Romaine Salad with Pear, Smoked Blue Cheese, and Candied Pecans image

1/4 cup sugar
1/2 cup pecan halves
1/3 cup extra-virgin olive oil
3 tablespoons red wine vinegar
1 1/2 teaspoons Dijon mustard
1 garlic clove, minced
1/2 teaspoon kosher salt
1/2 teaspoon sugar
1/4 teaspoon black pepper
2 romaine hearts, torn (about 6 cups)
2 ripe pears, thinly sliced or chopped (about 3/4 cup)
5 ounces smoked blue cheese, crumbled
1 avocado, diced
4 thinly sliced green onions (about 1/2 cup)

Steps:

  • Cook the sugar and pecans in a small skillet over medium, 5 to 7 minutes or until the sugar has caramelized. Spread the pecans in a single layer on lightly greased wax paper on a large baking sheet. Let them cool completely and then chop into 1/2-inch pieces.
  • Whisk together the olive oil, vinegar, Dijon, garlic, salt, sugar, and pepper in a small bowl.
  • Layer the lettuce, pears, cheese, avocado, and green onions on a large serving platter. Drizzle with the desired amount of dressing, and top with the pecans.

2 cups cubed cooked turkey
1/2 cup pomegranate seeds
1/4 cup chopped pecans, toasted
1/4 cup dried cranberries

Steps:

  • For dressing, place the first five ingredients in a blender. Peel, halve and core one pear; add to blender. Cover and process until smooth., Peel, core and thinly slice remaining pear. Divide arugula among four plates; top with turkey, sliced pear, pomegranate seeds, pecans, cranberries and green onions. Drizzle with dressing; sprinkle with pepper. Serve immediately.

2 cups shredded leftover turkey meat
2 stalks celery, sliced
1/2 cup celery leaves, coarsely chopped, plus more whole leaves for garnish
1 crisp apple, such as Gala or Macintosh, cored and chopped
1 cup red seedless grapes, halved
1/2 cup pecans, toasted, and coarsely chopped
1/2 cup non-fat yogurt
2 tablespoons mayonnaise
1 teaspoon honey
1/4 teaspoon salt, plus more as needed
1 small celery root, peeled and cut into matchsticks
Freshly ground black pepper

Steps:

  • In a large bowl, gently toss the turkey, celery, celery leaves, apple, grapes, and pecans until combined. In a small bowl, whisk together the yogurt, mayonnaise, honey, and 1/4 teaspoon salt until well combined. Put the celery root in a small bowl, add 2 tablespoons of the dressing, and toss to coat completely. Add the remaining dressing to the turkey mixture, season with salt and pepper, and toss gently to evenly dress the salad.
  • To serve, spread the celery root evenly onto a serving platter, top with the dressed salad, garnish with celery leaves and serve immediately.

2 Smoked Turkey Legs, recipe follows
1/4 cup diced celery
1/4 cup diced apple
1 tablespoon pecans, roasted
1 teaspoon rice wine vinegar
1 teaspoon fresh parsley, finely chopped
1/4 teaspoon freshly ground black pepper
1/4 cup mayonnaise
3 quarts water, hot
225 grams kosher salt
225 grams dark brown sugar
1100 grams (about 2.5 pounds) ice
6 turkey legs
1 cup unsalted chicken stock

Steps:

  • Remove the skins from the Smoked Turkey Legs, pull off the meat and chop into 1/2-inch cubes.
  • Place the turkey, celery, apple, pecans, vinegar, parsley, black pepper and mayonnaise in a medium-sized bowl. Stir to combine and serve.
  • Place the water, kosher salt and brown sugar in an 8-quart plastic container and stir until fully dissolved. Add the ice before submerging the turkey legs in the brine. Cover and refrigerate for 4 hours or up to 12 hours.
  • Set up your favorite smoker and add a handful of hardwood chunks. If you have heat control, set it to 150 to 170 degrees F and allow the wood to smoke for approximately 30 minutes.
  • While the smoker is heating, drain the legs, pat them dry and arrange them on a rack. Smoke the legs on the rack for 3 hours, rotating the legs halfway through.
  • Heat your oven to 350 degrees F. Make 2 pouches out of double-layered heavy-duty tin foil, adding 3 legs and 1/2 cup of chicken stock to each pouch. Braise the legs in their pouches for 1 hour, then carefully drain and reserve the jus.
  • Defat the jus, remove the skins and serve the legs alongside the smoky jus.

4 sprigs fresh thyme
4 tablespoons extra-virgin olive oil
1 10-ounce box frozen black-eyed peas, thawed
1/3 cup sliced bread-and-butter pickles, plus 4 tablespoons pickling liquid
8 ounces smoked turkey leg or breast, skin removed and meat shredded
4 scallions, thinly sliced
Kosher salt
Cayenne pepper
1 tablespoon Creole or whole-grain mustard
1 cup grape tomatoes, halved
10 cups torn arugula, escarole and/or romaine
2 stalks celery, chopped (with leaves)

Steps:

  • Combine the garlic, thyme and 1 tablespoon olive oil in a nonstick skillet over medium heat and cook until fragrant, about 2 minutes. Add the black-eyed peas and 2 tablespoons pickling liquid and cook until tender, about 10 minutes. Add the turkey and heat through, about 3 more minutes. Remove from the heat and add the scallions, and salt and cayenne to taste. Discard the thyme.
  • Meanwhile, whisk the mustard and the remaining 2 tablespoons pickling liquid in a large bowl. Add salt and cayenne to taste, then gradually whisk in the remaining 3 tablespoons olive oil. Add the tomatoes and toss. Add the arugula, celery and pickles and toss again. Divide among bowls and top with the black-eyed peas and turkey.

1 cup uncooked tricolor spiral pasta
1/4 pound cubed deli smoked turkey
1 cup (4 ounces) cubed Monterey Jack cheese
1/2 small cucumber, thinly sliced and halved
1/3 cup chopped sweet red pepper
1 green onion, thinly sliced
3 tablespoons sour cream
2 tablespoons mayonnaise
1-1/2 teaspoons 2% milk
1 teaspoon honey
1 teaspoon Dijon mustard

  • Cook pasta according to package directions; drain and rinse in cold water. 3 tablespoons unsalted butter
3 large shallots, thinly sliced (about 1 cup)

3/4 cup low-sodium chicken broth
2 tablespoons balsamic vinegar
2 teaspoons grainy mustard
2 Bosc pears, cored and sliced into thin wedges

Steps:

  • Season turkey with salt and pepper. In a large skillet, heat 1 tablespoon butter over medium-high. Add turkey and cook until cooked through, about 2 minutes per side, flipping once. Transfer to a plate and tent loosely with foil.
