BEST DAMN SALSA EVER!

Best Damn Salsa Ever! image

This homemade salsa recipe is absolutely irresistible! It's loaded with delicious, vibrant flavor and it comes together in less than 5 minutes.

Provided by Kim Lee

Categories     Appetizer     Dip

Time 5m

Number Of Ingredients 8

4 small jalapeño peppers* ((leave the seeds in for an extra kick))
1/2 onion, chopped
3 garlic cloves
1/4-1/2 cup fresh cilantro
6 tomatoes of varying sizes, chopped
1 1/2 to 2 teaspoons ground cumin
1 teaspoon sea salt + more to taste
2 tablespoons lemon or lime juice ((about 1/2 lemon, juiced))

Steps:

  • Add all ingredients to the bowl of a food processor. I like to add in the jalapeños, onion and garlic first and then the cilantro and tomatoes, so the tomatoes do not get too liquid-y. Pulse about 10 or so times and until all ingredients are combined and diced, but be sure to stop before the salsa becomes too watery. However, you can pulse longer if you do like your salsa with more liquid.
  • Taste the salsa and add more ingredients as desired. I would advise stirring in the extra ingredients, not pulsing in the food processor. The salsa will become too watery, quickly.
  • Transfer to a bowl and enjoy!
  • I prefer to refrigerate salsa for 1 day prior to serving to allow the flavors to intensify. Salsa will keep for about 1 week in an airtight container or jar in the fridge; however, it's never lasted that long in this household.

KIM'S SALSA

Kim's Salsa image

This recipe is a favorite of all my friends. Whenever they come over, they want to leave with a jar. Therefore, when I make it I can 14 GALLONS each time. I figure, if I'm gonna spend all day making it, I might as well only do it once a year! I like to serve this salsa with tortillas or use it in cooking. It's great in scrambled eggs and chili.

SHORTCUT TACOS AL PASTOR WITH PINEAPPLE SALSA

Shortcut Tacos al Pastor with Pineapple Salsa image

Tacos al pastor just got the weeknight treatment! Typically, this traditional Mexican taco is marinated for hours, then skewered onto a giant spit and cooked on a rotisserie for hours. This version gets you all that flavor but without all the work and waiting. To make this more kid friendly feel free to leave the habanero out of the salsa and serve some hot sauce on the side for those that like a little kick.

Provided by James Briscione

Categories     main-dish

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 18

1 tablespoon vegetable oil, plus more for drizzling
1 red onion, diced
2 cloves garlic, chopped
2 dried ancho chiles, stemmed, seeded and cut into 2-inch pieces
1/3 cup orange juice
1/4 cup distilled white vinegar
1 tablespoon honey
1 tablespoon tomato paste
1 teaspoon ground cumin
1 teaspoon dried oregano
Kosher salt
2 pounds boneless pork shoulder, sliced 1/4-inch thick
8 to 12 corn tortillas
1/2 medium pineapple, cored and finely chopped
1/2 cup cilantro leaves, chopped
Juice of 1 lime
1/2 habanero pepper, seeded and finely diced
Lime wedges, for serving

Steps:

  • Preheat the broiler.
  • Heat the oil in a medium saucepan over medium-high heat until almost smoking. Add half of the onions and cook until softened, about 1 minute. Stir in the garlic, chiles, orange juice, vinegar, honey and tomato paste and bring to a simmer. Add the cumin and oregano and continue to simmer, about 5 minutes, covered. Remove from the heat and cover until the chiles are softened, about 5 minutes. Blend until smooth. Let cool completely.
  • Line a baking sheet with foil, drizzle some oil on it and rub it around so that the foil is evenly coated. Spread the pork in an even layer. Coat both sides completely with the chile mixture with a pastry brush and transfer to the broiler. Cook until charred on both sides, flipping halfway through, about 12 minutes total. Remove from the broiler and let rest for 5 minutes. Wrap the tortillas in foil, turn off the oven and heat the tortillas.
  • Meanwhile, combine the pineapple, cilantro, remaining onions, lime juice, habanero and a pinch of salt in a medium bowl.
  • Cut the pork into 1/4-inch-thick strips and serve with the corn tortillas, lime wedges and pineapple salsa.
