SHEET PAN ALOO GOBI

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix oil, curry powder, and salt together in a small bowl.
- Combine potatoes and carrots in a large bowl; pour 2/3 of the curry sauce on top. Mix to combine. Spread on a large, rimmed baking sheet.
- Bake in the preheated oven for 30 minutes. Mix cauliflower with remaining curry sauce. Add to the baking sheet and continue baking for 20 minutes. Add peas; bake for 10 minutes more. Garnish with cilantro.

SHEET PAN ALOO GOBI
Here is a simple recipe for the popular aloo gobi from the Indian cuisine made even simpler. Aloo in Hindi means Potato and Gobi is cauliflower. This is a dry sabji made with cauliflower & potatoes and some simple spices. Once you try this sheet pan aloo gobi, you wont go back to the stove top method.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C)
- Line a baking tray with Aluminum foil and drizzle oil.
- Cut cauliflower into medium sized florets
- Wash, peel and dice potato into medium sized pieces.
- Peel, wash and dice onion into medium sized pieces. Seperate the layers.
- Mince ginger and garlic.
- Get all the spices.
- To a large bowl, add cauliflower florets, diced potatoes and onions.
- Add cumin seeds, garam masala, turmeric powder, salt and oil. Mix well to coat all the pieces well with the spices. [Note: Start with about ¾ teaspoon salt. Add more if required]
- Spread the vegetables in a single layer on the baking tray.
- Bake at 425 degrees F (220 degrees C) for 30 minutes ort until the vegetables are cooked well.
- Remove from heat. Drizzle juice of half of a lime/lemon or to taste.
- Serve hot garnished with finely chopped cilantro.

- 2. In a large bowl, combine potatoes, cauliflower, onion and ginger. Add oil and toss to coat. Add cumin, turmeric, asafetida, chile powder and salt, and toss once again, so that everything is evenly coated. Spread the vegetables out onto the baking sheet. Make sure not to overcrowd! If your pan is getting crowded, use a second sheet.
- 3. Roast the vegetables at 400°F for 30 minutes, tossing halfway through. Then increase the heat of the oven to 500°F, switching to broil, if possible, and roast for 10-15 more minutes, until the vegetables are browned and charred to your liking.
