PASTA WITH PEAS AND SAUSAGE
Delicious and creamy. Something different for pasta.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a skillet heat oil and saute garlic over medium heat. Brown sausage in skillet. Once brown add frozen peas and simmer for 5 minutes. Slowly add heavy cream and butter to skillet; bring to a slight boil. Add more cream if necessary. Cook for 5 minutes. Toss with cooked pasta and top with Parmesan cheese.

AMY'S PO' MAN GREEN BEANS AND SAUSAGE DISH
This is a very simple recipe that tastes great. Put your beans on in early morning and let them cook all day. Handed down by my Grandma who came from a pretty poor family. Goes great with cornbread.

Steps:
- Place the green beans in a large saucepan with a lid or a slow cooker. Pour water over the beans to cover; stir in salt. Bring to a boil over medium heat, reduce heat to low, cover, and simmer until the beans are very tender, 3 to 4 hours; add water throughout the cooking time as needed to keep moist.
- Add the smoked sausage and potatoes; cover and simmer until the potatoes are very tender and the beans and potatoes have absorbed the smoky flavor of the sausage, about 2 more hours.

Steps:
- Heat the oil in a large skillet. Add sausage and crumble. Saute over medium heat until cooked through.
- Add pasta sauce, water, and peas and bring to a boil.
- Pour into a pie plate.
- Unroll and separate breadsticks. Place 6 of the breadsticks across the pie plate over the sausage mixture, twisting each one and spacing evenly. Place the remaining 6 breadsticks over the first in the opposite direction, creating a lattice pattern. Trim ends if needed.
- Bake at 375 degrees for 25 minutes.

I made this without the hot sausage and bouillon cubes (just used ham in it's place), and it was absolutely phenomenal. Creamy and flavorful, I'd make this again. - Soak peas overnight in a bowl with water to cover.
- Drain and rinse under cold running water. Place in heavy kettle or Dutch oven with 3 cups fresh water and salt. Boil, covered, over moderate-high heat for 20 minutes.
- Meanwhile, heat olive oil in a skillet. Add sausages and stir-fry over moderate heat for 5 minutes. Add sofrito, tomato sauce and oregano. Saute another 5 minutes. Add to green peas.
