Cut down on carbs and amp up your veggie servings with this healthy cauliflower fried rice with shrimp, broccoli, bell peppers and garlic. Everything is cooked in one wok or skillet, but in stages, so each element keeps its integrity in the finished dish instead of being all mushed together--it may seem fussy, but it's worth it and actually quite easy. Resist the urge to stir the cauliflower rice right away; letting it cook undisturbed for a few minutes allows it to brown and develop sweet, nutty flavors. ¼ cup sesame oil, divided
2 large eggs, lightly beaten
3 cups riced cauliflower (see Tip)
1 pound large shrimp (31-35 count), peeled and deveined
3 cups broccoli florets
1 medium red bell pepper, thinly sliced (about 1 cup)
3 cloves garlic, sliced
3 tablespoons reduced-sodium soy sauce or tamari
2 tablespoons water
1 tablespoon rice vinegar
½ teaspoon ground pepper

Steps:

  • Heat 2 teaspoons oil in a large flat-bottomed carbon-steel wok or large, heavy skillet over high heat. Add eggs and cook, without stirring, until fully cooked on one side, about 30 seconds. Flip and cook until just cooked through, about 15 seconds. Transfer to a cutting board and cut into 1/2-inch pieces.
  • Add 2 teaspoons oil to the pan; heat over high heat. Add cauliflower in an even layer; cook, undisturbed, until lightly browned, 3 to 4 minutes. Transfer to a plate.
  • Add 2 teaspoons oil to the pan; heat over high heat. Add shrimp; cook, stirring often, until just opaque, about 3 minutes. Transfer to the plate with the cauliflower.
  • Add the remaining 2 tablespoons oil to the pan; heat over high heat. Add broccoli, bell pepper and garlic; cook, stirring occasionally, until lightly charred, 4 to 5 minutes. Stir in soy sauce (or tamari), water, vinegar and pepper. Bring to a boil; boil for 30 seconds. Remove from the heat. Stir in the reserved eggs, cauliflower and shrimp.

2 cups peeled, deveined shrimp
2 cups cooked cauliflower rice
1/2 red pepper, chopped
1/2 white onion, chopped
1/2 cup heavy whipping cream
1/2 cup chicken stock
2 tbs grass fed butter
2 tbs cream cheese
1 cup shredded cheddar cheese

Steps:

  • Cook the cauliflower rice. We use the bagged microwavable version and pat dry with a paper towel to remove excess moisture.
  • In a large saucepan, sauté the onions, peppers.
  • Add the shrimp. If using uncooked shrimp, add them and sautee until all pink. Do not overcook.
  • Add cream, chicken stock, butter and cream cheese, and stir over low heat until just mixed.
  • In a 13x9 casserole dish, spread the cauliflower, spread the shrimp mixture and top with the shredded cheese.
  • Cook at 350 degrees for 20 minutes.

.50 cup low-sodium chicken broth or vegetable broth
2 ounces fresh baby spinach (2 packed cups)

2 ounces Parmesan cheese, finely shredded (about ¾ cup), plus more for serving (optional)

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium. Add shrimp and ¼ teaspoon salt; cook, stirring often, until firm and pink about 5 minutes. Transfer to a plate. Wipe skillet clean.
  • Heat remaining 2 tablespoons oil in skillet over medium. Add leek; cook, stirring often, until tender, 3 to 4 minutes. Add wine; cook, stirring constantly, until wine is fully absorbed, 1 to 2 minutes. Stir in cauliflower and broth; cook, stirring often, until broth is fully absorbed, about 3 minutes. Stir in spinach, cream, and remaining ½ teaspoon salt; cook, stirring constantly, until spinach wilts, about 2 minutes. Add cheese; cook, stirring constantly, until melted, about 1 minute.

1 small yellow onion, finely diced
2 cups frozen mixed vegetables
1 pound large (31 to 35 per pound) raw shrimp, peeled and deveined
1 garlic clove, minced
2 large eggs, beaten
3 cups cauliflower rice
3 tablespoons low-sodium soy sauce or tamari sauce
2 teaspoons sriracha sauce, optional
2 green onions, finely chopped

Steps:

  • Heat the oil in a large wok or nonstick frying pan over medium-high heat. Add the onion and cook, stirring often, until it becomes soft and translucent, 3 to 4 minutes. Add the frozen vegetables and shrimp and cook, continuing to stir, until the shrimp begins to turn pink and opaque, or another 3 minutes. Add the garlic and cook, stirring, for another 30 seconds.
  • Use a wooden spoon or rubber spatula to move the vegetable mixture to one side of the pan. On the other side of the pan, add the beaten eggs and cook them, stirring constantly, until they are scrambled, about 2 minutes. Once the eggs are scrambled, mix them with the vegetables and then add the cauliflower rice, soy sauce and sriracha. Cook, stirring constantly, until the cauliflower rice softens, 3 to 4 minutes. Turn off the heat and stir in the green onions.

2 cups cooked rice
1 cup shredded monterey jack cheese

Steps:

  • Preheat oven to 350°F; butter 8-inch square baking dish and set aside.
  • In a sauté pan, melt butter until it foams and add flour slowly to form a paste. Slowly add milk and stir until sauce coats spoon, about 5-7 minutes Add salt. Remove from heat and set aside.
  • Marinate shrimp, scallops in wine for 10 minutes In a sauce pan, sauté onion until soft, then add mushrooms.

  • Remove pan from heat and drain liquid into a 2 cup glass measuring cup. Set aside. Add enough white sauce to the shrimp liquid to make 2 cups.
  • Put rice in prepared baking dish. Top with shrimp mix. Pour white sauce on top until shrimp and rice are covered. Sprinkle cheese on top. Bake 10-12 minutes until bubbly and cheese melts. Garnish with parsley and serve hot.

Steps:

  • Pulse cauliflower in a food processor until broken into rice-sized pieces.
  • Heat the sesame oil in a large skillet or wok. Toss in the carrots and sauté until soft, about 5 minutes.
