Yield 4 shrimp rolls

Number Of Ingredients 12

Juice of 1 lemon
3/4 cup mayonnaise
1 tablespoon white vinegar
1 teaspoon Dijon mustard
1/2 teaspoon sugar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 pounds cooked shrimp, peeled, tails removed and cut in half crosswise
2 celery stalks, finely diced
2 scallions, thinly sliced
4 top-split hot dog rolls, outsides buttered and toasted
Lemon wedges, for garnish

Steps:

  • Mix the lemon juice, mayonnaise, vinegar, mustard, sugar, salt and pepper in a large bowl. Stir in shrimp, celery and scallions. Evenly divide the shrimp mixture among the hot dog rolls and serve with lemon wedges.

1 lemon
3 pounds uncooked medium shrimp, peeled and deveined
1 tablespoon olive oil
1 small onion, chopped
2 ribs celery, chopped
2 cloves garlic, crushed and chopped
salt and ground black pepper to taste
1 sprig fresh rosemary, chopped, or to taste
¼ teaspoon dried basil
¼ teaspoon dried oregano
¼ teaspoon ground coriander
1 bay leaf
¾ cup white wine, or to taste
1 teaspoon Worcestershire sauce, or to taste

Steps:

  • Squeeze lemon over shrimp and set aside.
  • Heat olive oil over medium heat. Add onion, celery, and garlic. Season with salt and pepper and cook until tender, about 5 minutes. Stir in rosemary, basil, oregano, coriander, and bay leaf. Add white wine and Worcestershire sauce; cook until sauce is slightly reduced and flavors come together, 8 to 10 minutes.
  • Add shrimp to the sauce and cook until pink, 5 to 7 minutes more.

1 pound salted butter
3 ounces chopped fresh garlic
1 ounce dried basil
1 ounce dried oregano
Six 16/20 Gulf shrimp, lightly seasoned with salt and pepper
Splash white wine
1/2 fresh lemon
1 New England style split-top hot dog roll, lightly buttered and toasted on a flat top or in a frying pan

Steps:

  • For the garlic butter: Melt butter in a saucepan until clear. Mix in garlic, basil and oregano. Bring to about 200 degrees F so the ingredients are evenly mixed. Remove from heat. Let cool, mixing occasionally, to ensure ingredients remain suspended evenly throughout the butter.
  • For the shrimp roll: Heat a saute pan with 1 ounce garlic butter (save the remaining garlic butter for another use).
  • Saute shrimp until solid in texture, then add white wine to deglaze the pan. Drizzle lemon juice over dish and place shrimp in toasted roll.

1 pound (21 to 25 count) shrimp, unpeeled
2 tablespoons lemon juice
1/2 cup fish stock
2 teaspoons chopped fresh basil
2 tablespoons spicy seafood seasoning

Steps:

  • In a large saute pan over medium heat, heat the olive oil. Add the garlic and saute until it begins to soften. Add the shrimp and saute for 1 minute. Then add the remaining ingredients and simmer until the shrimp is cooked through and the flavors have combined, about 4 to 6 more minutes. Serve immediately.

1/2 cup sour cream
1/2 lime, juice of
2 tablespoons chopped cilantro
1/2 teaspoon salt
2 drops hot pepper sauce, to taste
1 tablespoon unsalted butter
1 tablespoon olive oil
2 cloves garlic, minced
1/4 teaspoon crushed red pepper flakes
1/2 lb uncooked large shrimp, peeled,deveined and tails removed
4 soft sandwich buns or 4 hot dog buns
1 avocado, halved,pitted,sliced
1/2 cup chopped cabbage

Steps:

  • Mix together the sour cream, lime juice, cilantro, 1/4 teaspoon of the salt and the hot pepper sauce; set aside.
  • Heat butter and olive oil in a medium skillet over medium heat until butter is melted; remove 1 tablespoon of the mixture from the skillet to a bowl and set aside.
  • Add garlic and pepper flakes to skillet; cook until garlic is soft, about 1 minute.
  • Increase heat to medium-high; add shrimp and remaining 1/4 teaspoon salt; cook, stirring constantly, until just pink, about 3 minutes.
  • Meanwhile, heat broiler to high; brush rolls with reserved oil and butter mixture; place open rolls under broiler and broil until just beginning to brown, about 1 minute.
  • Spread 1 teaspoon of the sour cream mixture inside each roll; layer with 1 tablespoon chopped cabbage, shrimp and avocado slices; top each with 1 teaspoon more sour cream mixture.
  • Place remaining sauce in a bowl to pass at the table.
