5 pounds apples - peeled, cored, and thinly sliced
1 ½ tablespoons ground cinnamon
½ teaspoon ground cloves
¼ teaspoon ground nutmeg

Steps:

  • Layer apples into a slow cooker. Sprinkle cinnamon, cloves, and nutmeg over the apples.
  • Cook on High until apples are soft, 4 to 5 hours. Whisk apples vigorously for a chunkier-style applesauce. Puree with an immersion blender for a smoother applesauce.

A quick, easy homemade applesauce recipe that I served with potato latkes this year. It has no added sugar, which makes it a better option for diabetics and low-carb people and others who avoid cane sugar. But if you prefer a sweeter sauce, add 1/2 cup of sugar. I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example). Don't leave out the salt, it's a necessary ingredient for a good applesauce!

3 lbs apples
1 teaspoon cinnamon
1 pinch nutmeg
1 1/2 cups water
2 thin lemon slices
1/4 teaspoon salt

Steps:

  • Peel and core apples (I prefer to leave the skin on a few of them because I like the taste and texture). Cut apples into approximately 1 inch cubes.
  • Add all ingredients to pot, and turn heat on high. Bring to a boil, then cover and reduce heat to low. Simmer for 20 minutes or until the apples have softened significantly.
  • Stir frequently, making sure that the apples are not sticking to the bottom of the pot. Add more water if necessary. Remove lemon slices.
  • Mash with a potato masher or use a food mill for a smoother consistency. Serve warm or at room temperature.

  • Let cool and blend if desired.
  • Store in the fridge for up two weeks, or two months in the freezer. Makes about 2 cups of applesauce.

  • Place the sliced apples and water in the bowl of your slow cooker, then cover and set to cook on low for 6 hours, until the apples are very soft. (If you have a VitaClay, like I do, it only takes 2 hours on the "stew" setting.)
  • Use an immersion blender to puree the applesauce, or transfer the apples in batches to a blender and (carefully!) blend using a dishtowel to cover the vent at the top. If you're using a Vitamix, or another high-speed blender, be careful not to over-blend this sauce-- it can become too smooth very quickly. Store the applesauce in the fridge for a week, or freeze for up to 6 months.

  • Peel, core, and chop your apples into large pieces. I cut my medium-sized apples into eighths. It is fine to throw in some extra apples if you wish, this is an extremely flexible recipe.
  • Put the prepared apples in your slow cooker. Tuck in the cinnamon stick. Pour the water over the top.
  • Cover the slow cooker and set it on low. Let the apples cook for 6-8 hours, giving it a good stir every 2-3 hours to prevent the apples from sticking to the pot. The apples will fall apart on their own, no mashing necessary! If your particular variety of apples does not seem to be breaking down, don't be afraid to crank your slow cooker up to the high setting for a couple of hours to get the process going.
  • Longer cooking times result in a thicker, sweeter, and darker-colored applesauce, similar to apple butter (as shown in photos). When you feel the applesauce is ready, remove the cinnamon stick. The applesauce can be served warm or chilled.

  • Cut the apples into quarters and slice out the pieces of core in each one. Leaving the peels on or off is your choice. If leaving them on, be sure to wash the apples very well (even if buying organic). I usually leave the peels on about half of the apples and blend it for a minute or two longer after cooking so it's ultra-smooth. If you want a chunkier applesauce, I'd suggest peeling all the apples so you can leave the sauce with texture and not get bits of peel all over.
  • In a large, oval slow cooker (about 7- to 8-quarts), toss the apples with the lemon juice, cinnamon and nutmeg. Cover and cook on low for 4 hours.
  • Blend with a handheld immersion blender or by scooping the applesauce into a blender (may need to do this in batches - take care since hot foods expand in a blender so only fill it half full).
  • Serve warm, room temperature or chilled. This will keep well-covered in the refrigerator for a week or two and can be frozen for a couple of months.
