juice over low heat until reduced to 1/4 cup, stirring occasionally to prevent scorching. Remove from heat and reserve. In a small saucepan, combine shallots and red wine vinegar and reduce over low heat. Add white wine, chicken stock and reduce again. Remove from heat and slowly whisk in olive oil until incorporated. Stir in reserved blood orange syrup, strain sauce and keep warm.
SOUTHWESTERN CHICKEN WITH MANGO-PEACH SALSA
Steps:
- Set up grill for direct grilling over medium-high heat. Oil grate when ready to start cooking.
- Rinse and pat dry chicken breast; set aside.
- In a small bowl, mix together All-Purpose Rub, cumin, and cayenne. Gently pat onto all sides of chicken breasts using all the rub mix; set aside while preparing salsa.
- For salsa: In a medium bowl, toss to combine all ingredients. NOTE: It is easier to dice frozen fruit while it is still frozen. Cover and set aside while chicken cooks.
- Place chicken on hot oiled grill. Grill chicken 5 to 6 minutes per side or until done.
- INDOOR: Preheat oven to 350 degrees F. Prepare chicken breasts, as directed. Roast chicken breasts in preheated oven for 35 to 40 minutes.
- Serve chicken hot with salsa.
- Combine all ingredients. Store in air-tight container in cool dry place or freezer.
BARBARA BUSH'S BARBECUED CHICKEN

Steps:
- Place chicken in a plastic bag set in a shallow dish.
- For marinade, stir together 3 tablespoons lemon juice, cooking oil, salt, 1/2 teaspoon black pepper, and garlic.
- Pour over chicken.
- Close bag.
- Marinate in the refrigerator for up to 24 hours, turning often.
- In a saucepan, combine water, onion, sugar, butter, mustard, vinegar, and 1/2 teaspoon pepper.
- Bring to boiling, reduce heat.
- simmer, uncovered for 20 minutes.
- Stir in catsup, Worcestershire, 6 to 8 tablespoons lemon juice, and red pepper.
- Return to boiling, reduce heat.
- Simmer, uncovered for 50 to 60 minutes or until reduced to about 4 cups.
- Meanwhile, drain, chicken, disacrding marinade.
- In a grill with a cover, arrange preheated coals around a drip pan.
- Test for medium heat above the pan.
- Place chicken, bone side down, on grill rack over drip pan.
- cover and grill for 50 to 60 minutes or until chicken is done (170 degrees for breast meat and 180 degrees for thighs and legs), brushing often with barbecue sauce the last 10 minutes of grilling.
- To serve, pass additional barbecue sauce with chicken.

- Place one chicken breast half at a time, shiny-side down, between two sheets of waxed paper. With a wooden mallet or rolling pin, flatten to 1/4 -inch thickness. Peel off waxed paper.In a small bowl, stir avocados, bacon, green onions, lemon juice, salt and hot pepper sauce until well blended.Place about 3 tablespoons of the avocado-bacon mixture and 2 tablespoons of the cheese in center of each breast. Fold breast over and enclose mixture, tucking in ends. Fasten with wooden picks.On a sheet of waxed paper, mix bread crumbs and lemon pepper. Dip chicken into butter or margarine, then into seasoned bread crumbs, coating well. Place in a shallow 2-quart baking dish. Pour remaining butter or margarine around chicken. If making ahead, cover and refrigerate up to 1 hour.Bake in a preheated 400° oven for 15 minutes. Baste with butter or margarine and bake 10 to 15 minutes longer or until chicken is tender. Remove wooden picks.Serve with lemon.

SARINA'S SWEET GARLIC CHICKEN
I have a thing about garlic and brown sugar so I made up a chicken breast recipe using both. Serve over rice or mashed potatoes.

- Preheat the oven to 350 degrees F (175 degrees C).
- Season chicken with garlic powder, seafood seasoning, oregano, steak seasoning, and black pepper. Place in a baking dish, skin-side up; chicken breasts should be close to each other but not overlapping.
- Dissolve brown sugar and honey in warm water.
- Melt butter in a saucepan over medium-high heat. Saute onion and garlic until onion is transparent, about 5 minutes. Do not drain. Add mixture to brown sugar-honey mixture. Pour evenly over chicken. Cover.
- Bake in the preheated oven until chicken is no longer pink in the center and juices run clear, about 30 minutes. Uncover and continue to bake until golden, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I found this recipe as a sample in a flyer I got to buy a cookbook. It's a great combination of flavors and is good served over rice. You can substitute margarine easily for the butter.

- Shake chicken pieces in bag with flour and salt & pepper (to taste); brown in butter and oil.
- Place browned chicken in a greased 3-quart casserole dish.
- Combine orange juice with vinegar, brown sugar, basil and nutmeg and pour over chicken.
- Cover (aluminum foil works great) and bake at 375 degrees F for 1.25 hours or until tender, but baste often.
- Then place peach halves between chicken pieces, baste well and bake uncovered for 15 minutes longer.
