Trail mix adds a nutty texture to these delicious caramel apples.

6 Granny Smith apples
6 wooden sticks
1 (14 ounce) package individually wrapped caramels, unwrapped
2 tablespoons water
½ teaspoon vanilla extract
3 cups trail mix
1 cup semisweet chocolate chips

Steps:

  • Insert wooden sticks 3/4 of the way into the stem end of each apple. Place apples on a cookie sheet covered with lightly greased aluminum foil.
  • Combine caramels and water in a saucepan over low heat. Cook, stirring often, until caramel melts and is smooth. Stir in the vanilla. Dip each apple into the caramel and gently run apples around insides of saucepan to scrape off some of the caramel. Scrape excess caramel from the apple bottoms using the side of the saucepan.
  • Spread the trail mix out on a dinner plate. Roll the apples in the mixture to coat. Place on the aluminum foil and chill.
  • Put the chocolate chips in a microwave-safe bowl. Cook in the microwave for 30 second intervals, stirring between each, until melted and smooth. Drizzle over the apples and return them to the refrigerator until ready to serve.

10 medium Granny Smith apples
Nonstick cooking spray, for spraying the baking sheet
2 cups chocolate sandwich cookies, such as Oreos, cream filling removed
2 cups sugar
1 cup buttermilk (see Cook's Note)
1/2 cup (1 stick) salted butter
1 teaspoon baking soda
1 teaspoon vanilla extract
Heavy cream, to thin the caramel, if necessary
Sea salt, for sprinkling
One 12-ounce bag white chocolate chips

Steps:

  • Rinse and dry the apples. Spray a baking sheet with cooking spray. Push one stick into the top of each apple, then place on the baking sheet with the stick standing straight up.
  • Place the cookies in a large resealable plastic bag and roll with a rolling pin to crush. Set aside.
  • In a large saucepan over low heat, combine the sugar, buttermilk, butter, baking soda, and vanilla and bring just to a boil, stirring constantly. Attach a candy thermometer to the pan, and continue to boil and stir until the mixture reaches 238 degrees F, 15 to 17 minutes. Remove the pan from the heat.
  • Dip each apple, one at a time, immediately into the caramel, leaving a 1/4-inch ring of green by the stick, and return the apple to the baking sheet. If the caramel starts to solidify while you are dipping apples, stir in heavy cream, a few drops at a time, until the caramel reaches a spreadable consistency.
  • After all the apples have been dipped, lightly sprinkle them with sea salt. Allow the caramel to set, about 5 minutes.
  • Meanwhile, in a microwave-safe bowl, microwave the white chocolate chips on high in 30-second intervals, stirring until melted. Dip each apple into the melted white chocolate, leaving a 1/4-inch ring of caramel exposed. Immediately dip the white chocolate-covered caramel apple in a layer of crushed cookie topping, leaving 1/4 inch of the white chocolate exposed.

6 tablespoons unsalted butter
1/4 teaspoon kosher salt
1/2 cup heavy cream, at room temperature
1 teaspoon pure vanilla extract
Cooking spray
4 apples (the caramel will stick best to organic/unsprayed apples)

Steps:

  • Combine the sugar, butter and salt in a medium saucepan and cook over medium heat, stirring occasionally, until dark amber, about 20 minutes.
  • Remove the pan from the heat and carefully pour in the cream and vanilla (it will bubble up). Set the saucepan over low heat and continue cooking, whisking, until smooth and the bubbling subsides, 2 to 4 more minutes. Remove from the heat and pour into a large glass measuring cup or bowl so the caramel is about 2 inches deep. Set aside, stirring occasionally, until cooled slightly and thick enough to coat a spoon, 12 to 15 minutes.
  • Line a rimmed baking sheet with parchment paper and coat with cooking spray. Insert a wooden stick into the center of each apple, about one-third of the way down. Holding an apple by the stick, dip it into the caramel and roll around to cover. Gently twirl the apple over the measuring cup, letting the excess caramel drip off, then turn it upside down and hold about 30 seconds to help set the caramel; place on the prepared baking sheet. Repeat with the remaining apples. Let set 15 minutes.

6 small apples, any variety, stems removed
1 cup heavy cream
1 cup granulated sugar
1/4 cup dark corn syrup
2 tablespoons unsalted butter

Steps:

  • Insert sticks into tops of apples. Prepare an ice-water bath.
  • Bring cream, sugar, corn syrup, and butter to a boil in a saucepan over medium-high heat. Clip a candy thermometer to pan, and continue to cook until mixture reaches 245 degrees, 10 to 12 minutes.
  • Place pan in ice-water bath to stop the cooking. Dip bottom of each apple in caramel. Using a spoon, coat apple halfway to three-quarters of the way up sides. Transfer to a parchment-lined baking sheet, and refrigerate until set, about 15 minutes (or overnight).

6 medium Red Delicious apples
6 wooden pop sticks
2 cups sugar
1/4 cup light corn syrup
1/4 cup water
1/2 cup butter, cubed
1 cup heavy whipping cream
1/2 cup shelled pistachios, chopped, divided
3 ounces white baking chocolate, chopped
3 ounces semisweet chocolate, chopped

Steps:

  • Line a baking sheet with waxed paper; grease the paper. Wash and thoroughly dry apples. Insert a wooden pop stick into each; place on prepared pan. Refrigerate 15 minutes., In a large heavy saucepan, combine sugar, corn syrup and water; bring to a boil over medium heat, without stirring, until mixture turns amber. Remove from heat; stir in butter until melted. Gradually add cream, stirring constantly. Return to heat; cook and stir until a candy thermometer reads 245°-250° (firm-ball stage). Remove from heat., Place 1/4 cup pistachios in a shallow dish. Dip apples into caramel mixture until completely coated; allow excess to drip off. Then dip the bottom of each apple in pistachios. Return to baking sheet; refrigerate 10-15 minutes., In a microwave, melt white chocolate; stir until smooth. Transfer to a small heavy-duty resealable plastic bag; cut a small hole in a corner of bag. Drizzle over apples. Repeat with semisweet chocolate. If desired, sprinkle tops with remaining pistachios. Refrigerate until set.

An easy recipe for making homemade caramel apples, this can be doubled or tripled easily to make more. Once dipped, the apples can be rolled in chopped nuts, candy, or drizzled with chocolate for a little extra flair. Be sure to start with room temperature apples as cold apples will cause the caramel mixture to harden too quickly making it difficult to work with.

4 medium apples (about 1 1/2 pounds total), such as Granny Smith, McIntosh or Honeycrisp, preferably organic (see note), washed and dried, at room temperature
4 (8-inch) sturdy treat sticks
1 cup/200 grams granulated sugar
1/3 cup/80 milliliters light corn syrup
1/2 teaspoon kosher salt
3/4 cup/180 milliliters heavy cream
1 teaspoon vanilla extract
1 tablespoon unsalted butter

Steps:

  • Line a baking sheet with a silicone baking mat or a piece of lightly greased parchment paper. Place the apples onto the prepared baking sheet, and press a treat stick firmly into the stem end, into the center of each apple.
  • In a medium pot, combine the sugar, corn syrup and 1/3 cup water. Stir the mixture with a silicone spatula or wooden spoon over medium heat until the mixture begins to bubble at the edges. Once it begins to bubble, stop stirring.
  • Cook the mixture (without stirring) until it begins to turn a medium amber color, 10 to 12 minutes. When the desired caramel color is reached, stir in the salt, cream, vanilla and butter - the mixture will bubble up vigorously - stir until it's combined and smooth.
  • Continue to cook the caramel over medium heat, stirring constantly, until the mixture reads 245 degrees on an instant-read thermometer, another 8 to 10 minutes. Leave the syrup mixture in the pot, and allow to cool to 200 degrees. (If the mixture cools too much, it can be reheated until fluid.)
  • Working quickly, dip 3/4 of an apple into the caramel, tilting the pot as needed to coat. Hold the apple over the caramel, letting the excess drip off, then transfer to the baking sheet. Repeat with remaining apples, reheating the caramel as necessary. Cool completely before serving.
