ITALIAN SAUSAGE SANDWICHES

- In a large Dutch oven, brown sausages a few at a time; discard all but 2 tablespoons drippings. Saute peppers and onion in drippings until crisp-tender; drain. , In the same pan, combine the tomato paste, tomato sauce, water, sugar, garlic, basil, oregano and salt. Add the sausages; bring to a boil. Reduce heat; cover and simmer for 30 minutes or until heated through. Serve on buns. Top with cheese if desired.

ITALIAN SAUSAGE AND PEPPERS
Italian Sausage and Peppers are a tasty dinner made in one-pan, you'll have dinner ready in about 30-minutes.

- Heat the oil in a large cast iron skillet over medium heat. When the oil is hot, add the sausage links and brown them slowly. Cover the pan loosely with a piece of aluminum foil to help keep heat in and keep the splatter down.
- Brown the sausage links slowly. Should they start to brown too quickly and crack, turn your heat down. Keep turning the sausage with tongs to brown all sides.
- When the sausage is browned remove from the pan and set aside.
- Melt the butter in the skillet. Add the sliced peppers and onions. Season them with salt and pepper to taste.
- Use a wooden spoon to toss them in the pan to coat with evenly with fat. Cook over medium to low heat until they are slightly softened. Add the honey and minced garlic and stir.
- Stir onions and peppers occasionally with a wooden spoon as they cook.
- Add Marsala or dry red wine to deglaze the pan. Use a wooden spoon to scrape the brown bits on the bottom of the skillet. Season again with salt and pepper, if needed.
- Add back the sausage links, add the marinara sauce and simmer ingredients over low heat. Simmer until the peppers are soft and sausage links are cooked all the way through.
- Keep the sausage links whole or slice into pieces.
- Slice Hoagie rolls 2/3 way through. Place on half sheet pan lined with parchment paper.
- Spoon sausage, peppers and onions into each roll. Spoon additional marinara sauce over top if desired.
- Add two slices of Provolone or Mozzarella cheese, if desired.
- Cook in a preheated 400 degree F oven for about 6-8 minutes, or until the cheese is melted. Garnish with freshly grated Parmesan cheese. Enjoy immediately.
- If you want the cheese to be browned more, place on broil for a few minutes. Monitor carefully so you don't burn them.

- Preheat oven to 400°. In a large skillet, cook and crumble sausage with onion over medium heat until no longer pink, 5-7 minutes; drain. Add garlic and tomato paste; cook and stir 1 minute. , Stir in tomatoes, tomato sauce, basil, 1/2 teaspoon pepper and salt; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 10-15 minutes., In a bowl, mix egg, ricotta cheese, 1-1/4 cups Parmesan cheese and the remaining pepper. Spread 1-1/2 cups meat sauce into a greased 13x9-in. baking dish. Layer with 4 noodles, 1-1/2 cups ricotta cheese mixture, 1-1/2 cups mozzarella cheese and 1-1/2 cups sauce. Repeat layers. Top with the remaining noodles, sauce and mozzarella and Parmesan cheeses., Cover with greased foil; bake 30 minutes. Uncover; bake until lightly browned and heated through, 5-10 minutes. Let stand 15 minutes before serving.
