FETTUCCINE WITH CHICKEN AND OLIVES



Fettuccine with Chicken and Olives image

1 pound skinless, boneless chicken thighs (3 to 4)
Freshly ground pepper
1/4 cup extra-virgin olive oil, plus more for drizzling
1 small onion, chopped
3 cloves garlic, minced
1/2 cup dry white wine
1/3 cup pitted kalamata or Gaeta olives, roughly chopped, plus 1 tablespoon brine
1 sprig rosemary
1 15-ounce can cherry tomatoes
12 ounces fettuccine
1/4 cup chopped fresh parsley
Grated parmesan cheese, for topping

Steps:

  • Bring a large pot of salted water to a boil. Season the chicken with salt and pepper. Heat the olive oil in another large pot over medium-high heat. Add the chicken and cook, turning once, until browned, about 7 minutes. Move the chicken to one side of the pot.
  • Add the onion to the other side of the pot and cook, stirring, until just softened, about 2 minutes. Stir in the garlic; cook 30 seconds. Add the wine, olive brine and rosemary and cook, stirring everything together and scraping up any browned bits, until the liquid is mostly reduced, about 1 minute. Add the tomatoes, 1/2 cup water and a pinch of salt. Bring to a boil, reduce to a simmer and cook until the chicken is cooked through and the sauce is thickened, 8 to 10 minutes. Discard the rosemary; shred the chicken with 2 forks.
  • Meanwhile, add the pasta to the boiling water and cook as the label directs for al dente. Reserve 1 cup cooking water, then drain.
  • Add the pasta, olives and 1/2 cup cooking water to the shredded chicken mixture. Cook over medium heat, tossing, until the pasta is well coated, 1 to 2 minutes, adding more cooking water as needed to loosen. Season with salt and pepper and stir in the parsley. Divide among bowls. Drizzle with more olive oil and top with parmesan.

1/2 cup butter
2 lbs boneless skinless chicken breasts
1 cup half-and-half or 1 cup cream
1/3 cup freshly grated parmesan cheese
1/4 cup green onion, chopped
2 cloves garlic, minced
fresh parsley, chopped
fresh cracked black pepper
additional freshly grated parmesan cheese
to taste fettuccine, cooked

Steps:

  • Melt butter in skillet and saute chicken which has been cut into 2 inch chunks.
  • When chicken begins to take on color, add garlic and green onions.
  • Saute a few minutes being careful not to burn garlic Add remaining ingredients except parsley, cover and simmer over low heat until mixture thickens (you may need to add a little more parmesan cheese if you like it thicker) and chicken is tender and cooked all the way through.
  • Serve over cooked and drained fettuccine.
  • Sprinkle with fresh parsley, lots of cracked black pepper and additional parmesan cheese if desired.

3 ounces fettuccine pasta, uncooked weight
2 tablespoons mrs dash garlic and herb seasoning, divided (to taste)
1 egg, lightly beaten
2 tablespoons extra virgin olive oil, divided
2 boneless skinless chicken breast halves, pounded thin
2 teaspoons Dijon mustard
2 tablespoons fresh lemon juice
fresh herb, to garnish (such as parsley or basil)

Steps:

  • Cook pasta according to package directions, drain well (try to time this to finish cooking just before the chicken is ready to get sliced).
  • Toss pasta with 1 1/2 tsp of the oil and 1 Tbsp of the Mrs Dash blend (if you like, you may add a touch more oil).
  • Meanwhile, set remaining Mrs Dash blend into a small dish and the beaten egg into another.
  • Dip chicken breasts first into the egg wash, then sprinkle evenly on both sides with the Mrs Dash to coat.
  • Heat remaining 1 1/2 teaspoons oil in a large skillet over medium-high heat.
  • Brown chicken for a few minutes on each side to brown each side, then reduce heat to medium and cover with lid; cook until chicken is fully cooked, about 5-10 minutes more (time will vary with the size of your chicken pieces).
  • Remove chicken to a covered plate to keep warm.
  • Add mustard and lemon juice to the pan juices and cook about a minute or so to make a thin sauce.
  • Slice each chicken breast thinly and place atop the seasoned pasta, then pour the sauce over all.
  • Garnish, if desired with some fresh herbs.

8 ounces fettuccine, cooked (I use Brown Rice fettucini)
4 cooked chicken breasts, cubed
1 (10 ounce) can cream of chicken soup (I use a Gluten Free equivalent)
1 cup sour cream
1/4 cup onion, chopped
1 tablespoon dried parsley
3 tablespoons white wine
1 teaspoon salt
1 1/2 cups cheddar cheese, grated and divided

Steps:

  • Preheat oven to 350°F.
  • Combine soup, sour cream, onion, parsley, wine, salt and 1/2 of the cheese in a bowl.
  • Layer cooked noodles on the bottom of a greased casserole dish.
  • Layer cooked chicken on top of noodles.
  • Layer sauce on top of chicken.
  • Top with remaining cheese.
  • Bake, covered for 45 mins, and uncovered an additional 10 to brown the top.
