- In a large skillet, cook sausage over medium heat until no longer pink. Add the potatoes, onion, green pepper, salt and pepper. Cook over medium-high heat for 18-20 minutes or until the potatoes are browned. , Stir in mushrooms. Pour eggs over the potato mixture. Arrange tomato slices on top. Sprinkle with cheese. , Cover and cook over medium-low heat for 10-15 minutes or until eggs are completely set (do not stir). Serve with sour cream and salsa if desired.

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels; crumble into small pieces.
- Preheat oven to 450 degrees F (230 degrees C).
- Heat olive oil in a skillet over medium-high heat. Add onion; cook and stir until translucent and starting to brown, 7 to 8 minutes. Remove from heat; transfer to a bowl.
- Roll out pizza dough into a 12-inch circle and press into the bottom and 1 inch up the sides of a well seasoned 10-inch cast iron skillet. Fold the edges of the dough under and crimp like a pie.
- Mix ricotta cheese and garlic powder together in a bowl; spread over the bottom of the crust. Scatter bacon, onion, mozzarella cheese, and black pepper on top.
- Place cast iron skillet over high heat until mozzarella cheese starts to melt, about 3 minutes.
- Transfer skillet to the preheated oven; bake pizza until crust is lightly browned, about 18 minutes.
- Heat a large skillet over medium-high heat and coat with cooking spray. Add spinach; cook, stirring frequently, until wilted, about 1 minute. Transfer to paper towels to drain excess moisture. Place spinach over pizza; slice into 8 wedges.

We love pizza--even for breakfast. Feel free to add any of your favorite toppings too. This is very filling and great served with fresh fruit. Also super as a light lunch or supper. I will make a couple of these on the weekend and wrap individual wedges that the kids grab to pop in the micro and eat as they wait for the bus.

- Preheat oven to 400°F.
- In saucepan add water and milk.
- Whisk in gravy mix, and bring to a boil.
- Simmer 2-3 minutes, stirring constantly til thick.
- Cool slightly.
- In large skillet, melt margarine.
- Beat eggs with milk and add to skillet.
- Scramble eggs in skillet until set and in small chunks.
- Place crust on pizza stone or cookie sheet.
- Spread gravy evenly over the top.
- Sprinkle meats over gravy.
- Sprinkle eggs over meats.
- Salt and pepper to taste.
- Sprinkle cheese over eggs evenly.
- Bake at 400°F for 10-15 minutes until bubbly and cheese is melted and browning.
- Cool slightly and cut into wedges.

"STEAK AND EGG" SKILLET PIZZA
A cast-iron skillet will make quick work of this breakfast-inspired pie and it will turn out a crisp, chewy crust that rivals what a traditional pizza oven can do. Hearty enough for the main event, this pizza is made by spreading a spiced ground beef mixture over the crust, then cracking a few eggs on top midway through cooking so they stay sunny-side-up. When the yolks are broken at the table, they combine with a mix of mild cheddar and briny feta to make a downright decadent sauce.

- Preheat oven to 500°. Heat oil in a large ovenproof cast-iron skillet over medium-high. Add beef, onion, and allspice; season with salt and pepper. Cook, breaking up meat with a spoon, until browned, 5 to 6 minutes. Transfer to a bowl.
- Remove skillet from heat; carefully wipe clean. Drizzle skillet with oil. Using your hands, stretch dough into an approximately 12-inch circle; place in skillet, stretching to edges.
- Sprinkle dough round evenly with feta, cheddar, and meat mixture, leaving a 1/4-inch border. Transfer skillet to oven and bake until cheeses have melted and crust is crisp on bottom, 14 to 16 minutes. Remove skillet from oven. Using the back of a spoon, make 4 small divots in meat mixture and add 1 egg to each. Bake until egg whites are set but yolks are still runny, 7 to 9 minutes more. Let cool in skillet 5 minutes before serving with salad.

- Line bottom of seasoned 9" cast iron skillet with 6-8 biscuit dough discs, spreading each out to meet to form the crust. For thinner crust, split 3 biscuits in half lengthwise, stretch, and spread.
- Spread sausage gravy on top of crust, forming a "sauce". (I used this recipe from Poofy Cheeks.)
- Top as desired. I layered mine starting with mozzarella and cheddar cheese, scrambled eggs, tomatoes, peppers, mushrooms, spinach, and topped it all off with some crumbled feta.

- Preheat the oven to 400 F. Make sure your pizza dough and pizza sauce are ready to go. If making the pizza dough the night before, refrigerate for the second rise and remove from the refrigerator 1 hour before using.
- Cook the bacon in a large cast-iron skillet until done. Remove from the skillet and chop into large pieces.
- Take half of the dough, roll or throw into a large circle, and fit into the pan coming up the sides a little bit. Working quickly, spread pizza sauce, layer the cheese and bacon, then make small wells in the cheese for three raw eggs.
