SHOO FLY CAKE
Shoo Fly Cake gives you the delicious flavors of the Pennsylvania Dutch favorite Shoo Fly pie, but in cake form.

Steps:
- Preheat oven to 350° F.
- Grease and flour a 13" x 9" inch pan.
- For the crumbs, combine the flour, sugar and butter. Mix with hands to form crumbs. Measure out 1-1/4 cups for topping and set aside.
- For the cake, add the molasses and 1 cup of hot water to the remaining crumbs. Beat well. Add the remaining 1 cup of water and beat again.
- Dissolve the baking soda in the 1 tablespoon of warm water. Add to batter with a dash of salt. Mix well.
- Pour into prepared cake pan. Sprinkle the top with reserved crumbs.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Cool completely on a rack before cutting and serving.

QUAKERTOWN MOLASSES CRUMB PIE
Quakertown Molasses Crumb Pie is an old-fashioned recipe that is similar to shoo-fly pie. Rich, gooey molasses filling baked with a crumb topping.

- In a saucepan, combine the ingredients for the molasses layer. Cook and stir over medium heat until the mixture has thickened. This will take about 5-10 minutes, depending on your stove. Allow it to come to a low boil, but not a full boil. Allow the mixture to cool while you prepare the topping.
- For the topping, combine the flour, brown sugar, melted butter and baking soda. Mix well.
- Pour the molasses mixture into the unbaked pie shell.
- Sprinkle the crumbs on top of the molasses mixture.
- Bake at 375 for 40-45 minutes until the top is golden brown and the center starts to puff up.
- Allow the pie to cool before slicing. This is considered a "wet-bottom" pie, so when you slice it, the bottom may be slightly "wet" and that's OK.

SHOO FLY CAKE
A variation on the old Pennsylvania Dutch favorite, Shoo Fly Pie. Not as sweet or gooey as Shoo Fly Pie, this cake is much better the day after you bake it. Works really well as cupcakes. I made mini cupcakes for Christmas, always a hit.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9 x 13 inch pan.
- Dissolve soda in boiling water. Set aside.
- Mix together flour, brown sugar, salt, and vegetable oil to form a crumb-like mixture. Reserve 1 cup of the crumbs. Mix the remaining crumbs with the water and soda mixture. Pour batter into the prepared pan. Sprinkle the reserved crumbs on top.
- Bake for 45 minutes, or until done.

- Preheat oven to 350°. In a large bowl, combine flour, brown sugar and salt. Cut in butter until crumbly. Set aside 1 cup for topping. Add baking soda to remaining crumb mixture. Stir in water and molasses. , Fill 24 paper-lined muffin cups two-thirds full. Sprinkle with reserved crumb mixture. Bake until a toothpick inserted in the center comes out clean, 20-25 minutes. Cool 10 minutes before removing from pans to wire racks to cool.

SHOO-FLY CAKE
Sweet, molasses-flavored very tender cake. Definitely serve with whipped cream.

- Preheat the oven to 350 degrees. Butter and lightly flour an 8x8" baking pan. Set aside.
- In an electric mixer bowl on low speed, combine the flour, brown sugar and butter and work into fine crumbs (2 to 3 minutes). Remove and reserve 1 cup of the crumbs for the topping.
- In a small bowl, combine the boiling water, molasses and baking soda; add to the mixing bowl and beat on medium speed for several minutes until the batter is smooth and thin. Pour the batter into the prepared baking pan. Sprinkle the reserved crumbs evenly over the top.
- Bake for about 40 minutes or until a toothpick comes out clean.
- Cool the cake completely in the pan on a rack. Serve with whipped cream.

MOLASSES CRUMB CAKE

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
- Mix flour, sugar, and butter together in a large bowl until large crumbs form. Separate 2 cups of the flour mixture into another bowl and set aside.
- Stir boiling water, molasses, and baking soda together in a third bowl until baking soda dissolves; pour into the flour mixture in the large bowl and stir until smooth. Pour the batter into the prepared baking dish. Sprinkle the reserved flour mixture over the top of the batter.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 50 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

Steps:
- Preheat oven to 350°.
- Mix brown sugar, flour, and butter with a pastry blender until you have fine crumbs.
- Reserve two cups of the crumbs for the top.
- Combine the boiling water and baking soda, then add the molasses and salt. Mix well.
- Mix the molasses mixture with the remaining crumbs. And pour this into a greased 9x13" baking dish.
- Starting at the edges, scatter the reserved 2 cups of crumbs over the top.
- Bake for about 45 - 50 minutes. Cool and enjoy.

PENNSYLVANIA SHOO FLY CAKE

- Pre-Heat oven to 350 degrees. Grease a 13x9 inch baking pan.
- Using a large bowl, stir the flour,brown sugar,and salt together. Add the butter. Work the butter into the mixture until you have crumbs using a pastry blender or rubbing the mixture together with your fingers. Take out 1 1/2 cups of crumbs, reserve for the topping.
- In a large bowl combine the boiling water,molasses and baking soda, mix well with a whisk. Make sure to use a large bowl, when the baking soda is added it foams up quiet a bit.
- Add 1/2 the liquid to the crumb mixture. Mix until moist and smooth. Add the remaining liquid and mix until just incorporated, the batter will be slightly runny.
- Pour the batter into your prepared pan, top with reserved crumbs. press crumbs into the batter lightly. Bake 45 minutes or until a tooth pick inserted in the center comes out clean.
OLD FASHIONED SHOOFLY CAKE
This cake smells sooo good. The ginger and spices really give it a nice kick. I'm not a fan of ShooFly pie.. but this cake is a keeper.

Steps:
- Preheat oven to 350 degrees F.
- Grease and flour a 9-by-13-inch baking pan.
- Mix the flour, spices, salt and sugars, then cut in the shortening and butter with a pastry blender or similar tool until the mixture is the consistency of fine crumbs.
- Set aside 1 cup of the mixture.
- In another bowl, pour the boiling water over the molasses and stir until dissolved.
- Stir in the baking soda.
- When the bubbling subsides, add to the dry ingredients and stir until smoothly blended.
- Pour the batter into the prepared pan.
- Give the pan a good thunk to settle contents, and drag a knife a few times through the center of the batter from the outside to the middle to help the cake rise evenly.
- Sprinkle with reserved cup of crumbs.
- Bake for about 50 minutes, or until a toothpick inserted into the cake comes out clean.
SHOOFLY CRUMB CAKE
If you like molasses, you will love this rich, moist cake. The recipe comes from a Pennsylvania Dutch restauranteur named Betty Groff and is published in an old book by her called Good Earth and Country Cooking.

- Reserve one cup of the crumbs for topping.

Very much the same as Pennsylvania Dutch shoo-fly pie, just without the crust and wet bottom. Very moist! This can also be made into cupcakes, bake for about 30 minutes. Yummy for breakfast!
