1 lb fresh green beans
½ onion
1 small garlic clove
⅓ cup fresh grated parmesan cheese
6 tbsp olive oil
2 tbsp white wine vinegar with tarragon
½ tsp salt
fresh ground black pepper to taste
Garnish: tomatoes, olives

Steps:

  • Wash the beans, snip off the ends, and cut them French style. Drop them into boiling salted water and cook until just tender. Drain. Finely chop half of an onion and mince a clove of garlic. Combine the beans with other ingredients and mix well. Chill and serve with tomatoes, olives and other fresh or marinated garnishes of your choice.
  • Note: You can substitute the white wine vinegar with lemon juice and add dried or fresh tarragon.

1 pound fresh green beans, trimmed and snapped
garlic salt to taste
garlic powder to taste
ground black pepper to taste
dried minced onion
1 (16 ounce) jar marinated cocktail onions, with liquid

Steps:

  • Heat oil in a wok over high heat. Reduce heat to medium, and place beans in the wok. Cover, and cook 10 minutes, stirring occasionally. Season with garlic salt, garlic powder, pepper, and minced onion. When beans are almost tender, mix in cocktail onions with liquid. Continue cooking 5 minutes, until heated through.

  • In a medium saucepan over medium heat, place the green beans with liquid and wine. Cook until heated through; drain.
  • Place the cheese in a microwave-safe bowl. Heat in the microwave on low or medium power in 1 minute intervals, until melted.

5 cups water
1/4 pound string beans, ends snipped
1 medium shallot, halved and finely chopped
1 heaping tablespoon Dijon mustard
1 teaspoon sherry vinegar
Salt and freshly ground black pepper
Extra-virgin olive oil, for serving, optional

Steps:

  • Place 5 cups of water to boil with salt, once the water has reached a rolling boil, remove from the heat and add the string beans to the water for about 5 minutes. Strain the string beans through a colander and run under cold water.
  • In a large bowl, whisk the shallots, mustard and vinegar together. Add the string beans and some salt and pepper and toss to combine. Serve chilled or at room temperature, drizzled with a little extra-virgin olive oil, if you like.

1/2 cup olive oil
1 large shallot, finely minced
1 tablespoon Dijon mustard
1/4 cup Georgian or balsamic vinegar
2 tablespoons Polish vodka
1 tablespoon sumakh, see note
Salt and pepper
2 hard boiled eggs, finely chopped, optional
1 red bell pepper, finely diced, optional

Steps:

  • Blanch and refresh string beans in salted water.
  • In 1 tablespoon olive oil taken from the 1/2 cup, caramelize the minced shallot.
  • Put shallot, mustard, vinegar, and vodka in a blender. Slowly drizzle in the remaining oil. Mix in sumakh, salt, and pepper. Serve over string beans (or asparagus).
  • Optional: Garnish with a little chopped hard boiled egg and/or finely diced red bell pepper.
  • Note: edible ground sumakh is available from Mid-Eastern or Russian markets or spice shop.

1/8 to 1/4 teaspoon salt

1/2 medium onion, chopped fine
1 small clove garlic, chopped fine
1/3 cup freshly grated Parmesan cheese

1/2 teaspoon salt
Freshly ground pepper
2 medium tomatoes, sliced in wedges
1/3 cup black olive

Steps:

  • Fill a large saucepan with water and bring to a boil. Add salt to taste and the beans. Cook until tender but still firm, about 4 minutes. Drain and set aside.

4 slices bacon
2 pounds fresh green beans, trimmed
½ cup finely chopped onion
½ cup brown sugar
¼ cup white vinegar
½ teaspoon salt
½ teaspoon dry mustard
ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes.
  • Meanwhile, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender-crisp, 3 to 5 minutes. Drain.
  • Drain bacon slices on paper towels, reserving grease in the skillet. Saute onion in the bacon grease until softened, about 5 minutes. Stir in brown sugar, vinegar, salt, mustard, and pepper. Stir well, scraping up any onion bits off the bottom of the skillet. Cook until bubbling, 3 to 5 minutes.

  • Bring 1 inch of water to a boil in a large pot fitted with a steamer basket. Fill a large bowl with ice water; set aside.
