1/2 cup mayonnaise
1/2 cup finely chopped onion
1/2 cup chopped dill pickles
1-1/3 cups all-purpose flour
1 teaspoon salt
4 eggs, separated
1-1/3 cups 2% milk
2 tablespoons canola oil
8 French sandwich rolls, split
Additional oil for deep-fat frying
2 pounds uncooked large shrimp, peeled and deveined
Cayenne pepper to taste
4 cups shredded lettuce
16 tomato slices

Steps:

  • In a small bowl, combine the mayonnaise, onion and pickles; set aside. For batter, combine flour and salt in a bowl. Add the egg yolks, milk and oil; beat until smooth. , In a small bowl, beat egg whites until stiff peaks form; fold in batter., Wrap sandwich rolls in foil. Bake at 350° for 10 minutes or until warmed. Meanwhile, in a large skillet or deep-fat fryer, heat 1/2 in. of oil to 375°. Dip shrimp in batter; fry for 2-3 minutes on each side or until golden brown. Drain on paper towels; sprinkle with cayenne, Spread mayonnaise mixture over rolls; top with lettuce, tomato slices and shrimp.

4 French rolls, split and hinged
4 tablespoons melted butter
1 teaspoon minced garlic
3 eggs, beaten

¾ cup all-purpose flour
2 pounds jumbo shrimp, peeled and deveined
2 cups Kikkoman Panko Bread Crumbs
2 cups shredded lettuce
½ cup mayonnaise
1 tablespoon horseradish
1 teaspoon pickle relish
1 teaspoon minced garlic
½ teaspoon cayenne pepper
2 tablespoons Kikkoman Ponzu Lime

Steps:

  • Combine butter and garlic, spread on rolls and toast in the oven until brown. Heat oil in a 2 quart saucepan until 360 degrees. Mix creole seasoning and flour. Dredge shrimp in flour then egg; roll in panko. Fry shrimp in batches until golden brown. Spread remoulade sauce on all 4 rolls. Top with shrimp, followed by shredded lettuce.
  • Remoulade sauce: Mix mayo, horseradish, pickle relish, minced garlic, cayenne pepper, and ponzu in a bowl.

4 French rolls, split, or 1 baguette, quartered crosswise and split
1/2 cup (1 stick) unsalted butter
Juice of 1 lemon, plus the remaining part of the lemon sliced
2 tablespoons Worcestershire sauce
2 cloves garlic, very finely chopped
4 bay leaves, preferably fresh
1 teaspoon sweet paprika
1/4 teaspoon cayenne pepper, or to taste
Kosher salt and freshly ground black pepper to taste
24 large peeled shrimp, deveined if necessary (21/25 per pound)

Steps:

  • Heat the oven to 350 degrees F. Place the bread on a rimmed baking sheet in the oven to warm and crisp while you prepare the shrimp.
  • Melt the butter in a 12-inch skillet over medium-high heat. Reduce the heat to medium low and add the lemon juice and sliced lemon peel, the Worcestershire sauce, garlic, bay leaves, paprika and cayenne. Season with salt and pepper. Stir and simmer for about 5 minutes to marry and blend the flavors, being very careful not to let the garlic brown.
  • Add the shrimp and increase the heat to medium. Cook, turning the shrimp with tongs, until all the shrimp begin to turn pink, about 3 minutes. Remove the skillet from the heat and cover. Let the shrimp remain in the sauce for an additional 5 minutes or so to absorb the flavors and to finish cooking. Discard the bay leaf. Taste and adjust the seasoning with salt and pepper.
  • Spoon the shrimp into the split toasted rolls and laissez le bon temps rouler!

2 tablespoons sweet pickle relish
1 tablespoon creole mustard
2 tablespoons light mayonnaise
2 tablespoons white wine vinegar
1/4 teaspoon salt
2 1/2 cups cabbage and carrot coleslaw mix
1 1/4 lbs large shrimp
3 garlic cloves, minced
3 tablespoons yellow cornmeal
2 teaspoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground red pepper
2 tablespoons peanut oil
submarine sandwich bread

Steps:

  • Preheat oven to 450.
  • Combine first 6 ingredients. Pour over slaw; toss to coat. Set aside.
  • Peel and devein shrimp. Combine shrimp and garlic in a large zip-top bag; shake to coat.
  • Combine cornmeal and next 3 ingredients in a medium bowl.
  • Add to shrimp - shake until well coated.
  • Coat a jelly-roll pan evenly with oil; place in oven for 3 minutes or until very hot.
  • Arrange shrimp on pan in a single layer. Bake at 450 for 3 minutes; turn an dbake an additiona 1 minute or until golden.
  • Remove shrimp from pan.
  • Spoon slaw mixture evenly over the bottom halvs of rolls; top each with shrimp; cover with top halves of rolls.
