- In a 10-in. ovenproof skillet, cook sausage over medium heat until no longer pink; drain and set aside. In the same skillet, cook apples and brown sugar in butter over medium heat until apples are tender., In a blender, combine the eggs, milk, flour, sugar and salt; cover and process for 10 seconds or until smooth. Pour over apple mixture. Sprinkle with sausage and cheese. , Bake, uncovered, at 425° for 18-23 minutes or until pancake is puffy and golden brown. Cut into wedges. Serve with sour cream and syrup if desired.,

- Heat oven to 350°F. Spread apple slices evenly over bottom of ungreased 13x9-inch pan. In 1-quart saucepan, heat 1/2 cup brown sugar, the butter and syrup over low heat, stirring occasionally, until melted. Pour syrup mixture over apples.

SPICY SAUSAGE AND APPLE PANCAKES

- For the sausage: Begin by browning the sausage in a pan over medium heat. Stir in the Thai chili garlic sauce and brown sugar and cook for 10 to 15 more minutes. Remove from the pan and set on paper towels to drain. For the pancakes: Mix the flour and sugar together. Whisk in the milk, oil and eggs. Add the food dye and extracts and mix well.
- Core the apples and remove any seeds, then slice in round slices.
- Heat a griddle to 300 degrees F. Drop batter by spoonfuls onto the griddle. When bubbles begin to appear on top of the pancakes, add an apple slice to the top of each pancake, then flip. Cook until both the apple slice and the pancake have browned, an additional 1 to 2 minutes. Then remove, placing the pancakes apple-side up on wax paper to cool. Stack them this way (upside down!) to display the fresh apple. Repeat with remaining ingredients.
- Place a stack of pancakes on a plate and spoon warm crumbled sausage over the top, then drizzle with maple syrup and serve.

- In a small bowl, combine the flour, cornmeal, baking powder, baking soda, and 1/2 teaspoon salt.
- In a large measuring cup combine the buttermilk, egg, and 3 tablespoons maple syrup and stir with a fork. Stir into the flour mixture with a spatula until just combined. Mix in the diced apple and sausage crumbles.
- Heat a pancake griddle over medium-low heat and then grease with a small amount of butter. Drop ladles of batter to form 4-inch pancakes, cooking pancakes for 2 to 3 minutes before flipping, or until the batter puffs up and bubbles form. Flip pancakes and continue to cook for an additional 1 to 2 minutes, until cooked through and nicely browned. Top with Cinnamon Walnut Butter and additional maple syrup, if desired.
- Combine the butter, maple syrup, cinnamon, vanilla, and salt in a bowl and mix until well blended. Serve with pancakes.

- Pancakes: Cook and scramble sausage until no longer pink over medium heat, drain grease and pat sausage with paper towels to get most of the grease remaining out and set aside. Beat eggs,milk and oil in a large bowl. Stir in Bisquick, cinnamon and the nutmeg, and sugar just until moist. Fold in apple and sausage. - Preheat oven to 400 degrees.
- In an oven safe skillet cook pork sausages until done.
- Remove, slice thin and pour off all the fat except 1 or 2 T.
- Mix together the eggs, milk and oil Add flour, 1/2 t.
- apple pie spice, salt and sausages.
- (some folks put the sausages in the apple syrup) Pour into hot skillet and bake in the oven for 15 minutes.
- Poke with a fork and bake for another 5 minutes.
- You want your pancake golden brown.
- Sauce------------------.
- Combine brown sugar, cornstarch and the remaining apple pie spice in a medium saucepan.
- Heat over medium high and add cider or juice, lemon juice.
- Stir well and cook until thick and bubbly.
- Add the apples (and sausage if reserving for sauce) and cook for 5 minutes more.
- Cut pancakes, plate up and serve with sauce.

BREAKFAST CAKE WITH SAUSAGE AND APPLES
This is awesome. It is a mixture of browned sausage and sliced sweet apples, wrapped up in a bundle of refrigerator cinnamon rolls and baked in a Bundt® or angel food cake pan. Top with dusted powdered sugar or the frosting that comes with the rolls, it looks like you slaved for hours. You can serve it like pull-apart bread but be careful-you may lose the sausage and apple pieces when pulling it apart.

- Heat a nonstick skillet over medium-low heat. Add sausage links and cook, turning often, until cooked through and browned, 12 to 16 minutes. Remove from the heat and cut links into 1/2-inch pieces.
- While the sausages are cooking, preheat the oven to 350 degrees F (175 degrees C). Spray the bottom, sides, and center of a fluted tube pan (such as Bundt®) with nonstick spray.
- Open cinnamon rolls and set frosting packages aside. Separate rolls and layer, with sides touching, to completely cover the bottom, sides, and center of the pan. Reserve several rolls for the top.
- Dump apple pie filling into a bowl. Use 2 knives and cut apples in opposite directions (crisscross) into 1/2-inch pieces. Add sausage slices, cinnamon, and allspice; gently stir until blended, being careful not to break up the apples any more. Spoon apple-sausage mixture into the cinnamon roll-lined pan, distributing it evenly around the pan. Lay cinnamon rolls on top to completely seal the apple mixture inside the rolls. You may not use all of the rolls.
- Bake in the preheated oven until cinnamon rolls are brown, about 20 minutes. Remove from the oven and let sit for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes.
- While the cake is cooling, warm icing packets in hot water. Drizzle icing over top of the cake. Cut into slices and serve.
