- In a small skillet, saute peppers in oil until tender. Spread 4 bread slices with mayonnaise. Layer with peppers, salsa and cheese. Top with remaining bread. Butter outsides of sandwiches., In a small skillet over medium heat, toast sandwiches for 2-4 minutes on each side or until cheese is melted.

MEXICAN GRILLED CHEESE SANDWICH
A lovely, slightly spicy, change from traditional grilled cheese sandwiches. The roasted jalapenos and taco seasoning in the butter take this over the top. Guaranteed comfort food! I roasted the jalapenos over the gas burner for several minutes until black, then cooled in a closed paper bag for about 15 minutes before scraping off the blackened skin. Then I minced them and froze the surplus for occasions just like this one! You could even dip your sandwich into a nice salsa as well. OH GOD NO! SAY IT ISN'T SO! BE STILL MY BLOOD PRESSURE!! (*ahem*.... sorry) Anyway, this went so incredibly well with Recipe #107281... I almost couldn't get it all in my mouth fast enough. :D Hope you enjoy it!

Steps:
- In a small bowl, combine taco seasoning with the butter until fully mixed.
- Thinly coat 1 side of each bread slice with butter mixture.
- Heat skillet to medium. When hot, lay down 2 of the four slices of bread, buttered side down.
- On each slice in the skillet, layer 1 slice of Swiss cheese, 1 teaspoon of the minced roasted jalapenos and 1/2 of the cheddar. Top each sandwich with the remaining bread slices, buttered side UP. (I actually put a little bit more of the jalapeno pieces into the butter mixture before spreading it.).
- Cover skillet and turn pan to medium low. Cook for 5 minutes.
- Uncover and flip when sandwiches have reached desired brownness. Raise heat to medium or medium-high and continue cooking until other side is to your preferred brownness.
- Goes perfectly with a good bowl of soup!
TEX-MEX CLUB SANDWICH
My family loves spicy food and these have a bit of a kick. You can tone it down a bit by leaving out the jalapeno and exchanging some other cheese for the Pepper Jack.

- Sandwich Spread:.
- In a medium mixing bowl, mix together until well blended the mayonnaise, sour cream, sugar, cilantro, red onion, garlic and jalapeno. Add salt and pepper to taste. Chill for at least 4 hours or as long as overnight to let flavors blend.
- Building Sandwiches:.
- Very lightly toast the 8 slices of bread. Spread the sandwich spread mixture on one side of each toasted slice. On 4 slices of prepared bread layer the turkey, ham, jack cheese, Colby cheese, tomato slices, avocado slices and black olives. Top with remaining 4 slices of prepared bread.
- Using a sharp serrated bread knife, cut each sandwich on diagonal from corner to corner. Make 2nd cut on opposite corner, making 4 sandwich segments. Secure segments with toothpicks and serve.

- Brown ground beef in medium sized skillet. Drain fat. Mix in taco seasoning and prepare according to package directions. Add salsa & green chiles.
- In a large skillet place two pieces of bread, buttered side down. Top each piece of bread with one slice of Velveeta. On top of Velveeta spoon 1/6 of hamburger mixture. Place another piece of bread on top of beef with the buttered side up.
- Cook over medium heat until bread is golden brown. Flip sandwich and repeat on other side. Repeat until all sandwiches have been made.
