HERBED LEMON CHICKEN IN A CROCK POT / SLOW COOKER



Herbed Lemon Chicken in a Crock Pot / Slow Cooker image

This is a lemon herb garlic chicken dish which is made in a slow cooker to contain it's natural flavours. When we served it the meat fell away from the bone. If you wish to increase the celery and carrot you may do so without dramatically change the flavour of the dish. I normally remove the skin off the drumstick, which I recommended with this dish but feel free to leave it on. Everyone enjoyed it in our house hold, hope you will enjoy it.

20 g butter
1 kg chicken drumstick, with bone
1 stalk celery, chopped
1 carrot, chopped
1 1/4 cups chicken stock, liquid stock
1 lemon, juice of, freshly squeezed
1 spring onions or 1 green onion, finely sliced
3 garlic cloves, sliced
2 tablespoons fresh parsley, chopped
1 teaspoon dried oregano, ground
salt, to taste
ground black pepper, to taste

Steps:

  • In a hot non-stick pan, add butter and melt.
  • Add chicken drumstick and brown or seal chicken.
  • Place celery & carrot on base of crock pot/slow cooker.
  • Add brown chicken drumstick into the crock pot/slow cooker, making sure the chicken drumstick are not sitting on top of each other (must be laying side by side). Pour left over juices in the pan into the crock pot/slow cooker.
  • Pour chicken stock and lemon juice on top of drumstick.
  • Sprinkle onions, garlic, parsley, oregano, salt and black pepper on top of the chicken drumstick.
  • Cover and cook on 'Low' setting for 6-8 hours. (Depending on you crock pot/slow cooker, mine tenders to cook quickly even on the slower setting).
  • Serve with juices on rice or with crusty bread.

1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds skinless, boneless chicken breast halves
2 tablespoons butter
¼ cup water
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon chicken bouillon granules
1 teaspoon chopped fresh parsley

Steps:

  • In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.
  • In the same skillet, mix the water, lemon juice, garlic, and bouillon. Bring the mixture to boil. Pour over the chicken in the slow cooker.
  • Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.

4 pounds chicken drumsticks
2 tablespoons lemon juice
1/2 cup white wine or marsala
1 tablespoon olive oil
1/2 teaspoon dried rosemary, crushed
1/4 cup onions, chopped
1 clove garlic, minced
salt and pepper

Steps:

  • Put drumsticks in a large plastic bag. Mix all remaining ingredients together and add to the drumsticks, turning bag to cover all. Refrigerate for 2 to 4 hours or overnight. When ready to cook put everything in the crock pot and cook for 4 to 6 hours on low or until the chicken is cooked. If desired: place drumsticks in a baking pan and broil for a few minutes to brown, then serve.

10 Chicken Drumsticks (skin removed)
1 large lemon (juiced and zested)
1/4 cup olive oil
2 teaspoons garlic powder
2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon paprika
1 teaspoon dried oregano

Steps:

  • Pat chicken dry and place into a 1-gallon Ziploc bag.
  • In a small bowl, whisk together remaining ingredients. Pour over chicken and seal the bag, squeezing out as much air as possible. Massage marinade into the chicken. Refrigerate for at least 2 hours, or preferably overnight. (If all you have is 30 minutes, that's fine - just remember the longer the marinade time, the more tender and juicy the chicken).
  • When ready to cook, let chicken come to room temperature (about 20 minutes). Preheat oven to 425 degrees. Arrange chicken on a foil lined baking sheet. Bake, uncovered, for about 20-25 minutes. Flip chicken pieces and cook another 10 minutes, or until chicken reaches an internal temp of 165 F and is no longer pink.
  • Serve immediately.

1 teaspoon cumin
1 teaspoon garlic salt
1 1/2 cups bbq sauce (divided)

Steps:

  • In a small bowl combine the paprika, cumin, and garlic salt. Stir to combine.
  • Sprinkle over the drum sticks and rub all over chicken skin.
  • Place chicken drumsticks in slow cooker.
  • Pour 1 cup of barbeque sauce over the chicken drum sticks.
  • Cover and cook on low 4-6 hours until the chicken is tender. (You can cook on high if you prefer but reduce the hours on high.)
  • When finished place the chicken on a cookie sheet lined with foil and cooking spray.
  • Brush half of the bbq sauce on the drum sticks. Broil for 1-5 minutes until it begins to brown.
  • Remove from oven, flip the drumsticks, and brush with the remaining bbq sauce.
  • Broil another 1-5 minutes until brown.

5 pounds chicken drumsticks
2 teaspoons Cajun seasoning
2 teaspoons poultry seasoning
1 teaspoon garlic powder

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Grease a baking pan with cooking spray.

2.5 lbs. chicken drumsticks (about eight drumsticks)
1/4 salt
1/4 pepper
2 Tbsp. vegetable or canola oil
1 cup favorite barbecue sauce
20 oz. can pineapple slices ((1/2 cup of juices reserved))

Steps:

  • Sprinkle the chicken with the salt and pepper.
  • In a large skillet set to medium-high heat, add the cooking oil. When the pan is hot, brown the chicken on all sides. Add the chicken to the 3-quart or larger slow cooker.
  • Pour over the barbecue sauce evenly over the chicken. Next, pour over the 1/2 cup of reserved juices from the pineapple can. Add the pineapple slices over the chicken and sauce.
  • Cover and cook on HIGH for 3-4 hours or on LOW for 5-6 hours. Do not open the lid during the cooking time.
