SOUTHWESTERN PORK CHOPS

This recipe came out of necessity! I love to cook but hate to grocery shop, and one day I found myself with nothing but some pork chops, canned black beans and canned tomatoes. This is the dish I came up with, and my husband loved it.-Vicki L. Blaine, Plymouth, Michigan

Number Of Ingredients 15

1 medium onion, chopped
2 tablespoons olive oil, divided
1-1/2 teaspoons minced garlic
2 cans (14-1/2 ounces each) diced tomatoes, drained
1 can (15 ounces) black beans, rinsed and drained
3/4 cup chicken broth
1-1/2 teaspoons chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/8 teaspoon crushed red pepper flakes
4 bone-in pork loin chops(1/2 inch thick and 6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked rice
2 tablespoons minced fresh cilantro, optional

Steps:

  • In a large skillet, saute onion in 1 tablespoon oil for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, beans, broth, chili powder, oregano, cumin and pepper flakes. Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through. , Meanwhile, in another skillet, brown pork chops on both sides in remaining oil over medium-high heat. Sprinkle with salt and pepper. Pour tomato mixture over chops. Cover and simmer for 10-15 minutes or until a thermometer reads 160°. Using a slotted spoon, serve over rice. Sprinkle with cilantro if desired. Freeze option: Cool pork chop mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in pork reads 165°, stirring occasionally and adding a little broth or water if necessary. Serve as directed.

2 teaspoons ground cumin
1 teaspoon cornstarch
1 teaspoon chili powder

1/4 teaspoon cayenne pepper
6 bone-in pork loin chops (about 3/4 inch thick and 7 ounces each)
1/4 cup barbecue sauce
2 tablespoons lemon juice

Steps:

  • In a small bowl, combine the first eight ingredients; rub over pork chops. In a large resealable plastic bag, combine barbecue sauce and lemon juice; add pork chops. Seal bag and turn to coat; refrigerate for 1-2 hours., Discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill chops, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let stand for 5 minutes before serving.

3/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter, divided

1/2 cup frozen corn, thawed
3 tablespoons lime juice

4 lean pork loin or rib chops, about 1/4 inch thick (about 1 1/4 pounds)
1 tablespoon reduced-sodium chicken broth
1 tablespoon lime juice
1/2 teaspoon chili powder
1 clove garlic, crushed
Cilantro-Mint Salsa (see recipe)
salt and pepper to taste

Steps:

  • Place pork in shallow glass or plastic dish or heavy-duty resealable plastic bag. Mix broth, lime juice, chili powder and garlic rub on both sides of pork, using back of spoon. Cover dish or seal bag and refrigerate at least 1 hour but no longer than 24 hours. Prepare Cilantro-Mint Salsa. Heat coals or gas grill. Place pork on grill sprinkle with salt and pepper. Cover and grill 4 to 5 inches from medium heat 8 to 11 minutes, turning frequently, for medium doneness (160°). This recipe came from my grandmother. The directions are for baking in the oven, but I have done these in the crock pot as well as they turn out great. These are really good with mashed potatoes. A great comfort food meal. Easy and delicious!

1 (10 3/4 ounce) can cream of chicken soup
3 tablespoons ketchup
3 tablespoons Worcestershire sauce
1/2 cup water
1 tablespoon olive oil

Steps:

  • Trim pork chops.
  • Heat oil in a large skillet over medium- high heat.
  • Add chops and brown on both sides.
  • Spray a 9x13-inch baking pan with cooking spray.
  • Place browned chops in pan.
  • In a glass measuring cup, mix together soup, ketchup, Worcestershire and water.
  • Pour over the pork chops.
  • Cover with foil and bake at 350°F for 1 hour or until done (it will depend on the thickness of the chops).
  • Enjoy!

1/3 cup water
2 tablespoons enchilada sauce mix

  • Sprinkle pork chops with pepper. In a large nonstick skillet coated with cooking spray, cook chops in 1 teaspoon oil over medium heat for 2-3 minutes on each side or until browned. 24 uncooked jumbo pasta shells
1/2 pound lean ground beef (90% lean)
1/2 pound lean ground pork
1 large carrot, shredded
3 green onions, chopped
3 garlic cloves, minced
2 cans (4 ounces each) chopped green chiles
2 cups shredded Mexican cheese blend, divided
1 can (6 ounces) french-fried onions, divided
1/4 cup minced fresh cilantro
1 jar (16 ounces) picante sauce
2 cans (8 ounces each) tomato sauce
1 cup water

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions for al dente. Drain and rinse in cold water., Meanwhile, in a large skillet, cook beef and pork over medium heat until no longer pink, breaking into crumbles, 8-10 minutes; drain.   • In a large skillet heat olive oil and butter. Brown chops on both sides.
  • Remove chops and pour off all but 1 to 2 tablespoons of fat. Stir in flour, breaking up browned bits.
  • Place chops back into the skillet and add 1/4 cup of water, cover and cook on low heat for about 30 minutes. Add remaining ingredients. Cover and cook for 15 minutes longer. Season with salt and pepper to taste.
