EASY KIELBASA SKILLET DINNER
The house always smells awesome while this very tasty, filling meal is cooking. It makes kielbasa worth stocking up on when it goes on sale and uses basic/cheap ingredients overall. Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend. We like to crisp up/brown the kielbasa slightly before adding the vegetables.

Steps:
- Spray a large skillet with cooking spray and heat over medium-low heat. Cook and stir onion in the hot skillet until translucent, about 5 minutes. Add kielbasa; fry until sausage is lightly browned, stirring occasionally, about 5 minutes more.
- Stir broccoli and potatoes into sausage mixture; season with salt and pepper. Cook, without stirring, until broccoli begins to soften, about 15 minutes. Stir mixture and continue to cook until vegetables are completely tender, 10 to 15 minutes more.

Steps:
- Heat a large non-stick skillet over low heat, add 1 T olive oil and the kielbasa.
- Increase heat to medium-low and cook , stirring and turning the meat until it's warmed through.
- Add remaining oil and the onions, increase heat to medium-high and continue to cook until onions have softened.
- Add the full bag of Simply Potatoes and the corn, cover and continue to cook, stirring occasionally, until until corn and potatoes are thoroughly hot, and the onions and potatoes have started to brown.
- Serve and enjoy!

- Heat the oil in a saucepan over medium heat. Place kielbasa and potatoes in the saucepan. Cover, and cook 25 minutes, stirring occasionally, until potatoes are tender.
- Mix red bell pepper and yellow bell pepper into the saucepan, and continue cooking 5 minutes, until peppers are just tender.

Steps:
- Preheat oven to 350 degrees. Spray a 9" deep dish pie plate with cooking spray. In a medium bowl mix slightly beaten egg into the mashed potatoes; press into the bottom and up the sides of the pie plate as if making a pie crust. Bake in preheated oven for 30 minutes or until slightly browned. Set aside.
- Meanwhile slice kielbasa into 1/2" slices then cut into quarters; spray large skillet with cooking spray; add kielbasa and drained tomatos and saute until the kielbasa is cooked through and slightly browned. Spoon into the baked mashed potatoe crust and sprinkle with shredded swiss cheese.
- Bake 30 minutes until cheese is bubbly and browned; let set for 10 minutes before slicing like a pie.

- In pan, boil kielbasa 20 minutes. While kielbasa is boiling, fry onion with butter in a large skillet. Add potatoes to onions and fry until browned and tender. (Add additional butter if necessary) Slice kielbasa into one inch pieces and add to potatoes. Add sauerkraut to mixture and cook until heated through.

- Cut all vegetables into bite sized pieces. Add potatoes to skillet and cook, stirring often, about ten minutes. Add all other vegetables and a generous sprinkling of Season All. Stir and cook another five minutes.
- Push veggies to the side of the skillet and place sliced kielbasa in empty side. Cook, stirring every now and then, for about five minutes.
