1/4 cup walnuts
1/2 cup plain Greek yogurt
1/4 cup crumbled blue cheese
1 small shallot, finely chopped
Kosher salt and freshly ground pepper
1 6-ounce package baby spinach
1 pint grape tomatoes, halved
1 14-ounce can hearts of palm, drained and halved lengthwise
3 Persian cucumbers, roughly chopped
2 8-ounce vacuum-sealed packages cooked beets, quartered
1 8-ounce smoked chicken breast, thinly sliced
4 whole-grain dinner rolls

Steps:

  • Preheat the oven to 350 degrees F. Spread the walnuts on a baking sheet and roast until golden, 10 to 12 minutes; let cool slightly, then chop.
  • Meanwhile, make the dressing: Whisk the yogurt, blue cheese, shallot and 1 tablespoon water in a large bowl; whisk in another tablespoon of water if the dressing is too thick. Season with salt and pepper.
  • Add the spinach, tomatoes, hearts of palm, cucumbers and beets to the bowl with the dressing and toss. Add the chicken and toss again. Divide among plates and top with the walnuts. Season with salt and pepper. Serve with the rolls.

1 cup celery, finely chopped
4 cups cooked chicken (smoked)
1 cup onion, finely chopped
1/2 teaspoon salt
1/4 teaspoon cracked black pepper
1 1/4 cups mayonnaise

Steps:

  • *In a food processor fitted with a metal blade, add celery and pulse until it turns into a minced consistency. Remove from food processor and place in a large mixing bowl.
  • Add 2 cups of chicken to food processor and pulse until desired consistency is reached; transfer to the mixing bowl with the celery and pulse the remaining chicken in the food processor.
  • Add onion, salt, pepper, and 1 cup mayonnaise to the celery and chicken; stir until blended. Add more mayonnaise if necessary.
  • Serve on whole grain bread or on top of Triscuits for a healthy snack or light lunch.
  • *If you like bigger chunks of celery, you can skip the first step and place chopped celery right into the mixing bowl.
  • Try some additions if you'd like: Hard boiled eggs, Grapes, Apples, Chopped almonds or walnuts, Raisins, Cucumber, Pickle Relish.

2 cups chopped leftover smoked chicken
⅔ cup chopped celery
½ cup halved seedless red grapes
¼ cup chopped pecans
3 medium scallions, white and green parts, chopped
½ cup mayonnaise
1 teaspoon raspberry vinegar
½ teaspoon ground paprika
freshly ground black pepper to taste

Steps:

  • Combine chicken, celery, grapes, pecans, and scallions in a medium bowl.
  • Stir mayonnaise, vinegar, paprika, and pepper together in a small bowl until well blended. Pour over chicken mixture and stir until well combined.

2 large skinless, boneless chicken breasts (about 1 1/2 pounds)
1/4 cup extra-virgin olive oil
1/2 teaspoon smoked paprika
Kosher salt and freshly ground pepper
1 clove garlic
3 jarred piquillo peppers (2 whole, 1 thinly sliced)
1/3 cup mayonnaise
Juice of 1/2 lemon
3 tablespoons chopped fresh cilantro
16 small Bibb or romaine lettuce leaves
2 stalks celery, thinly sliced
3 tablespoons salted Marcona almonds, roughly chopped

Steps:

  • Preheat a grill to high. Toss the chicken with 1 tablespoon olive oil, the paprika, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Grill the chicken until marked and cooked through, about 7 minutes per side. Let cool slightly, then thinly slice.
  • Meanwhile, make the dressing Combine the garlic and the remaining 3 tablespoons olive oil in a small microwave-safe bowl; microwave until the garlic is softened, about 1 minute. Transfer the garlic and oil to a blender; add the 2 whole piquillo peppers and puree until smooth. Transfer to a bowl and whisk in the mayonnaise, lemon juice and 2 tablespoons cilantro; season with salt and pepper.
  • Divide the sliced chicken among the lettuce leaves; drizzle with the dressing. Top with the celery, almonds, the remaining sliced piquillo pepper and 1 tablespoon cilantro.

Hickory or fruitwoods, maple, oak and alder chips, dried grapevine trimmings or herb branches lend a sweet, firm flavor to food cooked in a closed container above it.

1/2 large shallot, peeled and minced
1/4 cup red wine vinegar
2 tablespoons walnut oil
1/2 teaspoon canola oil
1/4 teaspoon salt, plus more to taste
Freshly ground pepper to taste
8 cups torn chicory leaves
2 warm smoked chicken breasts (see recipe), cut on the diagonal into 1/4-inch-thick strips
2 Bosc pears, halved, cored and cut lengthwise into 1/8-inch-thick slices
1/2 cup toasted walnuts, coarsely chopped
1 medium carrot, peeled and cut into fine julienne

Steps:

  • Combine the shallot and vinegar in a small saucepan over medium heat. Simmer until reduced by a third, about 3 minutes. Whisk in the walnut oil, canola oil, 1/4 teaspoon of salt and pepper.
  • Place the chicory in a large bowl and toss with 3 tablespoons of the dressing. Season to taste with salt and pepper. Divide among 4 plates. Arrange the chicken and pears over the chicory. Scatter the walnuts on top and place the carrots in a mound in the center of each plate. Drizzle with the remaining dressing and serve immediately.
