SERVIETTE/NAPKIN FOLDING, THE FLEUR DE LIS
Between the teachings of my grandmother, an aunt, my mother and several restaurants I learned a lot about serviette/napkin folding. This one works well with cloth napkins, or larger paper ones. I have included step-by-step photographs to illustrate/supplement the written directions. Another one from the Oasis Restaurant in Omarama, New Zealand. Looks good in a larger wine glass or on a plate. Added: SusieQusie is correct in her review, In step 6, you can tuck either right side into left OR left side into right, when you tuck in at the back, yes, it's one tuck and not two. Sorry 'bout the confusion that may have caused.

- Lay your serviette square out flat before you in a diamond shape.
- Fold the South point of the diamond up to meet the North point of the diamond.
- Fold the East point up to meet the North point of the diamond and repeat with the West point.You will now have a smaller diamond shape with a vertical gap running down the center.
- Carefully turn the serviette over.The point that has the open edges should be in the South of the diamond position.
- Fold these South points up to meet the North point, you will now have a triangle shape with a horizontal gap in the center.
- Turn the napkin over again and bring the East and West points into the center, tucking them inside each other.
- Turn the serviette over again and gently fold down the two outside flaps to make the petals of the Fleur-de-lis.

My interest in serviette folding was born on a wet day at my Grandmother's house, I was a pre teen and helping her with the ironing and watched while she ironed serviettes into wonderful shapes and neatly stacked them for use. I asked her to show me how and she did. Once you know several folds and people see them, they often have at least one other that you haven't seen before, you gain knowledge of the new one and on it goes. This one is a variation of the basic Fleur de Lis serviette that has a the addition of a decorative cuff at the base. As usual one quick practice and you will be amazed at how easy it really is!

- Lay your serviette out flat before you in a diamond shape.
- Bring the corner at the South point up to meet the North point. you should have before you a triangle shape with the crease at the bottom.
- Fold the East point of the triangle up to meet the North point, repeat with the West point. You will now have a diamond shape with a vertical gap running down the centre.
- Take the South corner and bring it towards the North point but stop 3/4 of the way up, crease it well at the bottom now then take the same point and bring it back over itself to the bottom center of the triangle.
- Carefully turn the serviette over and tuck the East/West points into each other.
- Turn serviette over to the front side and gently fold down the two side flaps, creating a Fleur de Lis type of serviette that has a the addition of a decorative cuff at the base.

This one seems to be a combination somewhere between recipe#241804 and recipe#241852, it's easy enough and it stands easily. I like it a lot.

- Lay your serviette out flat before you in a diamond shape.
- Bring the corner at the North point down to meet the South point. you should have before you a triangle shape with the crease at the top.
- Fold the East point of the triangle down to meet the South point, repeat with the West point. You will now have a diamond shape with a vertical gap running down the centre.
- There will be two loose points at the South position, take the right South point and bring it up to the point at North. Repeat with the left point at South. You will now have a diamond shape that consists of two smaller triangles at the top and one larger one at the bottom.
- Take the loose right point at North and turn it back on itself 45 degrees so that it looks like a little wing(these will be your Fleur de Lis flaps later) Repeat with the loose left point at North.
- Bring both the remaining points at south up the centre of the serviette, somewhere between 1/2 and 3/4 so that there is a 1 inch (2.5 cm) gap between the bottom fold that you are making and the thicker base of the rest of the serviette. The actual distance will depend on how big your serviettes are. Crease the lowest crease well.
- Now fold this bottom crease up and over the bottom edge of the thicker base of the serviette to form a cuff.
- Carefully turn the serviette over and tuck the East/West points of the triangle into each other.
- Turn back to to the front side and halding the join firmly, gently ease it so that it stands up, bring the two little "wings" down so that they are like Fleur de Lis.
- You will end up with a standing serviette that has a cuff at the base, a decorative centre and Fleur de Lis flaps at the sides.

Now that I have already posted all the napkin folds I know, I decided to look on the net for some new ones to learn. This one is very similar to Fleur de Lis in a Glass Versions 1 and 2, but the method of making it is different and it results in a tall central point at the top and side points with much less definition. Works well with cloth napkins, or larger paper ones. I have included step-by-step photographs to illustrate/supplement the written directions. For neater presentation use ironed napkins for this fold.

Steps:
- Take your square napkin, lay it totally flat before you, then fold it in half horizontally.
- Fold again, this time vertically so that you have before you a square a quarter the size of your original square.
- Only one of the 4 corners will have 4 open or loose edges. Rotate the square before you so that it looks like a diamond with the four open edges pointing to the top.
- We will call the points on your diamond shape East, West, South and the open edged bit, North.
- Starting at the East point, accordion fold the serviette until you are at the West point. Keep a firm hold on the East/West points once the accordion fold is complete, and you will see that you have a bigger fan at the top (the top has 4 open points of the serviette) and a smaller fan at the bottom.
- Take the bottom point of the bottom fan and curl it up upon itself like a snail shell until you are almost at the East/West points in your other fingers. The snail shell curl will anchor the fan in the glass and help it to keep its shape.
- Place the fan into a wine or water glass and you will have a small standing fan in a semi Fleur de Lis style but with smaller side points.
- Arrange the pleats to that they are even and neat.

- Now still holding the south point, bring it back down so that it rests at the centre of the base of the triangle. This is your decorative cuff at the base of the serviette.
- Take right hand loose point in the North position and fold it down so that the point is tucked neatly behind the decorative cuff, repeat with the remaining loose North point.
- Turn the serviette over and gently slip the East and West points one into the other.
- Turn the serviette back to the front side and you will have a standing serviette with two decrative cuffs and a triangle point above. These can be left as is if you wish, or you can take the topmost of the two North points and bring it down and tuck it behind the cuff in the middle.
