CROCK POT CRANBERRY APPLE PORK LOIN ROAST
Steps:
- Place the pork loin roast in the slow cooker and coat all sides with the minced garlic.
- In a bowl, combine the cranberry sauce, brown sugar, apple juice, and chopped apples. Pour sauce over pork.
- Cover the crockpot and cook on LOW for 7 to 9 hours. Taste the sauce and add salt and pepper as needed.
- If you think the sauce needs thickening, you can add a cornstarch slurry. In a small bowl, stir the cornstarch with the cold water until smooth. Add the slurry to the liquids and stir to blend. Increase the setting to HIGH and continue cooking for 5 to 10 minutes, until thickened.
- Remove the pork from the crockpot onto a cutting board. Slice the pork and arrange on a platter. Spoon over sauce and serve.

I got this from SouthernFood.about.com. It is really good and so easy to make. It can be made either in the crock pot or in the oven. I don't like Cranberry sauce much but this was really good. I've actually had it with out the apples also and it turned out fine.

- Place pork roast in 3 1/2 to 4-quart slow cooker.
- In small bowl, combine cranberries, broth, orange peel and 1/4 cup of the cranberry juice cocktail; mix well. Pour over roast.
- Cover; cook on low setting for 7 to 9 hours.
- To serve, place roast on serving platter; cover with foil to keep warm. Pour juices from slow cooker into medium saucepan; if necessary, skim off any fat.

- Put leeks in the bottom of the slow cooker. Lightly salt and pepper the roast. Rub garlic powder on the roast. Place roast in the slow cooker. Combine remaining ingredients listed down thru "curry powder" in the cooker and spoon over the roast.
- Chutney - Ingredients begin with the cranberries - In a small saucepan on the stovetop, combine water, juice and sugar. Bring to a boil over medium heat. Add other ingredients and bring to a boil. Simmer gently for approximately 10 minutes, stirring often.
- Remove chutney from the heat. Pour chutney mixture into the slow cooker covering the pork loin roast.
- Cook roast on low for 6-8 hours.
- Remove roast from the crockpot, keep warm. Pour juices into a medium saucepan on the stovetop. Add 1 T. cornstarch with 1 T. cold water and stir until smooth. Stir into the juices and continue cooking for one minute. Serve with a dollop of cream cheese.
