2 cups macaroni
3 tablespoons butter
3 tablespoons flour
1/4 teaspoon dry mustard
2 cups cheddar cheese, grated
3/4 teaspoon salt
1 dash pepper
2 cups milk, heated
1 tablespoon onion, chopped
1/2 cup breadcrumbs

Steps:

  • Boil macaroni to desired doneness, app. 7 minute Drain when done.
  • While macaroni is cooking, melt butter over low heat, stir in flour.
  • Raise heat to allow mixture to bubble (but not brown), stirring constantly.
  • Add milk, mustard and onion.
  • Stir over medium heat until mixture thickens.
  • Add cheese-stir until blended.
  • Add drained macaroni.
  • Turn into casserole dish and sprinkle with breadcrumbs.
  • Bake in a 400 degree oven for app. 30 minutes.
  • Let cool slightly before serving.

12 ounces elbow macaroni - (abt 2 1/2 cups)
3 tablespoons butter or margarine
1 1/2 cups milk divided
2 large eggs lightly beaten
8 ounces grated cheddar cheese - (abt 2 cups) divided
1 teaspoon salt
1 teaspoon freshly-ground black pepper
1 teaspoon sugar
1/2 teaspoon yellow food coloring (optional)

Steps:

  • Preheat oven to 375 degrees. Cook macaroni in a large pot of salted boiling water until tender but not mushy, about 8 minutes. Drain well and pour into a large mixing bowl. Stir in butter, 1 1/4 cups milk, eggs, 1 3/4 cups grated cheese, salt, pepper, sugar and food coloring (if using). Mix well and transfer to a 1 1/2-quart oval baking dish. Pour the remaining 1/4 cup milk over top and sprinkle with remaining 1/4 cup cheese. Bake until top crust is golden brown and casserole is bubbling, about 25 minutes. Serve hot. This recipe yields 8 servings.

This is my mom's recipe for easy baked macaroni and cheese with a bread crumb topping. There's dry mustard in the mac and cheese for zip. It is great! You can make it more or less cheesy, depending on your taste.

¾ cup dry bread crumbs
2 tablespoons melted butter
8 ounces macaroni
2 tablespoons butter
1 small onion, minced
1 tablespoon all-purpose flour
salt and pepper to taste
¼ teaspoon dry mustard
1 ½ cups milk
2 cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
  • Place bread crumbs into a small bowl and mix well with melted butter; set aside.
  • Bring a large pot of lightly salted water to a boil. Add macaroni and cook until al dente, 8 to 10 minutes; drain, then place into the prepared casserole dish.
  • While pasta is cooking, melt 2 tablespoons butter in a saucepan over medium heat. Stir in minced onion and cook until onion softens and turns translucent, about 5 minutes.
  • Stir in flour, salt, pepper, and dry mustard until incorporated, then pour in milk and bring to a simmer. Cook, stirring constantly, until milk has thickened, about 10 minutes.
  • Remove from heat and stir in Cheddar cheese until melted. Pour cheese sauce over macaroni, then sprinkle evenly with buttered bread crumbs.
  • Bake in the preheated oven until top is golden and bubbly, about 20 minutes.

1 ½ cups uncooked elbow macaroni
¼ cup butter
2 tablespoons all-purpose flour
1 teaspoon mustard powder
1 teaspoon ground black pepper
2 cups milk
8 ounces American cheese, cubed
8 ounces processed cheese food (eg. Velveeta), cubed
¼ cup seasoned dry bread crumbs

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Butter a 1 1/2 quart casserole dish. Bring a saucepan of lightly salted water to a boil. Add macaroni, and cook until not quite done, about 6 minutes. Drain.
  • In a separate saucepan, melt the butter over medium heat. Blend in the flour, mustard powder, and pepper until smooth. Slowly stir in the milk, beating out any lumps. Add the American and processed cheeses, and stir constantly until the sauce is thick and smooth.
  • Drain noodles, and stir them into the cheese sauce. Transfer the mixture to the prepared casserole dish. Sprinkle bread crumbs over the top.
  • Cover the dish, and bake for 20 to 25 minutes, or until sauce is thick and bubbly.
