GOLDEN SESAME ROLL-UPS

Steps:
- Mix the sugar, sesame seeds and cinnamon in a small bowl. Lay out a 12-by-16-inch piece of parchment paper. Sprinkle 1/2 cup of the sugar mixture evenly on the paper. Lay the puff pastry on top and sprinkle with another 1/2 cup of the sugar mixture. Roll out the dough into a 12-inch square, pressing the sugar into the dough with the rolling pin. Roll up the dough tightly into a log. Wrap in the parchment paper and freeze until firm, about 30 minutes.
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Slice the log into 1/2-inch-thick rounds and place 1 inch apart on the prepared baking sheets. (If the spirals unravel, pinch them back together.) Freeze until firm, about 20 minutes.
- Bake until the pastry is puffed and light brown, 10 to 15 minutes. Remove from the oven and sprinkle with the remaining sugar mixture. Return to the oven and bake until the cookies are glazed and golden, 10 to 15 more minutes. Use a spatula to transfer the warm cookies to another sheet of parchment paper, flipping them over before the sugar hardens. Let cool completely. Store in an airtight container up to 1 week.

- Add the yeast, sugar and ¼ cup of the milk to a small bowl and mix. Let stand for 10 minutes until foamy.
- To a large bowl add the flour, wet ingredients, yeast and milk. Mix until well until combined. Turn out onto a floured surface and knead for 5 minutes, dusting with flour as needed until elastic and smooth and no longer sticky.
- Coat a bowl lightly with oil and place the dough in the bowl. Cover with plastic wrap and leave in a warm place for 1 1/4 hours until doubled in size. I like to turn the oven on for a minute or so, turn it off then put the dough in the oven to proof.

- Thaw dough according to package directions. Grease a 9x9x2-inch square baking pan; set aside. In a shallow dish or small bowl combine sesame seeds, cornmeal, Parmesan cheese, and lemon-pepper seasoning. Place butter in a second dish. Cut the bread dough into 16 equal pieces. Shape each piece into a ball by pulling and pinching dough underneath. Roll dough pieces in butter, then in the seasoning mixture to lightly coat. Arrange dough pieces, smooth sides up, in prepared pan.
- Cover pan with waxed paper and let rise in a warm place until nearly double in size (45 to 60 minutes). After 35 minutes, preheat oven to 375°F.
- Bake, uncovered, about 25 minutes or until golden brown. Remove rolls from pan to a wire rack. Cool slightly before serving.
