Slow Cooker Northern White Bean image

White beans are cooked in a slow cooker with smoked neck bones, aromatic vegetables, seasonings, and chicken broth. This recipe can be used for cooking most any dried bean in the slow cooker. Adjust liquid when cooking tougher skin beans (such as pinto beans). Add garlic and onion powder to taste, if desired.

1 ½ cups dried great Northern beans, rinsed
2 large smoked neck bones
2 (14 ounce) cans chicken broth
½ teaspoon soul seasoning
½ onion, finely chopped
½ teaspoon white vinegar, or to taste
1 pinch white sugar, or to taste
1 dash hot sauce, or to taste

Steps:

  • Place beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
  • Place neck bones in a slow cooker and pour chicken broth over the top; stir in soul seasoning.
  • Cook on High until meat is falling off the bones, about 1 hour. Transfer bones and meat to a plate and shred meat from bones; discard bones.
  • Stir beans, onion, vinegar, sugar, and hot sauce into slow cooker; spread shredded meat over beans.
  • Cook on High for 2 to 4 hours (or cook on Low for 4 to 6 hours).

1 lb. dried great northern, navy, or cannellini beans
3 T. salt
14 oz. Polish Kielbasa or other smoked sausage
1 large onion, chopped fine
3 carrots, peeled and chopped into 1/2 inch pieces
3 stalks celery, washed and chopped into 1/2 inch pieces
8-10 cloves garlic, minced fine
4 c. chicken broth
3 c. water
2 bay leaves
14.5 oz. can diced tomatoes, drained
1 sprig fresh rosemary
1 lb. kale, stemmed and chopped into 1 inch pieces
Olive oil, for drizzling, if desired
Fresh bread

Steps:

  • 20-24 hours before cooking: In a large bowl, dissolve 3 T. salt in 4 qts. cold water. Stir in beans and let sit for 20-24 hours. Drain and rinse well prior to adding to slow cooker.
  • In large 6 quart slow cooker, add all ingredients except kale. Stir well.
  • Cook on low for 9-10 hours.
  • Add kale last 1-2 hours, stirring well after addition. Pull out sprig of rosemary when adding kale.
  • Serve with a drizzle of olive oil and fresh bread, if desired.

1lb Great Northern Beans, soaked (or 5 can white beans drained and rinsed)
1 Link of Smoked Kielbasa Sausage, sliced into coins
3 Bacon Slices, chopped
1lb Pork Stew Meat
1lb Beef Stew Meat
1 Large Onion, chopped
3 Garlic Cloves, minced
1 Teaspoon Thyme, dried
1 Tablespoon Creole Seasoning
2 Large Bay Leaves
2 table spoons tomato paste
1 (14oz) Tomato Sauce
2-1/2 Cups Beef broth

Steps:

  • 1. If using dried beans soak them overnight or you can do this quick soak method or simply just use canned. 2. Add the chopped bacon to a skillet and fry on medium heat until almost crispy. Remove the bacon but keep the fat. 3. Add the sausage links and caramelize on medium heat. When you start to see some good dark charring it's time to remove those and put them to the side with the bacon. 4. Add the onions and then garlic, cook until soft. 5. Remove the onions and garlic and add the pork and beef stew meat. Cook until the outside has browned. 6. Add all these ingredients to the slow cooker, along with the beans (drained). 7. Add the thyme, Creole seasoning and bay leaves. As well as the tomato paste, sauce and beef broth. 8. Cook on low for 6-8 hours or high for 4-6 hours. 9. Remove the bay leaves and serve with your choice of sides.

8 cups low-sodium chicken or vegetable broth
1 pound mix of dried beans, such as navy and pinto, rinsed
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 stalks celery, diced
2 carrots, diced
2 cloves garlic, minced
1 medium yellow onion, chopped
1 bay leaf
A few sprigs fresh thyme
8 ounces dried barley
8 ounces baby spinach
Toasted crusty bread or baguette, for serving

Steps:

  • Combine the broth, bean mix, salt, pepper, celery, carrots, garlic, onions, bay leaf, thyme and 2 cups water in a slow cooker. Cover and cook on low for 7 hours. Add the barley and, if the broth looks low, another cup of water. Cover and cook on low an additional 1 hour (8 hours total).
  • Just before serving, stir in the spinach to wilt. Serve in a big bowl with toasted crusty bread or baguette.

2 1/2-3 lbs boneless skinless chicken thighs
2 (16 ounce) cans white beans, drained and rinsed (navy beans or great northern beans)
1 cup white wine
1/2 cup chicken broth
1 cup diced sweet onion
8 ounces chopped carrots
1 (15 ounce) can diced tomatoes, undrained
2 garlic cloves, minced
1 teaspoon celery seed
1 teaspoon dried rubbed sage
1 teaspoon dried thyme leaves
1 tablespoon parsley flakes
1 bay leaf
1 tablespoon sea salt
1/2 teaspoon white pepper
1/2 cup water or 1/2 cup chicken broth
6 tablespoons all-purpose flour

Steps:

  • Mix everything but the water and flour in a slow cooker.
  • Cook on low for 7 hours.
  • Beat the flour into the water (or chicken broth) with a fork until smooth then mix into the slow cooker.
  • Cook on low for 1 hour.
  • Great served with garlic bread and a salad!
