1 large onion, sliced
6 boneless skinless chicken breast halves (6 ounces each)
1/3 cup orange juice
2 tablespoons soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1 tablespoon grated orange zest
2 garlic cloves, minced
1/2 cup chopped dried apricots
1/2 cup dried cranberries
Hot cooked rice

Steps:

  • Place onion and chicken in a 5-qt. slow cooker. Combine the orange juice, soy sauce, Worcestershire sauce, mustard, orange zest and garlic; pour over chicken. Sprinkle with apricots and cranberries., Cover and cook on low for 4-5 hours or until a thermometer reads 170°. Serve with rice. Freeze option: Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little broth or water if necessary.

A dark, rich fruit cake for wine and fruit lovers! This is a recipe I use at Christmas and for Birthdays. I prefer to use Jamaican Red Label Wine and White Rum. But you may use your Favorites....ENJOY!

2 cups butter
2 cups white sugar
9 eggs
¼ cup white rum
1 tablespoon lime juice
1 teaspoon vanilla extract
1 tablespoon almond extract
1 grated zest of one lime
2 pounds chopped dried mixed fruit
2 cups red wine
1 cup dark molasses
2 ½ cups all-purpose flour
3 teaspoons baking powder
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon ground cinnamon
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 9 inch round cake pans.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in eggs, then add rum, lime juice, vanilla, almond extract, and lime zest. Stir in mixed fruit, wine, and molasses. Sift together flour, baking powder, nutmeg, allspice, cinnamon, and salt. Fold into batter, being careful not to over-mix. Pour into prepared pans.
  • Bake in preheated oven for 80 to 90 minutes, or until a knife inserted into the center comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

  • In an oblong dish put the rice and and the amount of water called for on the box and mix. Place chicken on top of the rice. Salt and pepper the chicken and top each piece with a pat of butter. Bake at 350 for 45 to 1 hr. Every 15 mins. check chicken and mix the rice with the chicken.

This is my mother-in-law's recipe, and one of my husband's favorite meals! It is a warm and delicious comfort food casserole. Note: Using the blue package of Herb Seasoned Pepperidge Farm stuffing is a MUST! It sets up the whole flavor of the meal. If you are trying to clear out the cupboard or are unable to get the blue package, then you'll need to use two of the standard sized boxes (8 oz.) of stuffing, preferably herb seasoned.

1 (16 ounce) package Pepperidge Farm stuffing (herb seasoned-blue package, see note above)
1/2-1 cup butter
2 (10 3/4 ounce) cans cream soup (celery, mushroom, chicken)
1 (5 ounce) can evaporated milk
1/2 small onion, chopped
4 cups cooked chicken, chopped (rotisserie chicken works great!)
1 (15 ounce) can sweet peas or 2 cups frozen peas

Steps:

  • Preheat oven to 350 degrees F.
  • In large pot, melt butter over medium-high heat.
  • Add dry stuffing, stir to coat evenly with butter.
  • Layer 1/2 stuffing on bottom of an ungreased 9 x 13 baking dish.
  • In large bowl, combine evaporated milk, cream soups, and onion.
  • Gently fold in peas and chicken.
  • Pour chicken/soup mixture over stuffing in baking dish.
  • Top with remaining stuffing.
  • Bake for 45 minutes, or until bubbling in the middle.
  • Serve and enjoy!

6 breast half, bone and skin removed (blank)s boneless, skinless chicken breast halves
⅓ cup orange juice
2 tablespoons soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1 tablespoon grated orange peel
2 garlic clove (blank)s garlic cloves, minced
½ cup chopped dried apricots
½ cup dried cranberries
2 cups Hot cooked rice

Steps:

  • Place onion and chicken in a 5-qt. slow cooker. Combine the orange juice, soy sauce, Worcestershire sauce, mustard, orange peel and garlic; pour over chicken. Sprinkle with apricots and cranberries. Cover and cook on low for 7-8 hours or until chicken juices run clear. Serve over rice.

3/4 cup flour
1/2 teaspoon ground nutmeg
salt, to taste
garlic salt, to taste
celery salt, to taste
2 1/2-3 lbs chicken breasts (cut into chunks)
1/2 cup margarine or 1/2 cup butter
1 (20 ounce) can pineapple tidbits
1 tablespoon sugar
1 1/2 tablespoons cornstarch
1/3 cup teriyaki sauce

Steps:

  • In large baggie, mix ¾ C flour and seasonings. Add chicken pieces a few at a time until all coated.
  • Brown chicken in margarine.
  • Place in baking dish, reserving drippings in pan.
  • Drain fruit (keep 1 C syrup)and arrange fruit over chicken.
  • Stir corn starch and sugar in drippings. Add 1 C syrup from pineapple and teriyaki sauce.
  • Cook and stir until thickened and bubbly. Spoon over meat.
  • Cover and microwave on high 5 minutes. Serve over rice.
