Skillet Kielbasa Macaroni and Cheese(Cook's Country) image

All in one pan. To make fresh bread crumbs, pulse two slices of hearty white sandwich bread in a food processor until coarsely ground.

1 lb smoked beef sausage, sliced 1/4-inch thick
2 cups fresh breadcrumbs
salt & pepper
3 3/4 cups water
1 (12 ounce) can evaporated milk
3 cups elbow macaroni (uncooked, 12oz)
2 teaspoons hot sauce
1 teaspoon cornstarch
3 cups sharp cheddar cheese, shredded-12oz
2 cups monterey jack cheese, shredded-8oz

Steps:

  • 1. Brown sausage in 12" non-stick skillet over medium-high heat, 6-8 minutes Transfer to paper towel lined plate.
  • 2. Add bread crumbs and 1/4 teaspoon each of salt & pepper to skillet and cook until golden brown, about 5 minutes. Transfer to bowl and wipe out skillet.
  • 3. Bring water, 1-1/4 cups evaporated milk, and 1/2 teaspoon salt to simmer over medium-high heat. Add pasta and cook, stirring often, until al dente, 8-10 minutes.
  • 4. Whisk remaining evaporated milk, hot saucer and cornstarch together in a bowl, then stir into pasta. Bring to simmer and good until begins to thicken, about 1 minute.
  • 5. Remove from heat and add cheeses and sausage. Sprinkle with bread crumbs & enjoy!

1 (13 1/2 ounce) package Johnsonville Polish Kielbasa Premium Cooking Sausage, cut into 1/4 -inch slices
4 cups water
3 cups uncooked elbow macaroni
1 teaspoon cornstarch
1 (12 ounce) can evaporated milk
2 teaspoons hot pepper sauce
2 cups shredded sharp cheddar cheese
1 cup shredded monterey jack cheese
toasted breadcrumb (optional)

Steps:

  • In a 12-inch nonstick skillet, brown sausage over medium-high heat for 3-5 minutes.
  • Transfer to a plate and keep warm.
  • In the same skillet, bring water to a boil.
  • Add pasta, reduce heat, stir often until pasta is al dente, about 8-10 minutes. (Do not drain).
  • In a small bowl, whisk cornstarch, milk and hot pepper sauce.
  • Gradually add to pasta; cook and stir until slightly thickened, about 2 minutes.
  • Remove from heat; add cheeses and sausage.
  • Stir until blended and cheese melts.
  • Sprinkle with crumbs if desired.
  • Serve.

I got this recipe from my sister, whom I nicknamed Cheese when we were little girls. Now that we're adults, the name still sticks and my children call her Auntie Cheese. Needless to say, with a nickname like Cheese, her Baked Mac and Cheese is definitely the best around.

1 (16 ounce) package fully cooked kielbasa sausage, cut into 1/2-inch pieces
1 (8 ounce) package elbow macaroni
⅓ cup butter
1 small onion, chopped
3 tablespoons all-purpose flour
2 cups milk
1 (10 ounce) package sharp Cheddar cheese, cubed
salt and ground black pepper to taste
1 cup dry bread crumbs, or more as needed

Steps:

  • Cook and stir the cut-up kielbasa in a large skillet over medium heat for 6 to 8 minutes, until heated through and beginning to brown. Remove the sausage from the skillet, and set aside.
  • Fill a pan with lightly salted water, bring to a boil over medium-high heat, stir in the macaroni, and return to a boil. Cook, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 8 minutes. Drain well.
  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Melt the butter in the skillet over medium-low heat, and cook and stir the chopped onion for about 5 minutes, until translucent. Whisk in the flour, stirring constantly to avoid lumps. Cook and stir the butter, onion and flour for 2 to 3 minutes to make a roux, and remove from the heat. Whisk in the milk a little at a time, stirring constantly, until all the milk has been incorporated, and return to low heat. Bring the sauce to a simmer, and cook over low heat for about 2 minutes, stirring constantly, to finish cooking the flour. Whisk in the Cheddar cheese, a few cubes at a time, until all the cheese has been incorporated and the sauce is hot and smooth.
  • Pour the macaroni into the cheese sauce, and stir to combine. Stir in the cooked kielbasa, salt, and pepper.
  • Spoon the macaroni mixture into the prepared baking dish, and sprinkle the bread crumbs over the top. Bake for about 20 minutes in the preheated oven, until the crumbs are brown and the casserole is bubbling. Let stand for 15 minutes after baking, to set before serving.

1 pound elbow macaroni (see note)
1 (28-ounce) can petite diced tomatoes
6 tablespoons unsalted butter
1/2 cup all-purpose flour
1/4 teaspoon cayenne pepper
4 cups half-and-half
1 cup low-sodium chicken broth
8 oz (3 cups) shredded mild cheddar cheese
8 oz (3 cups) shredded sharp cheddar cheese
Panko bread crumbs for topping.

Steps:

  • 1. COOK MACARONI Adjust oven to middle position and heat oven to 400 degrees. Bring 4 quarts water to boil in large Dutch oven over high heat. Stir in 1 tablespoon salt and macaroni and cook until just al dente, about 6 minutes. Drain pasta and return to pot. Pour diced tomatoes with their juices over pasta and stir to coat. Cook over medium-high heat, stirring occasionally, until most of liquid is absorbed, about 5 minutes. Set aside. 2. MAKE SAUCE Meanwhile, melt butter in medium saucepan over medium heat until foaming. Stir in flour and cayenne and cook until golden, about 1 minute. Slowly whisk in half-and-half and broth until smooth. Bring to boil, reduce heat to medium, and simmer, stirring occasionally, until mixture is slightly thickened, about 15 minutes. Off heat, whisk in cheeses, 1 teaspoon salt, and 1 teaspoon pepper until cheeses melt. Pour sauce over macaroni and stir to combine. Add a generous amount of Panko bread crumbs, spreading them over the top of the casserole. 3. BAKE MACARONI AND CHEESE Scrape mixture into 13 by 9-inch baking dish set in rimmed baking sheet and bake until top begins to brown, 15 to 20 minutes. You may want to add 3-5 minutes under the broiler to brown the bread crumbs. Let sit for 10 to 15 minutes before serving. MAKE AHEAD: Macaroni and cheese can be made in advance through step 2. Scrape mixture into 13 by 9-inch baking dish, cool, lay plastic wrap directly on surface of pasta, and refrigerate for up to 2 days. When ready to bake, remove plastic wrap, cover with foil, and bake for 30 minutes. Uncover and bake until top is golden brown, about 15 minutes. Let sit for 10 to 15 minutes before serving.
