SAUSAGE SURPRISE
A really good breakfast or brunch dish that serves 8. It must be refrigerated the night prior to cooking.

Steps:
- Butter a 3-quart casserole.
- Trim crusts from bread & cut into 4 squares.
- Line casserole with bread.
- Brown sausage & drain.
- Cut each link into 3 pieces.
- Combine eggs, sausage, cheese, mustard, & milk.
- Pour into casserole & refrigerate overnight.
- When ready to bake, mix evaporated milk & soup.
- Pour over casserole.
- DO NOT REMIX.
- Bake at 300F for 1 1/2 hours.
- Serve with fruit salad & muffins, if desired.

SAUSAGE EGG CASSEROLE
My sister made this recipe and it was delicious, very creamy in texture! Also freezes well. This recipe is very versatile. Instead of the turkey Italian sausage, you could use bulk breakfast sausage. You can also add any veggies you like. Artichoke hearts are particularly good. Rotel (diced tomatoes and green chiles) is also very good in this. Enjoy!

Steps:
- In a large nonstick skillet, cook sausage, green pepper and onion over medium heat until meat is no longer pink; drain.
- In a large mixing bowl, beat eggs.
- Add the baking mix and milk.
- add the cottage cheese, shredded cheese, and chiles.
- Stir in the cooked sausage/onions/peppers.
- pour into a 13-in X 9-in X 2-in pan coated with nonstick cooking spray.
- Bake at 350F for 35-40 minutes or until a knife inserted near the center comes out clean.

- In a skillet, brown and crumble sausage; drain and set aside. In a large bowl, beat eggs; add milk, salt and mustard. - Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.
- Line the bottom of the prepared baking dish with crescent roll dough, and sprinkle with crumbled sausage. In a large bowl, mix beaten eggs, mozzarella, and Cheddar. Season the mixture with oregano, and pour over the sausage and crescent rolls.
- Bake 25 to 30 minutes in the preheated oven, or until a knife inserted in the center comes out clean.

- Heat a large skillet over medium-high heat and stir in sausage. Cook and stir until sausage is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
- Beat eggs in a large bowl; stir in milk, salt, and mustard. Fold bread cubes, Cheddar cheese, and sausage into egg mixture. Pour into a lightly greased 7x11-inch baking dish. Cover and refrigerate for 8 hours or overnight.

SAUSAGE/EGG CASSEROLE SURPRISE
In my home, breakfasts have a tendency to be more on the casual side of the fence. As a matter of fact, it is not unusual to see most of my houseguests arriving at the breakfast table in their jim jams... It is a homey site. A dish like this is excellent for a casual morning. Serve in the baking dish, and let everyone scoop out...

Steps:
- 1. Crumble the sausage, and cook over medium heat until browned. Drain the sausage on paper towels to remove any excess grease.
- 2. Combine the mustard powder, salt, eggs, and milk in a bowl.
- 3. Add the sausage, bread, and cheese. Then gently stir to incorporate.
- 4. Grease a 9x13 inch baking dish (or ceramic baking bowl) with butter, and then add the casserole mixture. Spread into an even layer.
- 5. Let cool overnight in the fridge. Cover with some cling foil to keep the casserole from absorbing any odors from the fridge. This step is important because it give the ingredients a chance to get to know each other.
- 6. The following morning, preheat your oven to 350f (175c), and begin waking up your sleeping guests.
- 7. Cover the dish with foil, and bake 45 to 60 minutes, or until the eggs are beginning to set.
- 8. Uncover, reduce heat to 325f (165c), and then bake an additional 30 minutes, or until eggs are firmly set.
- 9. Remove from the oven, tell your guests that breakfast is ready, and then serve immediately. Don't forget to mention to your sleepy-eyed guests that the serving dish is hot, hot, hot.
- 10. This is one of my holiday specials. I place the dish on a trivet on one of my sideboards; along with some homemade buttermilk biscuits, butter, honey, and assorted jams. The plates and utensils; along with coffee and juice are at the ready for my guests to dig in...
- 11. Keep the faith, and keep cooking.
