ASIAN PORK MEATBALLS
Steps:
- For Meatballs:
- Combine all ingredients together and form balls. They will be wet. It's fine, just get them to hold together. Place on a baking sheet until ready to cook.
- When ready to cook, preheat oven to 350 degrees.
- Use a small amount of olive or grapeseed oil (2-3 TBS or so) to fry the meatballs until nicely browned. Place on a baking sheet and bake another 10 minutes until cooked through.
- For Spicy Ginger-Honey Sauce
- In a frying pan with sides, combine sesame oil, garlic and ginger and saute for 1-2 minutes until fragrant. Add in vinegar, honey and chili with garlic sauce and bring to a boil. Add in cornstarch and whisk until combined and thickened. Taste & adjust. Place meatballs in your pan, coat with sauce, garnish with cilantro leaves (if you like)and serve.

ASIAN-INSPIRED PORK MEATBALLS WITH PINEAPPLE IN THE SLOW COOKER
I'm a fan of potstickers and this pork meatball mixture makes me think of the potsticker filling. I used a small slow cooker, so you may need to adjust the liquid ingredients if yours is larger. Serve over coconut rice (I used "Easy Coconut Jasmine Rice" from Allrecipes).

Steps:
- Combine ground pork, bread crumbs, egg, ginger, soy sauce, and garlic in a large bowl for the meatballs. Knead gently with your fingers to combine. Cover bowl and refrigerate for 2 hours for flavors to meld.
- Peel pineapple and cut into 3/4-inch rings. Core rings and cut each ring into 1-inch wedges (you should have about 1 1/2 cups). Add pineapples to a slow cooker.
- Roll pork mixture into 12 to 16 balls and place into the slow cooker.
- Combine water, teriyaki sauce, and soy sauce in a small bowl and pour over the meatballs. It is okay for the liquid to not completely cover the meatballs.
- Cover slow cooker and cook on Low for 4 to 6 hours, or on High for 3 hours. Remove pineapple and pork balls with a slotted spoon to a bowl.
- Stir cornstarch into the sauce, whisking until well combined. Add pineapple and meatballs back into the slow cooker and cook until sauce has thickened, about 30 minutes more. Transfer mixture to a bowl and garnish with green onions and sesame seeds.

- Begin by adding all of the pork meatball ingredients to a large prep bowl and used your hands or a spoon to mash/stir to combine everything evenly. Once combined use your hand or a cookie scoop to roll 16 1 inch balls.
- Add the rolled meatballs to a large deep skillet with a touch of oil or cooking spray (helps them not stick) and cook on medium heat for 10 minutes or until cooked though. Rotate the meatballs so all of the sides get browned. Once the meatballs are cooked through remove from the pan and place on a paper towel lined plate. Drain any excess grease from the pan and wipe it out.
- Add all of the sauce ingredients to the same skillet the meatballs were cooked in and heat over low to medium heat. Stir the cornstarch into the water until it is completely dissolved and add to the sauce. Whisk continuously until thickened and sticky, about 3 minutes. You should be able to drag the whisk along the bottom and a streak will appear.
- Once the sauce is finished, remove from heat and add the meatballs into the sauce and toss to combined. Once combined serve warm as and appetizer, main dish or add to a crockpot to stay warm. Top with sesame seeds and chopped green onions and enjoy!
