1 cup all-purpose flour, spooned and leveled
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
2 large eggs
4 tablespoons (1/2 stick) unsalted butter, melted
Maple syrup and butter, as desired, for serving

Steps:

  • Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
  • In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
  • Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.

Whisk liquid mixture into dry ingredients until just combined. Stir in melted butter. Brush hot waffle iron with butter. Spoon about 1/2 cup of batter onto iron and close to cook. This first waffle will be the tester. Cook waffle until golden brown. Remove to plate and keep warm

1 pinch salt

1 (1.5 fluid ounce) jigger sparkling water, or as needed
cooking spray

Steps:

  • Preheat a waffle iron according to manufacturer's instructions.
  • Combine butter, sugar, vanilla sugar, and salt in a large bowl; beat with an electric mixer until smooth and creamy. Add eggs one at a time, beating well after each addition.
  • Combine flour and baking powder in a bowl. Beat into butter mixture 1/2 cup at a time, alternating with cream. Add a dash of sparkling water in the end to loosen up the batter.

1 1/3 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
2 eggs, separated
1/2 cup butter, melted

Steps:

  • In a large mixing bowl, whisk together all dry ingredients.
  • Separate the eggs, adding the yolks to the dry ingredient mixture, and placing the whites in a small mixing bowl.
  • Beat whites until moderately stiff; set aside.
