I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

- For the filling: Whisk together the brown sugar, flour, apple cider, cinnamon, nutmeg and salt in a large bowl. Peel and core the apples and cut into chunks. Add the apples to the brown sugar mixture and toss to combine.

- Brush crust with one tablespoon melted smart balance; sprinkle lightly with 2 t sugar. Cut into 8 wedges.

- Preheat the oven to 350 degrees.
- Spray a 13" x 9" baking pan with a non-stick spray.
- Place the sliced apples in the baking pan. Pour the lemon juice over the apples and mix well so that each apple is covered.
- Add the lemon zest and sugar and mix again so that the apples are coated.
