Simple Mexican-Style Rice(Arroz Mexicano) image

Mexican rice, red rice, arroz Mexicano. Call it what you like, but it is essential to this Mexican kitchen. Thanks Mom!

Grapeseed or Olive oil (canola or corn oil was traditionally used)
1 cup of long-grain rice
1 serrano pepper (left whole but sometimes I slice it open)
1/4 of a white onion (left in large pieces)
1 clove of garlic (sliced or roughly chopped)
Pinch of Mexican oregano (optional)
2 roma tomatoes (roughly chopped)
Salt to taste
2 cups water or low sodium chicken broth
2 teaspoons chicken bouillon granules (if available use the Knorr brand that is tomato and chicken flavor together)
Small handful of cilantro (optional)
Fresh cracked pepper and more salt (if needed)
1/3 cup of frozen peas and carrots mixed (optional)

Steps:

  • Add oil, rice, serrano and onion to skillet. Heat to medium heat. After a few minutes, the rice will begin to toast. Stir as needed until the rice, onions and serrano become aromatic and begin to toast and brown lightly.
  • While the rice toast, on another burner, add the water(or broth) and bouillon. Heat on medium and stir just to dissolve the bouillon. Do not let it boil.
  • To the blender, add the tomatoes, garlic, oregano and a pinch of salt. Blend until smooth. You may need to use a spatula to scrape the ingredients down so they will blend smoothly. Do not add any water to the tomatoes when blending. Once the rice is toasted, add the blended tomato sauce from blender. Gently stir to combine and cook for 5 minutes or until the sauce reduces and becomes thick.
  • Add the warm broth to the skillet. It will come to a boil quickly. Stir gently, taste for salt and season with some fresh cracked pepper. Add the cilantro, reduce heat, cover pot and then cover with the lid tightly. Do not disturb the rice as it cooks. Do not remove the lid. Let it cook for 10 minutes. If you are adding the frozen peas and carrots, add them now. Set timer for another 5 minutes. After 5 minutes, check the rice to see if liquid has evaporated. If it has evaporated, remove from heat and let stand for 10 minutes. Remember that all stove tops and cookware will vary on the time the rice is done.
  • Remove the large pieces of onion and cilantro. Fluff the rice with a fork stirring from the outer edges in to combine everything. Keep covered until ready to serve.

2 c raw long grain rice
3 1/2 c chicken broth
1 medium onions, vidalia, diced
1 can(s) whole tomatos (4) mushed
2 clove fresh garlic smashed or diced fine
1 box frozen green peas
1/2 tsp ground cumin
1/4 tsp ground black pepper
1/4 tsp oregano, dried
2 tsp salt or to your taste
1 small jalapeno pepper (whole not cut garnish)

Steps:

  • 1. Heat oil on medium high flame, when hot add raw rice (do not rinse rice)and begin to brown. Keep Stirring constantly so rice will not burn. When rice is golden brown, add onions, garlic, and continue to stir until onions are limp.
  • 2. Next add your mashed down tomatos and juice from the can of tomatos and continue stirring about half a minute. Lower the heat a little and add all the seasonings cumin, oregano, pepper, and salt. Next add your chicken broth the peas stir once more and last float the jalapeno whole in the middle of the pot. Cover with a tight lid, lower heat to medium low and cook for 35 to 45 minutes. Do not uncover until time is up. When done uncover remove jalapeno and fluff rice with a fork. Replace the jalapeno in the middle of pot and present at table. Jalapeno will not add heat to the rice provided it is not cut. Just imparts flavor and looks pretty. You may discard after cooking if you like.

This is from Diana Kennedy's book, "From My Mexican Kitchen". I usually have varying results when I make rice but this recipe made it come out perfectly. It is tender like my dad likes it and sprinkled with a touch of carrots and peas like my Nana used to make. It can be prepared several hours ahead and then reheated. Leftovers can be frozen for a couple of weeks without losing flavor. Do not thaw before reheating; put the frozen rice directly into the pan so you do not lose the flavor in the melting juices.

1 1/2 cups long-grain white rice
1/4-1/3 cup vegetable oil
8 ounces tomatoes, roughly chopped (about 1 1/2 cups)
1 tablespoon roughly chopped white onion
1 garlic clove, roughly chopped
3 1/2 cups chicken broth
1 small carrot, trimmed, scraped, and thinly sliced (optional)
2 tablespoons peas (optional)
1 sprig parsley (optional)
2 serrano chilies, left whole (optional)
salt, to taste

Steps:

  • For this quantity of rice you will need a flameproof pan about 4 inches (10 cm) deep and 9 inches (23 cm) across. Pour hot water to cover over the rice and let soak for about 5 minutes. Strain, rinse in cold water, and strain again. Be sure to shake the strainer well to remove the excess water. Do not do this step ahead of time or the rice will become too damp.
  • Heat the oil in the pan and stir in the rice - it should sizzle as it touches the oil. Stir until the grains are evenly coated and continue frying over medium heat until they sound brittle and are just starting to turn golden, about 10 minutes. Tip the pan to one side and drain off the excess oil.
  • Meanwhile, put the tomatoes, onion, and garlic into a blender jar and blend until smooth. Stir the puree into the rice and continue frying over fairly high heat, scraping the bottom of the pan to avoid sticking, until the mixture has been absorbed, about 5 minutes.
  • Add the broth and the optional ingredients; stir the rice well, adjust the salt, cover the pan, and cook over medium heat until all the broth has been absorbed - air holes will probably form. Carefully dig to the bottom of the rice with a fork to see if any moisture remains; if so, then continue cooking over low heat for a few minutes more. Set aside, still `covered, to give the rice a chance to continue steaming evenly for about 15 minutes.
  • When serving, gently stir the rice from the bottom with a fork.

1 cup medium grain rice
1 small onion, finely chopped
1 clove garlic, minced
1 medium tomatoes, roasted,cored,peeled
1 1/2 cups chicken broth (NOT water)

roasted jalapenos (optional) or roasted poblano chile (optional)
roasted bell pepper (optional)

Steps:

  • In a small pan bring the broth to simmering.
  • Set a large pan over medium heat-add the oil, then the rice and onion and cook, stirring, until both the rice and onion are light brown-around 10 minutes.
  • Mix in the garlic and cook for 2 minutes.
  • Add the pureed tomato Add the broth Add the optional ingredients-except cilantro and cheese Scrape the rice down and stir well.
  • Reduce heat to a medium low, cover and finish cooking-around 20 minutes.
  • Remove from heat and toss and either stir in cilantro or offer at the table-I offer at the table because either you love it-like I do-or hate it, and offer the queso fresco or farmers cheese.

This is a really good Mexican rice recipe. I thought my kids would never want anything but the "Spanish Rice" that comes in a box, but as they grew their tastes matured too, thank goodness! I like to use fresh raw peas and corn kernels when possible. Try this, I think you'll like it! 1 small carrot (diced)
2 cups raw rice
2 tablespoons dried ancho chile powder
2 teaspoons cumin

1/4 cup peas
1/4 cup corn
2 tablespoons green peppers (diced)
1 pinch oregano

Steps:

  • Saute onion in oil until soft. Add garlic and carrot, cook for 3 minutes.

3 vine-ripened tomatoes
2 cups chicken broth, plus more as needed
1 tablespoon olive oil
1 large chopped onion
1 large finely diced carrot
1 large garlic clove, minced
2 cups medium-grain rice
2 teaspoons salt
1 bay leaf
1 whole serrano chile
1/4 cup fresh or frozen peas, thawed

Steps:

  • Cut the tomatoes in half, and remove the seeds. Add the tomatoes and 2 cups of broth to a blender and puree. Strain into a bowl and reserve the liquid. Add enough extra broth to make 4 cups of liquid.
  • In a large saucepan, heat the oil over medium-high heat. Add the onion and carrots and saute for 4 minutes until the onion is translucent. Add the garlic and saute for 1 minute. Stir in the rice and cook until slightly toasted, about 3 minutes. Add the tomato broth mixture, stir and bring to boil. Add the salt, bay leaf, and the serrano chile. Reduce the heat, cover and simmer until the rice is tender, about 20 minutes. Remove the pan from heat. Scatter the peas over the top of the rice, cover, and let the rice stand 5 minutes. Fluff the rice with a fork, transfer to a serving bowl and serve.
